The Shoals Hotel Opens on Long Island’s North Fork - AFAR

"A women‑owned aquaculture operation founded in 2018 that farms oysters off Little Ram Island; owners Elizabeth Peeples and Stefanie Bassett originally ran the business from a boat, tumbling oysters by hand to produce cleaner, rounder shells and meatier oysters. They now operate from an on‑land, aquaculture‑permitted facility housing an electronic tumbler and sorting machine, offer tours and hands‑on experiences with their floating nursery and hatchery, teach shucking classes and host tastings (including at the nearby hotel food truck), and have been championed by chef John Fraser, who serves their oysters exclusively at his restaurant." - Devorah Lev-Tov

The North Fork’s Newest Hotel, The Shoals, Is Also Home to a Women-Led Oyster Company | Vogue

"In 2018, Elizabeth Peeples and Stefanie Bassett took over a hobby farm on the east side of Shelter Island in Gardiners Bay, which gives their bivalves direct access to the Atlantic. This provides a crisp taste to their oysters, setting them apart from other oyster farms in the area located in Peconic Bay. Little Ram Oyster Co. is also notable for being run by two women, which is rare in the fishing and aquaculture industries where women's labor is often less visible and valued. They employ three other women and advocate for more women on the water." - Ella Riley-Adams

WHAT A HIDDEN GEM! We did research ahead of a trip to visit family in Southold and Little Ram was a bucket list stop. Although it was too hot/humid to try the vending machine, they welcomed us right into the shop. Our son got to see how they sort the oysters and also how they are replenishing the scallop population using catch and release. What an incredible operation and the most delicious oysters! 🦪 They are spot on with the description - it tastes like vacation. The presentation is adorable and the location/s are perfect.

They catered my sister in law's wedding cocktail hour with the best oysters and clams we have had. I would have never thought to pair oysters with a salsa verde, but it was out of this world. They also had the usual: mignonette, lemons, cocktail sauce etc. It was a big hit. We could've ordered twice as many and they would all be gone and no one would have wanted to eat anything else.

Great piece about them in the New York Times. Very inspirational. A beautiful NE coastal American story, the kind that wouldn’t happen in Florida.
