The Shoals Hotel Opens on Long Island’s North Fork - AFAR

"A women‑owned aquaculture operation founded in 2018 that farms oysters off Little Ram Island; owners Elizabeth Peeples and Stefanie Bassett originally ran the business from a boat, tumbling oysters by hand to produce cleaner, rounder shells and meatier oysters. WHAT A HIDDEN GEM! We did research ahead of a trip to visit family in Southold and Little Ram was a bucket list stop. Although it was too hot/humid to try the vending machine, they welcomed us right into the shop. Our son got to see how they sort the oysters and also how they are replenishing the scallop population using catch and release. What an incredible operation and the most delicious oysters! 🦪 They are spot on with the description - it tastes like vacation. The presentation is adorable and the location/s are perfect.

They catered my sister in law's wedding cocktail hour with the best oysters and clams we have had. I would have never thought to pair oysters with a salsa verde, but it was out of this world. They also had the usual: mignonette, lemons, cocktail sauce etc. It was a big hit. We could've ordered twice as many and they would all be gone and no one would have wanted to eat anything else.
