Debuting about a month ago, Lusha is wood-fired pizza made with care by folks from Firenze. Lusha has all the ingredients to be a 5 star pizza spot, but they fell just a bit short on this first visit.
High quality ingredients and a perfectly cooked, chewy crust are the stars of the show. They immediately hold the mantle of best cheese on a pizza in Chicago, real mozzarella reminiscent of the best of the best back home in New York. A true highlight, along with a pretty well-seasoned, perfectly executed dough and crust.
What I'd love to see to put them over the top is better seasoning. The pesto was a bit oily and lackluster to be honest, not adding as much flavor and contrast as I would have expected. Quite honestly, all it needs is some extra salt and pepper, long an issue with Chicago pizza, but surprising from pizza makers from Italy.
I will definitely be back to try some other styles, and I have a lot of confidence I'll be updating this review to a 5 down the line. Either way, once you add your own salt and pepper, Lusha is immediately in the conversation for top 5 pizza spots in this city.
