Where is the Olive Oil Company in Netflix’s ‘Salt, Fat, Acid, Heat’? | Eater

"At the Tuscan butcher shop run by Lorenzo Chini, whose family has been in the meat trade since the 1600s, whole pigs are broken down and transformed into an array of salumi. The shop illustrates how animal fats provide essential flavor to meat and explains the historical idea of ‘noble’ cuts—parts like pancetta, bacon, and tenderloin that were traditionally reserved for the wealthy because of their prized fat and texture." - Chris Fuhrmeister

When you visit a butcher who's been around since the 1700s, you are in for a treat. Their salami toscano is definitely one of the best we'ever tried, and we tried many!!! Great chat with Vincenzo also, would love to go back!

We stopped by for a quick bite but ended up getting one of our favorite cutting boards ever! You can taste how much the family cares about their meat and food.

Macelleria Chini is a wonderful small butchers shop owned by a most interesting and entertaining fellow (after all, Lorenzo is a NetFlix star... :) ). His fennel salami is about as good as it gets. His steak wonderful and pork without comparison. This is a true small town artisanal macelleria. If you are in Tuscany, it is worth the drive to Gaiole. You can get some cold cuts with a bit of bread (aka pannini) and have a fantastic lunch along with a decent coffee from the place a couple of doors away.

We got the salami and prosciutto for sandwiches and it was fantastic. Lorenzo was also very helpful and attentive.
