James Beard Award winner Steven Satterfield and restaurateur Neal McCarthy teamed with sommelier Tim Willard to spotlight a short, ever-updating reserve list poured by the half-glass — think 2016 Paolo Bea Arboreus Bianco, 2001 Henriques and Henriques Sercial single harvest, and 2010 Daniel Etienne Defaix Chablis 1er Cru. Don’t sleep on the simple cocktails, especially the white rum and tonic, which carries surprising weight while staying refreshing.
