Wood-smoked ribs, brisket, links, bowls, wings & snacks

"Maple Block is a well-known commodity in the LA barbecue world. Their original location has been doing Texas-style barbecue in Culver City since 2015, and now you can get their wood-smoked spare ribs, sausage links, and chicken wings from a walk-up window along Hill Street. All the ordering happens at the bar counter, and seating takes up the entire tree-lined patio outside the market. During weekend lunch, you might have to work your way through some crowds, but the reward will be beautiful slices of brisket with candy-like bark, soft layers of fat, and a prominent smoke ring. Just keep in mind that they’re only open Friday to Sunday, until the meat sells out." - brant cox, nikko duren, sylvio martins
"Maple Block is a well-known commodity in the LA barbecue world. Their original location has been doing Texas-style barbecue in Culver City since 2015, and now you can find their wood-smoked spare ribs, sausage links, and chicken wings at a second location in DTLA’s Grand Central Market. Maple Block’s walk-up window stretches along the entire tree-lined patio on Hill Street and all of the ordering happens at the bar counter. Whether you swing by the beer garden for a quick lunch or do dinner before a Dodgers game, you’ll have to work your way through some crowds. But once you do, you’ll find a beautiful piece of brisket. With candy-like bark, soft layers of fat, and a prominent smoke ring, every slice will make you want to be a better person. Just keep in mind that they’re only open Friday to Sunday, until the meat sells out." - Nikko Duren

"For pure LA indulgence I dug into the loaded brisket fries at the new Grand Central Market location—crispy potatoes smothered with rich beef brisket chunks, cheese sauce, pico de gallo, and chipotle aioli (fork required), and the location also boasts one of Downtown's best patios for ribs, smoked chicken wings, and sides." - Eater Staff

"I'm excited that Maple Block Meat Co. is ready to open wide at Grand Central Market in Downtown Los Angeles; the formerly Westside-only, award-winning smoked meat operators are now selling from what used to be the Horse Thief patio space at the 106-year-old market, offering ribs, brisket, links, bowls, wings, and other snacks. Co-owners Daniel Weinstock and Mike Garrett, along with pitmaster Rudy Suazo, plan to expand their Culver City menu to include snackier options—particularly for Dodger game days—like hot dogs, loaded brisket fries, and soft pretzels, plus the usual allotment of craft beer and wine." - Farley Elliott

"The new bird-focused project from chef-owner Daniel Weinstock and pitmaster Rudy Suazo will focus entirely on spatchcock chickens that are grilled over coals and will make its debut at outdoor food bazaar Smorgasburg this Sunday, April 16." - Farley Elliott
