With the opening of Master Gan, there are now 2 places in Northridge - possibly the entire west Valley - to enjoy Lanzhou beef noodle soup. I ordered the combo, which included said noodles, a small order of dumplings, and a choice of taro milk tea or Thai ice tea for just $15.
Service was fast, with my food coming before I could reply to a Facebook comment.
With handmade Chinese noodles, it's all about the texture. Master Gan's noodles have that perfect chewiness you can only get from fresh noodles made on the spot. The beef and cilantro broth was on point, and true to what I remember tasting in China. This is the kind of noodle soup my parents used to drive an hour outside the Valley to get.
The Thai iced tea and taro milk tea were good, maybe not "top-tier" but better than the matcha I had recently from the boba shop at Topanga Social.
The only downside to the meal was the dumplings; just lacking in magnificence, unfortunately. They were a smidgen better than the frozen ones from Costco across the street, but sadly, of similar composition. Pre-made, possibly off-site. Good noodles and good dumplings ought to go hand in hand. I'm confident that Master Gan is capable of bringing better, and I'm hopeful they will, as the restaurant finds its footing.
I didn't notice Biang Biang Noodles on the menu until after my meal. I do look forward to trying them on my next visit!
