"Part of The Star casino complex in Pyrmont, Momofuku Seiobo is Sydney’s branch of American restaurateur David Chang’s global empire. Executive chef Paul Carmichael whips up the quirky, contemporary delights that form the multi-course tasting menu here. Dishes change often but always reflect the restaurant's Asian-fusion origins, the chef’s Caribbean roots, and Sydney's subtropical produce. Leave at least two hours to enjoy the 12-course meal." - Sophie Davies

What an incredible restaurant, lots of flavours and ingredients from the Caribbean. Not something people are used to here in Australia. They use very good quality seafood and the 6 week aged pork is wonderful. 10 courses, it cheap but definitely worth it as the food is amazing.

Absolutely loved it!! A 3 hatted that definitely lives up to it's name. When we first arrived we almost walked past it at first, as the entrance was tucked away in the corridor walls and only its logo to identify them. Once inside, we were surprised by the relatively casual atmosphere with some nice everyday beats playing. Once seated along the bar facing the kitchen, we were talked through our degustation and drinks options by very attentive but non intrusive staff - they were always there just when you needed them. Once we were ready, the dishes came out at a good pace - enough for you to enjoy and savour each dish but not too long in between. It was a stunning food journey, with the beginning being more light and subtle flavours before picking up in intensity to full bodied flavours. We were impressed with how at times you initially taste one flavour and when it settles in your mouth some secondary flavours come through. Serving portions were good and by the end of the main courses we were absolutely stuffed, and had to force ourselves to find a second stomach for the desserts! All in all a very enjoyable experience with some surprising dishes, highly recommend!

Cannot fault them at all. The food was so delicious - I have never had Caribbean food before and all the different chefs took time to explain the dish and a bit of the background. We were seated at the bar so you get to see the action going on in the open kitchen. Everything was seasoned well and had the right balance - we were definitely full by the end! We were celebrating our birthdays and were touched by the extra effort of getting a card signed as well as a cake. My friend has a shellfish allergy and all her alternatives looked so good as well - she said they were great as sometimes at other places she gets a bit of a cop-out dish. We didn’t get the matching wines but the cocktails were so good! Everyone was warm and friendly - I’d definitely go there again!

Food: creative and memorable. I like most of the dishes except the sea urchin thingy. It’s a bit too smelly for my liking Experience: I think this what makes it a three hatted restaurant. On the first course, they gave us mortar & pestle to grind the food. On the lobster menu, they brought the life lobsters to the table, telling us the history of the lobsters and how they are going to cook them. I still think about those lobsters eyes and movements till now! Staff: Nice, friendly & quite attentive. They are busy, so sometime it took a while to get my water top up. Price: We paid about A$450 for 2 including 1 drink each. I think it’s worth the price but my husband think he wasn’t quite full with the amount of minuscule dishes that they served. Tip: I think a table near the kitchen is more exiting, you can see the chefs in action. Surprise: They gave us two packets of home blended teas and the menu list when we finished. Other: I felt it’s a bit weird that they gave the menu at the end not at the start. I like to peruse menu and read menu every time the meals come instead of just working out what is in the menu for every course.

Had the opportunity to try this Caribbean restaurant out. Had the 14 course tasting menu for Sept 2018. Generally all the mains were good while some of the entree dishes seems experimental. Generally a good place but seems like not worth the cost. As previous reviewers and word of mouth. Some courses seem not to stand out.

First time having Caribbean cuisine I think, it was a cool experience with fantastic service. The team was super lovely. I love the pre-dining survey letting you choose the type of experience you prefer. I love the seafood platter a lot especially the chilli one on the top. Too much food though, my stomach was going to explode after finishing them all.

This place is absolutely fantastic. We had the tasting menu which was superb. The food came out at a good pace, was beautiful and tasted amazing. Every dish was unusual and super delicious. They catered well for pescatarians. The service was first class. We sat at the kitchen bar and loved watching the chefs at work. The only thing I'd change is the matching wines - quite a few fortifieds which I'm personally not a fan of. Couldn't recommend this place more highly.

I love this restaurant for many reasons. It strikes a great balance between formal and casual with a beautiful ambiance. The food is fresh and exciting, wine list top notch and the service is always on point. I would highly suggest this as a romantic dinner for a partner as the experience is immersive. The only slight recommendation I would make for large eaters is to potentially have a small snack beforehand as the portioning is not huge for large eaters :)
