Stuffed Bagel Shop Moonrise Bagels Opens in New York City | Eater NY

"Determined to maximalize the New York bagel experience, this Hudson Valley bagelry stuffs the fillings into the dough itself and is opening its first New York City location in Greenwich Village at 58 West Eighth Street, near Sixth Avenue, on Friday, December 5. Co-owners and husband-and-wife duo Jeremy Rhodes and Ali Chetkof Rhodes and their team load bagels with options like scrambled eggs-cheese (with bacon, sausage, and a vegan sausage iteration), pastrami Reuben, Buffalo chicken, and cheese pizza, hovering in the $11 range, then boil and bake the whole thing. Once ordered, staff can finish each bagel with on-the-spot seasonings—everything, sesame, poppy, or onion—or leave it plain, and there’s a trio of dipping sauces, including the mustardy house Mooney, ranch, and a Calabrian chile aioli. The Rhodes debuted Moonrise in Woodstock in 2021 before expanding into Kingston and Poughkeepsie." - Nadia Chaudhury

Moonrise Bagels - Review - West Village - New York - The Infatuation

"WhenPopup Bagelsopened and told everyone to rip and dip their bagels, reactions were mixed. But at Moonrise Bagels, the bagels are stuffed—we’ll see how it goes over. The West Village got its start in the Hudson Valley, making pizza-stuffed bagels, buffalo chicken-stuffed bagels, and bacon, egg, and cheese-stuffed bagels." - Willa Moore

Moonrise Bagels Is Opening in NYC With Stuffed Bagels | Eater NY

"A Hudson Valley bakery bringing its stuffed bagels to NYC this fall, the Greenwich Village shop will spotlight the signature stuffed bagel — a circle-shaped carb jam-packed with ingredients and heftier than those little round bagel balls — with bagel options of plain, everything, sesame, poppy, or onion and fillings like eggplant Parm, Buffalo chicken, pastrami, bacon-egg-cheese (with a vegan sausage iteration), and more; there are schmears for rip-and-dip-style dipping (popularized by PopUp Bagels) plus espresso drinks, and it comes from co-owners and married couple Jeremy Rhodes and Ali Chetkof Rhodes, who began selling their stuffed bagels via pickups, pop-ups, and farmers markets in 2021 before opening in Woodstock and adding shops in Kingston and Poughkeepsie." - Nadia Chaudhury

Moonrise Bagels on 8th Street. A Michelin-Worthy Masterpiece Bagels have always carried with them a story of migration and transformation. The original obwarzanki of Kraków, thinner, chewier, and never meant to be a sandwich, were sold from street carts as a simple, portable snack. When Jewish immigrants brought the bagel to New York, it grew larger, softer, and eventually became the foundation for the city’s iconic bagel sandwich. Yet even that New York bagel, beloved as it is, is itself a departure from the original. Moonrise Bagels on 8th Street enters this lineage not as a gimmick, nor as a fleeting piece of “viral” ephemera, but as a Michelin-worthy reimagining of what a bagel can be. Their innovation is deceptively simple, yet transformative. Instead of splitting a bagel and stuffing it with ingredients that inevitably spill out, they bake the fillings directly into the dough. The result is a bagel that is both architectural and deeply pleasurable, a composition where every bite is balanced, complete, and deliberate. The Everything Pastrami Reuben stuffed bagel I tasted was a revelation. The familiar crackle of sesame, poppy, garlic, and onion from the everything crust framed the smoky, pepper-edged pastrami within. Swiss cheese melted into the dough’s interior, sauerkraut cut through with its bracing tang, and caraway added a subtle, aromatic lift. Each bite carried the same harmony of flavors, from the first to the last, without the fatigue of dough overwhelming the palate or fillings collapsing into disorder. Moonrise has solved the perennial problem of the bagel sandwich, proportion. Here, the filling is not crammed between halves, but integrated into the dough itself, yielding a perfect ratio that feels inevitable once you have experienced it. The shop itself is immaculate, suffused with the warm scent of baking, staffed by people who seem genuinely happy to be there. The only drawback is geography, it is out of my way. Yet I will return. Again and again. Until I have tasted every flavor, and then I will begin all over. Moonrise Bagels is not bound by nostalgia, nor by purist definitions. It is writing a new chapter in the story of the bagel, one that honors Kraków’s origins while embracing New York’s appetite for reinvention. It is not just another entrant in the crowded New York bagel scene, it is a Michelin-worthy masterpiece hiding in plain sight on 8th Street.

Google
GREAT BREAKFAST BAGELS they were very generous with the stuffings! Got the onion bagel with bacon egg and cheese! I really like how fragrant the onion is and everything is so warm and delish. Might not be the place if u like your bagels crunchy though. Came at 9.30 on a Monday - kind of busy but no queue! Just people munching away. Shop is a bit tiny but staff is great and wholesome!

Google
Bagel lover here — it’s basically in my top 3 foods of all time. So when this beast popped up on my FYP, I had to go see (and taste) for myself. Lucky me: popped in on a quiet Monday morning ~10:15 and zero line. In and out in under 5 minutes. . Went for the Sausage, Egg & Cheese on an everything bagel — $11 with tax. And visually? This thing is a monster. Look at that stuffed glory 👀 . That said, it wasn’t piping hot when I dug in (maybe 3 mins later at the park on a chilly day), so no epic steam or cheese pull moment. Still solid though — generous filling, no skimping on the sausage/egg/cheese. . Flavor-wise: tasty, but pretty mild on seasoning (that’s why they offer dipping sauces!). The bagel itself didn’t have that signature crispy-chewy crust I crave — with so much stuffed inside, the dough kind of plays backup singer instead of lead. . Genius concept though. No more fillings sliding out the back on the first bite? . Bottom line: killer for a no-mess handheld breakfast sandwich, but when it comes to classic bagels, I’ll always prefer mine simply (non) toasted with butter or a fat schmear of scallion cream cheese.

Google
Tried Moonrise Bagels and ordered the egg and cheese bagel. It was very filling and packed with flavor, but definitely different from a traditional NYC-style bagel. The bagel itself is much thinner and less doughy than what you'd expect from a classic New York bagel. If you love that dense, chewy texture, this might not be your thing. That said, the ingredients were solid and the overall sandwich was satisfying. Worth trying if you're open to a lighter, thinner take on a bagel

Google
Forget everything you know about breakfast sandwiches because Moonrise Bagels has completely changed the game. I grabbed the sausage, egg, and cheese stuffed inside an everything bagel, and the burst of savory garlic and onion seasoning paired with that perfectly cooked filling was incredible. It’s rare to find a bagel that’s this pillowy and fresh while being packed to the brim with flavor in every single bite. I’m already dreaming about my next visit!

Google
Moonrise Bagels just became my new go to bagel shop in the city! The outside has that classic NYC bagel crunch - but the inside? Warm, melty, savory magic. Every bite had the ideal ratio of chewy bagel to fluffy egg, sausage and cheese - what more could you ask for? I got the sausage, egg and cheese with everything seasoning on top and the Calabrian chili aioli for dipping and I simply can’t wait to try more of the flavor combinations! 10/10 will be back!

Yelp
This new bagel spot is already a standout! They're known for their spectacular stuffed bagels and when I say stuffed, I mean literally packed with fillings. So many delicious options to choose from. I ordered the bacon, egg, and cheese, and the lady at the counter told me it would be about a 20-minute wait since it's their most popular item, especially in the mornings. Honestly, totally worth it. I waited, and let me tell you, that bagel was absolutely delicious. The shop itself is on the smaller side, so it can get crowded quickly, but the team does an amazing job keeping things moving and taking care of everyone. Friendly, efficient, and clearly proud of what they serve. Definitely check this place out, it's going to become a local favorite fast!

Yelp
What a cute bagel place that just recently opened. These bagels are not your average ones. They are stuffed with different fillings in them. You can get Bacon, egg and cheese which is what I got. They also have buffalo chicken, reuben and pizza and they have vegan options as well. They also have coffee and tea. They have some of their bagels in a freezer that you can take home as well. The staff that work here are very nice and answered all my questions. So, I ordered a sesame bagel with the BEC stuffing in it but I ended up actually getting an everything bagel. Which is fine I like them but was not sure if they all came with all the seasonings or not. So, when I was done I explained how I ordered the sesame but got an everything and they apologized to me plenty of times. I guess its my fault a bit to for waiting until I was done with my whole bagel to ask them. They offered me another bagel with the right type of seeds but, I was already very full and declined their offer. I will be back though to try some of their other options. There is a small seating area here, but not much at all. More of a to go place. It is the new viral social media stop.

Yelp
Swung by this morning for their opening day - unfortunately came a bit late and the vegan sausage egg and cheese was the only option left. I've never had a stuffed bagel before, but I definitely get the hype - warm, chewy, delicious, all neatly wrapped up. Like I said, the vegan option was the only one left when I came and I probably wouldn't get it again, but I enjoyed it as far as vegan sandwiches go! There was a good amount of filling and there was a nice mix of each in every bite. It's a small space but there's a few seats inside, and the staff is super friendly and helpful. I'll be back to try out some of the other bagel options!

Yelp
I came here the day after opening. I had a late morning so I came around 11am which was later than intended. There was already a line and the staff came out and said that they might sell out by the time we get to the front. We tried our luck and waited but they did in fact sell out. Apparently there was a line at 7am before they opened already. Was super excited for these stuffed bagels for sausage egg and cheese as well as the pizza one but atlas I must try again another day. The store is a bit small so it gets a bit crowded. Expect to wait at least 30 min if not more. They also close at 3pm but don't have enough supply to last until then
