Mother Flipper makes a delicious burger. Unhunh, yeah! (the noises we made over and over while mowing them down)
I'm with Nickie C. in her evaluation of Mother Flipper being less 'gamey' a burger than some other London-based offerings. It's just a really nice, well-seasoned patty. It is not crumbly and doesn't fall apart, but it still has some texture left to it...I like whoever was behind this decision-making process. Double points to the skill behind the grill (rhyme unintended, but I like it): not an overcooked dehydrated patty but, instead, just the teensiest hint of pink and lots of juiciness to run out all over the (thankfully) provided paper towel.
The bun is *emoji for an a-ok sign plus thumbs up*. No, but truly, often buns are afterthoughts when they are such important foundational components of a burger eaten on the go. This is a brioche bun, with a slight slick of (I'm guessing here) butter (?) atop. It's indulgent but still, magically, light.
The team constructing these burgers are true architects. Pickle, lettuce, onion, tomato and condiments all take a delicate balance and a deft hand. You know that "bite in AND GOOOOSH!" effect? It's minimized here thanks to the smart burger layout. The lettuce is totally superfluous and gets a weird slick to it care of the fat and burger juice. But, disclaimer: I'm never a fan of lettuce in burgers.
Prices are 6 (for the cheeseburger) and up, depending on the various component parts (cheese, patty, BACON). Albeit an indulgent burger, these are not massive burgers; I think the pricing is fair.
Yelp note: on Saturday mornings at Brockley Market there is also a breakfast sandwich available which sounds EPIC (it has yet to meet my lips, but this is destined to be rectified).
