The chef periodically scours nearby pine forests and river beds for wild fruits, berries, and herbs and presents the seasonal bounty through quirky small plates such as prickly pear sorbets, trout ceviche, cactus tart, and dehydrated winter carrots. A highlight is sunderkala, a type of hand-rolled millet noodles—described as "a breakfast staple in the Indian state of Uttarakhand"—which the chef explains were likely brought to India from Tibet and serves with a silken broth and Ladakhi gyuma (blood sausages). The chef, a Culinary Institute of America alumnus with stints at Alinea, The French Laundry, and Noma, quickly led the project to major recognition (Time’s 100 greatest places to visit in 2024 and Condé Nast Traveler’s best new restaurants list). It’s Pahadi ‘Noma’ in our very own backyard. What a gutsy move by chef Prateek and his fantastic team to open a restaurant here in the middle of nowhere. Excellent interpretation of Himalayan cuisine using local ingredients. We tried the set menu with wine and cocktail pairing, wines were decent but the cocktails were amazing. All this served in a beautiful minimalistic setting by very competent and pleasant staff. All power to you guys.

Amazing experience! Totally worth every penny. The food was amazing - we tried 15 different dishes and everything was mind-blowing either vegetarian options and non-vegetarian ones. The staff is extremely friendly and helpful. They played a huge part in the whole experience because we felt really taken care of. Worth visiting and experiencing this unique journey!

An incredible experience, with an amazing, truly hospitable team, and a gorgeous setting. The flavours are incredible and exquisite, plus the local touch in the menu makes it superb! The 15 course tasting menu had use eating for nearly 3hrs, and we asked for seconds for many dishes 🤤 Quite expensive yes, but also worth it. Well, you have to go prepared to spend that much for everything that is on offer.
