I had an incredible experience at Naeum. The space is cozy, the course was cohesive, and both the wine and non-alcoholic pairings were excellent and highly recommended. Plating was clean, precise, and visually striking. Price is reasonable and hospitality was satisfactory.
Starters:
The dongchimi tomato looked simple but had complex flavours. Fresh, tangy, and a brilliant way to start the course. Easily, my favourite starter.
The gwanja seaweed rosette offered unique textures, complementing the first starter.
The toran black bean contrasted crisp and soft elements beautifully.
The sokkori oxtail was elegant and prepared the palate perfectly for the mains.
Starters were strong and memorable.
Subsequent courses:
Domi seabream lemon, and daikon was light, delicate, and harmonious, elevating the meal and making it playful and memorable. One of the highlights of my meal, love the fish.
The memilmyeon and mandu paired earthy morel dumplings with noodles and tangy kimchi. There was also subtle floral turnip slices which added charm to the dish.
The jeonbok which was jeju abalone, seaweed vinaigrette, and caviar was intricate and luxurious. The drops of flavours were also precisely placed without a single smudge. Amazing.
The nobchi with squash, and maeuntang was flavorful with its rich butter sauce. Squash presentation was good.
The Iberico ribeye was satisfying with the onion and perilla layers though I feel the layering was not necessary, I appreciate the touch of details in making it look more presentable. Personally felt that if the onion was infused into the dish and not visible, it would have been more palatable.
The hansang with deodeok, mushroom gomtang, and banchan felt comforting and homely. As an asian myself, I connected with it.
Desserts
The darae changmyeon was refreshing and bright. Lively contrast to the richer courses and worked well as a palate cleanser.
The daechu, truffle, and white chocolate was indulgent, sinful and sweet. Love the charcoal biscuit base, it was a good touch.
The petit four ended the meal playfully with a mix of traditionally elevated flavours. Absolutely love the rice cake. Mugwort flavour and the rice puff base was something new and interesting to me.
The meal was thoughtful, harmonious, and thoroughly enjoyable. The only minor note is the cake. The base was slightly soggy and tough to bite, but everything else more than made up for it. The inventive play of textures and complementary flavors made each dish engaging. It is a great story.
