"Tucked deep within the Haeridan-gil area, this establishment stands out with a long line of diners waiting to be seated. This ramen joint in Busan is the first Korean outpost of a restaurant that started during the 1960s in the Nagahama area in Fukuoka, Japan. The ramen is prepared by simmering pig bones for hours until the broth becomes milky and smooth. Combined with a secret homemade soy sauce, the broth tastes rich, but never heavy. You may request your noodles be cooked to your liking, or add raw garlic or a spicy sauce. If you find your new broth a little too salty, feel free to ask for additional broth to savor your dish to the fullest." - Michelin Inspector

The 29 Best Restaurants in Busan, South Korea | Eater

"Given its proximity to Japan, Busan has become home to many different styles of Japanese food. For a taste of how the city does ramen, head to popular Michelin Bib Gourmand recipient Nagahama Mangetsu in Haeundae. The restaurant allows diners to specify how long they want their noodles to be cooked, from a six-second dunk that yields a crispy texture to a softer chewiness at 33 seconds. Be sure to go right when it opens or you’ll have to compete with the rest of Busan for a seat." - Summer Sun-Min Lee

Arrived at past 5 on a Wednesday and there were a few seats available. Service is brisk and you’re expected to eat quickly and clear out for other patrons. The broth is really nice and balanced, not too overpowering, while the pork slices were lean and tasty. That said, I admit I was expecting more because of the Michelin mention. Honestly, the cheese dessert they provided (two pieces; I ate one before remembering to snap a photo) was nicer than the ramen imo 😄 I would say it’s worth a visit if you don’t have to queue a silly amount of time.

Popular Michelin bib gourmand ramen restaurant in Busan. Queue for 1hr+ but can have coffee at the various cafes around the area. Noodles is done just right and soup is full of umami. Gyoza is probably the star of the show, crispy on the outside and juicy on the inside. I’ll say worth the wait. 🍜 🥟

5* (5 Stars) on the “Yum Yum Scale”. Traveling from Canada and just finished enjoying the most delicious ramen…ever. Extremely warm and welcoming atmosphere made the experience even better. Thank you.

Broth is wholesome and will make your soul smile. Noodles are made to order - crispy or soft are the ranges. The gyoza were also tasty. We went during off-peak hours right after lunch and no waiting. Lunch time and dinner time may experience up to 2-hour waiting.

Best ramen I’ve ever had. Amazing taste and the concept with seating is so refreshing. They only serve 1 kind of ramen which makes it easy to serve customers quickly en efficiently. You can make your own sauce for the dumplings by combining hot sauce, garlic and soy sauce.

I have been to Sapporo before and this ramen from Busan is on par with or even better than Sapporo. Compared to this, all other ramen I had in America tastes like salted trash water. You can't beat East Asia at their own cuisine, it is not possible. Absolutely amazing.

Maybe not open. Don’t try to come without local. Been rejected twice. Came at 6pm and 6:30pm. They told me it is sold out…. But all the locals got places

Ramen like it was meant to be. Served by professionals, by the traditional! You will like the taste. Don’t ever doubt it. The additional menu they offer is excellent (extra chasiu, noodle, boiled egg, etc) Wait time may be a bit longer. But it’s well worth it. For the ladies, restaurant default offers apron and hair band!
