After thoroughly straining the soba, but without over-cooling it, he cuts the noodles neither thin nor thick, but just right. Dipping sauce is medium-salty to bring out the aroma of the buckwheat seeds, and the dish is arranged beautifully. A full range of snacks are on offer. Great soba place. I got the mackerel tsukemen and was able to detect fishy taste. The very nice lady gave me a picture menu and also mimed how to dilute the tsemen broth and soup stock (black teapot in picture) into a new cup. I came at 1400 so did not have to wait. They also accept credit card.

Owner was so sweet and walked us through our first soba experience. Highly recommend their 100% buckwheat soba and fish side dish.

This was awesome! The texture of noodle was so nicely good and gooey but not sticky! I am not sure if this noodle was 100% buckwheat. One of the most popular menu here is the soba with sea herring on top which is called nissing soba. Give it a try!

Yummmmm! About 20-30 seats total in this little shop so get there when it's not busy (between lunch and dinner). Delicious soba noodles and the duck fat broth was amazing.

Found a hidden gem which sales duck ramen in Japan. The broth Is just pleasant and nice. But it's a bit pricy tho.

Zaru soba at Naniwa Okina in Osaka... probably the best soba I've tasted. The handmade soba noodles had lovely firm texture and bite. The tsuyu (dipping broth) was nicely fragrant of a good dashi, and not overly salty. The restaurant was awarded Michelin bib gourmand status for obviously delicious reasons. The location is a bit of a walk from any of the nearby stations. We arrived in the early afternoon and were the only ones there, but a couple other parties showed up by the time we left. I had read that it can be busy around lunchtime. Would definitely return on any visit to Osaka.
