15 Iconic Las Vegas Dishes to Try in This Lifetime

"At Nobu, it’s a toss up between which of Nobu Matsuhisa’s signature dish to order. The yellowtail sashimi with jalapeño comes with a garlic puree, thinly sliced serrano pepper, bathed in yuzu-soy sauce, and garnished with cilantro. The floral yuzu combines with the soy to bring out the sweetness of the mild yellowtail, while the pepper adds a pop of heat. The black cod yuzu miso uses Alaskan cod, a fattier version out of cold water, cured in Den Miso. Then it’s topped with hajikami, a sprout of ginger that’s pickled. Find Nobu at Caesars Palace and Virgin Hotels." - Susan Stapleton

Nobu opens a second location on the Strip - Eater Vegas

"Nobu closed at the Hard Rock Hotel on February 3 while the resort renovates to become the Virgin Hotel. The original Vegas Nobu opened in 1999 and became a cornerstone of the Hard Rock dining experience. The restaurant plans to return to the resort with a larger, invigorated space later this fall, once the new operators completely re-brand the resort footprint as Virgin Hotels." - Susan Stapleton

We had the most incredible dining experience at Nobu inside Virgin Hotels Las Vegas! From the moment we walked in, the service was gracious and welcoming, and every single dish was a masterpiece—from the fresh seafood to the perfectly prepared meats and the stunning dessert presentation. My family couldn’t stop raving about the flavors, the textures, and the attention to detail. Every bite felt like a celebration. The plating was beautiful, the ingredients were fresh and high quality, and the ambiance was elegant yet relaxed.

Went for my birthday dinner. Since we made reservations ahead of time, they had a “Happy Birthday” sign set up at the table which was a nice touch. Food was delicious but I’ve certainly had better for a lower price. The soft shell crab sushi was a highlight for me. Can’t go wrong with the Mochi Ice Cream Dessert. Our waiter was also superb; she took the time to explain each dish ordered and also provided recommendations on what to get and with what pairings. Overall, had a good time but likely would not be a repeat customer at this location at least.

This was an excellent experience with well curated food items and very quick service. The servers were always paying attention to clearing out the plates and cleaning the table and were very knowledgeable about the Food.

For our 10th wedding anniversary, we chose this Nobu location and it was absolutely perfect. We actually preferred its more casual atmosphere over the overwhelming, grandiose, and constantly thumping music vibe you often find at places like Caesar's Palace. The food, as expected from Nobu, was absolutely amazing and met their high standards. Our only minor issue was a misunderstanding with the server regarding a 40% tip. It might have been a miscommunication between her and my husband about the gift card balance, but he wasn't pleased. While the service was great, it wasn't that great to warrant such a generous tip, which we imagine might be more common for "big winners" at the tables.

Great upscale dining atmosphere, we got a nice booth and enjoyed service by our server. However, food prices were very steep and the makis were very underwhelming. The hot dishes though were very good - the standout was the black miso cod which was fantastic, followed by the squid pasta and maybe the wagyu dumplings. We also enjoyed the jalapeño sashimi starter! Overall a nice experience, but probably wouldn’t return again.

Mason was absolutely amazing as our server! The food was spectacular and so were the drinks but the star of the night was definitely Mason, he was patient, personable, professional, and very understanding. Thank you Mason for making my first trip to Nobu Las Vegas simply a dream!

I had the lychee elderflower martini, a baked crab handroll, the tuna ginger tosazu (strong ginger flavor), salmon sushi, a wagyu taco, and the crispy okra. Everything was amazing except a spicy sauce in the baked crab handroll. I asked about spicy food so the waitress knew I didn't want spicy, so when I took a bite and realized it was spicy I stopped eating it. Apparently one bite means you're being charged, which was disappointing.

Our experience was exceptional thanks to our waiter Jeffrey, who possesses extensive knowledge of the menu and offered us delectable recommendations. The food was scrumptious! Although the prices were anticipated to be high, it was worth it. Highly recommended.
