"At Nobu, it’s a toss up between which of Nobu Matsuhisa’s signature dish to order. The yellowtail sashimi with jalapeño comes with a garlic puree, thinly sliced serrano pepper, bathed in yuzu-soy sauce, and garnished with cilantro. The floral yuzu combines with the soy to bring out the sweetness of the mild yellowtail, while the pepper adds a pop of heat. The black cod yuzu miso uses Alaskan cod, a fattier version out of cold water, cured in Den Miso. Then it’s topped with hajikami, a sprout of ginger that’s pickled. "I’m glad the restaurant has reemerged at the newly opened Virgin Hotels, where the bar area has been expanded to twice its original size. Originally opened by Nobu Matsuhisa at the Hard Rock Hotel in 1999, Nobu brings his signature Japanese-Peruvian menu — black miso cod and yellowtail jalapeño among the dishes that define his career — back to Las Vegas. Yellowtail tartare with caviar, Nobu tacos stuffed with lobster, wagyu, or tuna, and Nobu’s renowned sushi selections return, along with crispy rice with spicy tuna, Japanese red snapper sashimi with dry miso, and rock shrimp tempura with creamy spicy sauce or ponzu. The restaurant offers Japanese A5 wagyu at $38 an ounce and omakase menus for $125 or $150. The renovated space still features a sushi bar with a view of the action as chefs work, an open kitchen, and a front bar for Japanese whiskey or sake. Fodor’s notes that Executive Chef Nobu Matsuhisa has replicated the decor and menu of his Manhattan Nobu — bamboo pillars, a seaweed wall, and birch trees — and lists additional possible dishes such as spicy Kumamoto oyster sashimi, monkfish pâté with caviar, sea-urchin tempura, and Maine lobster with wasabi-pepper sauce.
