Just opening a week ago in early August 2025, Nona's Lobster Shack at the Fontainebleau hotel in Las Vegas is a pop-up in their Promenade Food Hall. It's a welcome addition, bringing New England style seafood to the hall. I stopped in to get a Maine-style (cold) lobster roll and found it to be OK, especially for the price.
It's a very small menu, and the lobster roll is prepared in front of you, in front of the kitchen. They use an authentic, heavily buttered split top hot dog buns. It was a great start...but there just wasn't that much lobster ($36) meat: what was there was in small pieces, not the big chunks I was hoping for. The bun could have absolutely held more lobster...result was that I had a lot of excess bun left over, way after I had finished every piece of lobster meat. It came with potato chips, which were in small pieces and kinda reminded me of what you get from a food service provider (no name brand).
