I visited this bakery right before leaving Dallas during the first week of August.
I came to the U.S. from Korea for my studies, and while attending university in another city, I spent three months in Dallas for an internship. During that time, I discovered many great restaurants, and this bakery was one I had always wanted to visit. However, I never found the time until my internship ended—finally, I made it! Wanting to indulge, I ended up buying nearly $70 worth of bread just for myself.
Now, even weeks later, I keep thinking about this bakery’s bread, so I’m writing this review belatedly. I’ve visited many well-known bakeries in Korea and Japan, but I honestly think this place offers sourdough that comes close to perfection. How do they manage to make it so crispy on the outside, yet chewy and nutty on the inside? Sourdough often risks being heavy and crumbly, with the loaf breaking apart when sliced—but here, it cuts cleanly with any knife, the crumb is light, and the cross-section is simply flawless.
I’ve since returned to my university, which is about a three-hour drive away, but I would gladly make that trip again just to eat their bread. I truly miss it.
