Odoloste is a elegant bistro where you will experience tradition and innovation together, perfectly mixed in their dishes. I called in advance to make sure they could adjust the tasting menu for a guest that does’t eat fish and they were happy to provide alternatives. We tried the basurde menu and enjoyed a delicious and surprising experience. Everything was perfect, from the raw material’s quality, to the techniques they use to make them balanced, delicious and innovative. The service is attentive and fast and the dinner lasts around 2h. It’s an experience I strongly recommend!

It is a real celebration of everything pork. Innovative dishes, great flavours, interesting combinations. Service is great, each dish is explained, including tips which condiments to try first. The dessert was also absolutely amazing and delivered great freshness after all meat. My favourite was taco style Iberia cheek

A delightful boutique restaurant that celebrates the pig. Service was excellent. Good advice from the sommelier on a Granache from Priorate to pair with the dishes. When you think pork restaurant you think Oh my God I'll be so bloated, so full but that wasn't the case at all. Delightful tasting portions with a nose to tale take on pork.

Delicious food! If you want to have a pork culinary experience, this is the place. All plates are crafted to bring out the best of all the organic ingredients that pair well with Txerry (pork). Highly recommend.

Opened at 2pm on a Sunday and was the first customer to try out Odoleste which is on Michelin's list for Bilbao. Staff was super helpful and explained each dish and how to properly eat it per the Chef's vision. Just when you think you had their best dish, it kept getting better and better. I chose Basurde set menu for €65/p and opted for the cheese plate as well. For a first time Bilbao visitor, I highly recommend dropping by. Just remember to check their menu via their site as it supposedly changes based on availability of supplies and that there is no Ala Carte option.

A great modern Basque place in Bilbao. We went for the bigger tasting menu and everything was fantastic. Cooked and seasoned perfectly. The passing and service was spot on.

Fantastic restaurant specialized in pork dishes. My tripe dish almost brought me to tears, while my wife enjoyed her spare ribs. Excellent appetizers and superb wine selection too. Great service who spoke excellent English.

Good value for the tasting menu, beautifully presented, friendly staff. Standouts for us were the pork cheek taco-non-taco, and the mushrooms. You could tell a lot of care and effort went into each dish. Would recommend! Also I appreciate that I called to see if we could get in for lunch the same day (no answer) but I received a call back a few minutes after. How nice!
