"Ricardo Zarate’s first Las Vegas restaurant celebrates his Peruvian roots through design and symbolism in its Grand Canal Shoppes space. Every table features a different colorful, handmade tile—a detail borrowed from his Los Angeles restaurant Rosaline—and the dining room hides 11 bulls (including two large ones on a staircase by the bar) whose outward-facing horns are intended to ward off negative energy. The concept revolves around the number 11—reflecting Zarate’s place among 13 siblings—with an 11-item food menu and an 11-drink cocktail list; two tribal statues behind the bar represent fertility and romance, with the chef viewing the bar as the ideal spot for sparks to fly. "I saw that Once offers a Peruvian Nikkei dining experience at the Grand Canal Shoppes; its name is pronounced "on-seh" and means "eleven," symbolizing Zarate’s spot among 13 siblings. The concept leans into the numbers theme (there are 11 cocktails, including a gin and tonic made with a “slushee” machine) and the dining room is designed to mimic Peru with a rustic interior featuring floor-to-ceiling living plant walls, Edison lighting, seating for 160, and a patio with five large communal tables surrounded by plants; the only overt nod to Vegas is a neon green welcome sign. ‼️‼️‼️‼️NO VAYAN‼️‼️‼️‼️ Fui hoy a esta dirección y para mi sorpresa ya quitaron la tienda. La única tienda que hay es por Guanajuato. De verdad se me hace una falta de respeto que siga una dirección falsa en una tienda verificada. Me llevo un muy mal sabor de boca de esto.
