Chef Jorg Giubbani from Sestri Levante makes full use of the vegetables for which fertile Liguria is renowned, using regional produce to create technical, complex, elaborate and often highly imaginative dishes. Although there is also a concise à la carte, the best option here is to choose one of the three tasting menus, dedicated respectively to Liguria, vegetables (the restaurant has several kitchen gardens in the region) and a surprise menu designed by the chef.
