An exceptional experience at this hidden Michelin one-star gem in Kyoto! Every dish was thoughtfully composed, balancing tradition, seasonality, and subtle creativity.
The evening began with shrimp, Japanese beans, sweet potato gel, and sea urchin, beautifully paired with sake – a perfect introduction. What followed was a seamless flow of flavors: a delicate white fish broth with green peas tofu cheese, incredibly fresh sashimi, cold udon noodles with daikon and fried tofu, and a fillet of trout with Japanese green pepper and a bamboo wrap – all simple yet full of refined flavor.
One of the most surprising courses featured warm octopus, cold snail, okra and mini shrimp salad, chilled Spanish trout, mini fish noodles with spring onion, fish cake, and duck – nearly every bite offered a soft, unexpected explosion of flavor and texture.
The progression continued with cold scallops, young corn, asparagus, tofu skin, and fish flakes – refreshing and well-balanced – followed by a warm plate of Japanese eggplant, shrimp ball, purple yam pudding, and green beans. Unusual, but beautifully done. Toward the end, a piece of sushi with cooked eel and a bowl of miso soup – delicate, comforting, and full of depth.
Desserts were light and elegant – first a medley of strawberries, melon, and kiwi in papaya gel, then a final touch: white tonka bean paste and miso wrapped in yomogi dough – subtle, modern, and deeply satisfying.
The service was exceptionally kind, professional, and attentive. Oryori Mashita offers more than a meal – it’s a culinary journey through modern Japanese cuisine with deep respect for tradition.
