"Centrally located and with a plain, almost minimalist interior and a small charming outdoor space on the pedestrianised street for summer dining, Osteria Acquarol serves dishes which are strongly rooted in the region yet prepared with modern techniques and very much influenced by the character of the owner-chef here. Regionally sourced sustainable ingredients often feature in its highly original cuisine, including aromatic and wild herbs grown in the chef’s own garden. In 2023, the restaurant’s kitchen garden was extended so vegetables now play a more dominant role in the two tasting menus served here (seven and nine courses, with dishes that can be chosen à la carte style) – examples include the cold minestra soup entitled “L'orto dietro l'angolo” (“the garden around the corner”) and the unusual green tagliatelle with its carefully balanced bitter flavours. Originally from Cremona, chef Alessandro Bellingeri showcases the region in interesting and original ways." - Michelin Inspector

WOW! Best Michelin star dinner I’ve ever been to. Service was best-in-class and the food was out of this world. We did the 7 course option and there was an additional course at the beginning and end. The chef came out to chat and the entire environment was incredibly intimate and lovely. Pear tarte was mouthwatering. WOW wow.

An unforgettable dining experience with exceptional service. We opted for the 7-course menu and savored every bite—from the amuse-bouche to the final praline. Each dish was a creative and modern interpretation, perfectly balanced and beautifully presented. The fresh focaccia and sourdough added a delightful touch, showcasing the kitchen’s attention to detail. The open kitchen, visible through a sleek glass wall, added a sense of transparency and artistry to the experience. The ambiance of the restaurant matched the quality of the food—modern, elegant, and thoughtfully designed. This was more than just a meal—it was a culinary journey. We’ll absolutely be back and highly recommend it to anyone looking for a top-tier dining experience.

Incredible 9 course Michelin star tasting menu. Enjoyed the entire journey the chefs took us on, so many unique dishes. The spinach tart and morchelle were the highlight for.

It's a shame, but we really didn't like the dining experience. You enter a sparsely decorated and impersonal restaurant. As there were few customers that night, only one of the two rooms was laid out. In the other, somewhat almost empty room, there was an uncovered table with at least 20 tablecloths piled on top. Unusual for a Michelin-starred restaurant, to say at least. Of the 5-course menu, we were only really impressed by the amuse-bouche and the ravioli. The ravioli were light and perfectly balanced. While the starter and dessert were still delicious, we were disappointed with the main course (lamb porchetta) and appalled by the smoked spaghetti. The porchetta was not juicy and hard to chew; the side dishes were uninteresting. The smoked spaghetti was simply inedible. It had an intense fishy flavour, accompanied by an incredible bitterness and then… nothing further. We couldn't get anything out of this dish from any point of view. On the plus side, the service was friendly and dogs were welcome. Perhaps the restaurant has just had a bad run, but after this evening we can neither understand the star-nor the high Google rating. The money could definitely have been saved.

Osteria Acquarol is an absolute gem in Appiano. The atmosphere is elegant yet relaxed, the service warm and professional, and the food… simply unforgettable. Every dish is creative, beautifully balanced, and deeply rooted in the region while offering surprising, modern twists. The tasting menu feels like a journey through flavors and textures, each plate a work of art. A must-visit for anyone who loves fine dining — refined, soulful, and worth every moment.

Down-to-earth elegance is Osteria Acquarol in the small town San Michelle on the Südtiroler Weinstrasse just outside Bozen/Bolzano in Alto Adige. Alessandra Perla (from Mexico) and her husband (the chef) enjoy experimenting with local and fresh, fermenting and preserving foods, and a variety of spices. • We stopped in for a late lunch, she was happy to accept us. • Impeccably plated, unpretentious food with flavors to relish starting with peach and herbs on a thin miso cracker of sorts to wake up your palate. • We shared a starter of smoked trout from a local mountain lake and two plates: Tortellini stuffed with a Trentino cheese similar to Parm Reggiano, with saffron and Fusilli pasta with cress, rocket and more. Reasonably priced, wines from the local area, will definitely go back next trip! • Pascal their cute little dog might touch your heart!

We opted for the 7 course meal. The service was outstanding, especially since we needed English, and most of the courses deliteful. The exceptions were the pasta course with lovelace on it, which none of us cared for, and the main course which was wild boar. The wild boar was just a hunk of meat with no spices and was so tough I could barely cut it with a knife and couldn't chew it - very dissappointing given the price! Also, on a Saturday night the parking was a challenge. It was dark and rainy and we had to park at the town lot and walk back up to the restaurant. The atmosphere is modern minimalist and it was very quiet with only two other tables which was nice. I know it is typical Italian to eat late and not in a hurry, but we waited quite a while between courses - the meal took four hours! I have been to other Michelin one and two star restaurants in other countries. I don't think this one qualifies. At the very least, they were having an off night.

Visited again July 2022 and they NOW HAVE A MICHELIN STAR!!!!! Great result for a talented team. Visited again in September 2021.The food and ambience are still outstanding and Alessandro and Perla have added the supply of beautiful pasta to cook at home This is a world class restaurant in every way. The food, wine, people, ambience. You would be lucky to experience such a beautiful evening or lunchtime. We visit every time we can go to Italy.
