"Newly Michelin-starred and deeply personal, this Busan restaurant embodies chef Kim Jae-hoon’s journey and philosophy. He won his first star in February, a recognition that lifted him from a low point after opening in December 2019 just before Covid-19 hit Korea, and he says the Michelin Guide has “set the stage” so he can think more about the performance he’s going to give. The cooking here reflects seven formative years in Australia and guidance from a Japanese mentor at Sydney’s Italian restaurant Lumi, which taught him to be free from stereotypes and to layer flavors for a more complete final taste; before returning to Busan, he also honed his craft in Seoul as sous chef at the one-Michelin-starred Zero Complex. The service was flawless. Unfortunately, I did not find the food to the same standard as other 1 Michelin star restaurants I’ve visited (including others in South Korea). The snacks were unremarkable and unmemorable. One of the main dishes was akin to a cold onion tart. The hanwoo steak was cooked well but the dish lacked flavour otherwise. All other courses were great. The head chef was present during the service but did not even acknowledge our presence. Communication prior to the meal was poor - emails were not replied to and there was no response to our reservation from the restaurant (e.g. to ask for allergies). Value for money felt poor, though overall it was a good meal. Unsure if I can wholeheartedly recommend this place when there are two other Michelin starred restaurants in Busan at of writing.

The perfect experience from start to finish. The service was amazing but the food was beyond expectations. The wine pairing were spot on and we can confidently say it was one of the best culinary experiences we have ever had.

Overall we really enjoyed our dining experience at Palate. The service was excellent with both the Sommelier and the Waitress offering excellent commentary on food and wine respectively. Certain dishes stood out such as tomato with nice acidity but we both felt there could be more delivered from the menu overall- particularly the beef- whilst the meat was obviously good quality and cooked well it was a fairly standard French style dish with a simple reduction- needed more flavours/complexity to match michelin star quality in my opinion. Nice wine pairings but 50ml per pour is pretty stingy for the price point. Worth a visit if visiting Busan.

Great setting and atmosphere. The high points were definitely the turbot which was served alongside the bread and butter course. The sorrel sorbet was surprisingly strong but one of the best dishes of the night. Great meal especially at the price point

The view is beautiful, just hoped the food and service could match the nice view😂 1. Service: the service could be better as a one star restaurant😬the bread crumbs never got cleaned on the table, from the very beginning to the end of the meal. The dropped napkin never gets replaced😂interaction with customers definitely could be more. Communication should be a part of service? Never got reply from Instagram and email, had to call them for dietary restrictions! 2. Bread and dessert: just didn’t get it why there’s two types of ice cream and the coffee/tea counts one of the petit four? And! The coffee is horrible! It’s the most bitter espresso/americano(?), really can’t tell which coffee they serviced, I have ever had in my life! Maybe beans are not fresh or they should change the espresso machine. But they insist it’s what is it. Maybe they don’t hire a baker or pastry chef to make some decent dessert😂the sourdough they served was cold… Overall experience and advice: just come here for the view! Without expectation of the food, you will be happier!

Fantastic from start to finish. The arrival to the venue is not beautiful but everything else once you enter is fantastic! Cannot wait to return next time I am in Busan. I recommend doing the drink pairing, adding caviar and/or truffle.

I really enjoyed my experience at “palate”, I had a great lunch and got the opportunity to meet the chef and had a pleasant chat with him about food and travel; each dish was perfect, texture, flavour and presentation; the location is stunning, a great view of the harbour to dine with! Can’t wait to come back in the future to taste more! Thank you
