Chef Diego Hernandez Opens a New Restaurant in Valle de Guadalupe | Eater San Diego

"Named after his late grandmother Mercedes Velasco, the restaurant reactivates a space long-held by Mesón de Mustafá and is being positioned as a family-oriented spot that celebrates the roots of Baja California home cooking. I see Hernandez and chef-partner Ana Juncal gearing the menu to local families with huevos al gusto, regional guisados, Ensenada-style ceviches and staples preserved from the previous restaurant like pancakes, chilaquiles with braised lamb and beans. Breakfast offerings include huevos rancheros, huevos a la Mexicana, huevos con jamón, and a take on eggs Benedict served on sopes with potatoes, chorizo and chipotle Hollandaise; guisados have been expanded to feature machaca de mantarraya (stingray), salt-cured nopales rancheros, and herbed queso ranchero en salsa verde with hoja santa alongside machaca de res and chicharrón en salsa verde. An intermezzo menu (noon–2 p.m.) will offer tortilla Española, sashimi, ceviches and huevos rotos, while from 2 p.m. until close the kitchen focuses on wood-fired asados—from arrachera with sauce choices to whole rockfish marinated in a Basque vinaigrette and cooked zarandeado-style—plus sides like roasted beetroot dusted with queso cotija and assorted organic vegetables from Hernandez’s garden finished in chile butter and a sherry wine glaze. The restaurant keeps the popular Moroccan-spiced braised lamb from the former occupant, offers affordable plates such as mole de olla, enchiladas and enfrijoladas (dining can start at about 160 MXP, or diners can share a roasted half suckling pig for about 1,600 MXP), and the bar serves local wine, craft beer, cantina-style cocktails and international wines; hours are breakfast 8 a.m.–noon, intermezzo noon–2 p.m., lunch 2–6 p.m.; closed Thursdays." - Bill Esparza

Parador Mercedes is relatively new in Baja and has quickly become one of the top recommended places by locals. We came for breakfast but I really want to come back for lunch hours. We tried the bisquets as an entree and these were simply wonderful. I could just come back for those. They are served with cream and jam. We also tried the lemon pancakes (very good), the machaca and chilaquiles (amazing), the zuccini and meat plate (amazing as well), breakfast sandwich and crab burrito (these I'm guessing were very good as well, cause my parents did not even make an attempt to share). The only downside was that we came around 9am and they had already run out of a few plates, but I guess it's because they were amazing too. Definitely want to come back.

Every time we visit Valle de Guadalupe, we have to stop and eat here. They have an extensive menu: café de olla, chilaquiles, pancakes. Everything is delicious. Ask to sit in the patio, where the breeze can hit you under that big, huge, beautiful tree because it can get stuffy and hot inside. We visited in August. Excellent service. They have delicious home made bread. They accept reservations, family, friendly kid, friendly menu. Highly recommend it. It's right on the main road heading into valle , very easy to get there plenty of parking.

The concha is one of the Best I’ve ever tried! Fresh and fluffy! The bénédictin sope was delicious, they also have fresh natural teas.

Really good menu and it's as tasty as it sounds . Something for most tastes . Nice surroundings and good service. It's becoming one of our go-to places and we live here .If you're here for breakfast do not miss the biscuits.some friends come just for them.

We were with a large crowd, approximately 10 people per table. 1/2 suckling pig for 10 people. 1/2 chicken. Suffice to say I only ate what was left when everyone else was done. We all left hungry. I personally had 2 tacos with mashed potatoes and 4 pieces of Churizo. I hope they get better before we go back.

Came here on a Saturday for lunch and was disappointed. I came with high expectations as I had looked into its reviews beforehand. Unfortunately, neither ambiance, food, or service lived up to my expectations. Ordered seared prawns and prawn aqua chile. Prawns were served without having the intestine removed prior. Prawns did not have the best flavor or consistency. Restaurant was close to empty at 1:00PM with only two other tables being seated. Not sure why maybe just cause its new? Service was ok but far from as passionate as we have seen at other good restaurants. Design of the restaurant also felt a lot better in photos than in person.

We stumble into this place thinking it was electric coffee but stayed for breakfast! We got SOPE DE HUEVO EN SALSA and it was absolutely incredible. I would come back just for that dish again. The complimentary salsa and chips are also fantastic. Bilingual and friendly service!

I would highly recommend this place! I’ve eaten breakfast and lunch here and the experience was excellent both times! The food is delicious and the service was tops. Very friendly people! Location is ideal and the atmosphere is really nice, serene and chill. I’ll be back for sure!
