Peach Blossoms at PARKROYAL delivered one of the more memorable Chinese fine dining experiences I’ve had. Chef Edward’s menu was inventive and genuinely thoughtful, not different for the sake of being different, but dishes built around texture, contrast and flavour precision. No tired suckling pig or predictable braised abalone here.
Standouts were the lohei and the whelk and fish maw soup, both exceptional in depth and balance. The amadai, with its crisp skin, was elevated by a savoury, aromatic sauce with a subtle curry note, keeping it interesting even for someone who has had the dish elsewhere.
Not everything landed perfectly. The truffle mushroom rice leaned a little too sweet for my palate. Still, the overall execution and creativity were impressive. You can tell the kitchen is pushing boundaries with intent.
At about $320 per person after taxes and service, it is expensive, but for the quality and distinctiveness, worth it. A meal to remember.
