"Perle on Maple, a new French eatery with a Chopped alum at the helm, has officially opened its doors inside the Stoneleigh hotel. The restaurant is part of an extensive remap at the historic hotel, including a renovation of the 11th and 12th floor penthouse and Perle on Maple, which occupies a space on the ground floor. According to a press release, the restaurant features midcentury modern baroque styling from Studio 11 Design, and diners will find an outdoor patio with a fire pit, indoor bar and lounge, plus a dining room decked out in gold leaf, black steel, and white brick with navy banquettes. As far as the kitchen is concerned, Executive Chef Wade Burch, who worked his way onto Food Network’s Chopped Champions after winning Chopped, will be offering “bistro classics with a Texas twist,” made with ingredients from local farms. Dishes include duck confit pancakes, Bandera quail wrapped in bacon with white bean cassoulet, a striped bass trucked in daily from the Silver Streak Farms in El Camp, Texas, plus the signature Duroc pork served with spinach, grain mustard, and Calvados apples. A native Texan, Burch logged time at the Plaza Hotel in New York, the Pan Pacific Hotel in San Francisco, and the Hotel Crescent Court in Dallas, among other high-profile gigs before landing at Perle. The employees were amazing and super attentive to all of our needs. I found the food to be over priced for the quality though. Everything looked good, but not as pretty as I would have expected for a French restaurant. My favorite part of the meal that I was most impressed by was the dessert. Nothing was bad, but for that price I would expect better quality and presentation.

Chef Wade Burch has outdone himself!! We are still recovering from the food coma we fell into last night at Perle on Maple! Duck Confit Pancakes, Salmon, Duck Breast, Ahi Tuna Tartar and Profiteroles for dessert! And of course there was wine! Fun Fact-Chef Wade Burch was a Chopped contestant and winner! Here are a few photos of our experience. We will be back!

Our experience was lovely. Not sure why this has a rating under 4 stars but it appears to be more about service and fussy things as opposed to food. Service was excellent. He was the only server but we never had to wait and didn't feel rushed at all. Americano was tasty, breakfast sandwich was delicious, bowl of fruit was fresh. Husband has the breakfast potatoess, sausages and toast - enjoyed it all. On a side note, I sat at the bar the other night and the bartender was excellent.

Service was great but unfortunately the food is very below par and especially at these prices. The chicken dish was very dry and no flavor at all. Same with the halibut. Wonder why there was only 3 other tables in the entire place on a Valentine’s Day. Won’t go back.

Saturday night. Hotel front desk said no wait, & our first choice restaurant was full. It’s seat yourself, there was one other table of 2. The solitary server was indifferent. He did bring us water, but after almost 20 minutes without a drink order, we left. This was probably for the best, as the kitchen was silent & the lights in the restaurant were on full brightness. I doubt the food or experience would have been nice.

We arrived and no signage to indicate directions to restaurant, bar or hotel. We were greeted by no one at the restaurant desk, we had to walk into the restaurant to be told that it was reservations only when we had a reservation HAD we been asked. We were then given a piece of copy paper listing a Mother’s Day brunch menu. The group and I were anticipating to be served from the usual menu. There were special requests that were denied because “it’s not on the menu that way”. (I.e a side of bacon or a side of egg) the portions of the food was less than pleasing since the pricing was above the norm of a high end brunch. The waitress was kind but was quick to remove our dishes every time we finished something, our experience overall was rushed, unsatisfactory, and just downright different. My group and I, won’t be returning.

We came here for a little cocktail before dinner.. the chips and salsa with guacamole hit the spot as we had our cocktails and mingle with our family and friends. The staff members are so nice very friendly very attentive... the space is beautiful plenty of places to sit down we decided we were going to stand by the bar. Really great space

Solid breakfast spot! Was staying at the Stoneleigh so stopped by for breakfast regularly. Sometimes I was in a rush and other times I wanted a leisurely break, but no matter what, Edgar always took care of me with a smile. He was super friendly, kept my water refilled, and brought out my food quickly. On a regular work day, I'd usually opt for the Oatmeal and sometimes the Yogurt. On an adventure day, or a day where I had a longer run and was famished, I'd get something with eggs. Scrambled eggs with veggies or the veggie breakfast sandwich for a true treat yourself kind of breakfast where you know you just ate way more calories than you burned by running. Also tried the avocado toast, which is simplier and lighter than you would typically see. Not bad at all, but also not my favorite (I'm personally more of a mashed up avocado with arugula on sourdough bread kind of person). Perle on Maple didn't rock my socks off, but the food is solid and makes for an easy breakfast, and I loved how casual and relaxing it was to work there. Plus Edgar is the nicest!

Bar review - Fun, energetic servers keep the drinks flowing as most hotel-guests are in and out for dinner somewhere else in the Big D. I thought the drink pours were great and loved the smooth jazz band playing in the lobby on a Friday evening. I also had the meatballs appetizer - which the staff were very proud of being homemade on premise. A couple of big screen TVs to catch Luka and the Mavs. Cool bar in a great old, historic hotel.

Dined here last night because our friends were hotel guests. Bartender good, made solid drinks and knowledgable about the wine available. Great musician in the bar area! We went onto dinner, reservations at 7:30 and we were the 2nd occupied table. Service was good and attentive. Started with a charcuterie board which was basic but good. 3 of us got the burger which came with fries but they offered to sub with a salad if we wanted to. Waitress asked how we wanted it cooked (medium) but they all came out very well done and very dry. One in our group got the chicken, again very dry. The fried eggs had solid yokes so no hope for moisture from the yolk. She asked to sub the spinach with the brussel sprouts but the waitress failed to inform her that the sub would mean she didn't get the mashed potatoes that came with the entree. She was stuck with chicken and sprouts.....

It was my first time at Perle on Maple and I absolutely loved it and every item I tried on the menu! The chef even came out and talked to us about some of the items we ordered and I loved that he did! It made the food personal would definitely recommend this place for brunch if you're hungry (they have the perfect portions) and if you like fine dining! Great for a nice get together. My personal favs: Ahi Tuna Tartare, Brioche French Toast, and the Duck Confit Pancakes (which aren't your normal pancakes )

This is a new restuarant we heard about by word of mouth. So we tried it out and it was awesome! The food taste and presentation was excellent. I have uploaded some photos if you are interested. Even our picky 13 year old son (who only wanted french fries) said they were the best french fries he has ever had. Trust me, he is a french fry connoisseur. The service and staff were very professional and friendly. People eating here were dressed from casual (jeans and short sleeved shirt) to fancy (cocktail dress), so I think if you aren't wearing sweaty old gym clothes or something, you will be good. Here's just some of the food we enjoyed (see photos I have added): Duroc pork tenderloin with calvados apples and grain mustard sauce. The apples and pork were a lovely combination and tasted wonderful. Duck confit pancake with caramelized onions, warm Brie, roasted grapes and thyme. Normally I am not a fan of duck, but the mix of flavors in this appetizer has changed my mind. Another great find at this new restuarant. So good!! Chicken liver mousse with grilled bread, armanac prunes and shallot marmalade. The roasted garlic that came with it was yummy too. Also, the side of salt that came with it is a special pink salt from Hawaii that is mined near volcanos. I have never had it before, but it was a new and enjoyable experience. And finally, the BEST Creme Brulee ever! They also have authentic Profiteroles for dessert, and I haven't had those since I lived in Europe. So, I will be going back soon to satisfy my Profiteroles cravings.

Food Poisoning - Campylobacter Aug 30th, 2019 had chicken salad for lunch here and by Sept 1st I was hospitalized. Contacted restaurant manager & head chef by phone & email, received no response; two weeks later the Dallas Health Dept contacted me because my lab results were positive for Campylobacter (food poisoning). I was hospitalized because of their negligence and flat-out ignored by management. Shame On You! Le Meridian Hotel & Perle on Maple. This is probably the 3rd review I've ever written, but there will be more. Consumers are being taken advantage of. I would give this restaurant a 0 rating.

Used to travel zoo voucher for $125 for four people. Had the gnocchi which appeared to be microwaved. Had the braised lamb shank with cheesy grits and cold carrots. Service was excellent. Place is romantic. Valet parking was very polite. Just wish food was better

Stumbled upon Perle on Maple somehow and found out they were part of Restaurant Week. I'd never done restaurant week before, so why not? Quickly greeted by Christina whom ended up being our server. Christina was a delight the entire night. She was attentive but not too pushy. She allowed us to have our conversation and enjoy our experience. For the "Le Premier," we both tried the Lamb Merguez Sausage. It came with warm potato salad and truffle aioli. I don't think I've ever had lamb before and now I questioning some life choices. We both thoroughly enjoyed it and felt it was the right portion. For the "L' Entree," I had the Trout Almondine and my buddy had the Burgundy Braised Lamb Shank. Both great choices. That lamb just melted off the bone and was full of flavor. My trout was light and flavorful. A friend suggest I get the Profiteroles for dessert which we both obliged. Although very yummy, I wonder if I should've gotten the Creme Brulee instead, which I can get that anywhere, right? I'd recommend them for sure.

A gem of a restaurant in the Stoneleigh. Great cocktail menu, with both familiar options done well (Old Fashioned, etc.) and some intriguing new offerings. Appetizers at our table included the gnocchi and a fish dip: both were well flavored and executed...and devoured. Entrees included the duck (fantastic); rainbow trout with haricots verts (excellent and a generous portion to boot),as well as a steak frites that more than held its own given that Nick and Sams is across the street. Topped off the meal with profiteroles and we were a table satisfied. This is a great spot when you want multiple outstanding options to choose from; a nice room that has energy but is not deafening loud, and excellent service. Surprisingly, in a neighborhood with many strong dining choices, this is a unique destination.

My husband and I decided to come here on a Friday evening -- the restaurant was quite empty, yet the service was so slow. It was nice looking inside, but very much felt like a hotel restaurant. I had the Lickety Spritz to drink, which honestly was not very good. It promised a lot of flavors, but ended up tasting mostly like a very pink watered down gin and soda. For our appetizer, we had the raw oysters, which were fine. Then for our main courses, my husband had the sea bass, which was also fine, and I had the chicken, which was, again, fine. Overall, maybe we chose the wrong dishes? Nothing was outstanding, and actually, it essentially felt like decent wedding food? Everything was also quite overpriced for what we got. Overall, not impressed. Food was okay, but for the price and the wait, don't think it was worth it. :/

Maybe I was just very unlucky with this hotel and restaurant experience. But they are missing major steps of service. It was slow on the Saturday morning and you seat yourself. It was just two of us but 60% of the available seats were unset or dirty. We found a spot and sat down. Our server seemed unhappy and asked if we were eating the buffet or wanted to see a menu. We ordered coffee and had to ask for sweetener and were given a spoon to stir the cream. We used our knives. I ordered the yogurt and granola and a piece of banana bread. The yogurt bowl came out so messy and on the side was tiniest bowl of what tasted like nature valley granola I was blown away. I had to take a picture because I couldn't believe that's what they served. The banana bread came out cold and it looked grey and weird. I asked for it to be warmed up but it didn't help. My husbands avocado toast looked good though. I had maybe 2 bites of my meal but the server never noticed or simply didn't recognize a need for intervention. Anyway, just wasn't a fan. Maybe other services are better staffed or better supervised food quality. Don't plan to return.

Pretty good. Had the crab avocado appetizer which was tasty. Then had the mixed green salad with steak. Salad was ok but steak on top was tender and well seasoned. If you order the salad, get the steak on the side so greens don't get soggy. Wish I had done that. Oh, and the server, I can't remember the young lady's name but she was in her 20s but she was amazing!

Best service in Dallas. I was lucky enough to just stop in and get the fried oysters and charcuterie board. Max makes the best drinks- his cosmos are on POINT- and he gave my sister and I great recommendations on places to eat and drink all throughout Dallas. The people at the bar are lowkey and super fun too. Great energy great bar!

First of all: creepy host up front. Using some overly done fake accent and literally creeping up behind us...Horrible service, restaurant was not even busy. Waited for 45 minutes for appetizers which were the only good thing about the meal. There were 7 of us. All simple orders. A bottle of wine (which no one could find, so they brought out a meager one), 4 salmons, 1 sea bass and 2 pork dishes. The salmon was over cooked to the point that it could have been bounced off a wall. The pork was so salty. My sea bass actually tasted like dirt. It was disgusting and I ended up sending it back. The waiter could have cared less. He didn't even offer dessert. We had to bring all the checks to him and he just dropped the pile off with a bunch of pens and left...the manager told him to give us a discount and he didn't do it. the new manager has only been there for a month: best of luck.

We had the bone marrow, beet salad, warm goat cheese, and salmon. Everything was delicious but my favorite was the salmon. It had a really nice crispy exterior but was very moist on the inside. I also tried the Lickity Spritz and thought it was amazing! Service was very friendly and attentive. Highly recommend and hope to be back again soon to experience more of the menu.

Just had the most wonderful meal there. The food is exceptional, as was the service. I had roast beet salad, duroc pork, and molten lava cake, while my husband had lobster bisque, escargot, trout amandine and profiteroles. Atmosphere is casual. Everything we had was amazing, and our waitress Taquisha provided excellent service. Cant wait to go back.

I give it 2 out of 5 stars. 1 Star for the best French Onion Soup I have ever had. Not to sweet, great cheesy topper. I finished every last drop which I never do. I give it half a star for a very good French 75, and half a star for really good service. The rest of the food was standard French, but uninspiring and not all that well executed. We had two seafood dishes, the salmon and the sea bass, both were over cooked and placed on top of some mushy foundation. If it wasn't for the fact that there is a plethora of places to try and old Dallas standards that are solid, I would rate it higher. It was dead the night we went, maybe I'll give it another chance.

We came here because Dallas Eater listed it as one of the top new restaurants in Dallas but we were pretty disappointed. We ordered the duck confit pancakes, pork tenderloin, roasted chicken, and chocolate lava cake. The duck confit pancakes were an interesting idea but they just didn't work. My husband and I are both normally fans of duck confit but the confit was dry and the onion and grape flavors just did not compliment it. The pork tenderloin and the chicken were both good but nothing to write home about. The best dish was probably the lava cake even though it was not a traditional lava cake as there was no real molten center. Overall it was a fine meal but we won't be back.

I was very disappointed in the bar staff. I stood at the bar for 10 to 15 waiting on a drink. They seemed to be checking on the bar top guests and no the ones standing up. Finally got my drink. After awhile the bar emptied and I went up for another drink. Again, I stood forever waiting. Until finally someone came over, took the glass and walked off without even offering another. What just happened?? We flagged the girl bartender down who seemed to be very attentive. Later on my friend and I were about to leave and decided to have another. The female served us immediately. We sat down on the couch and talked for awhile, and I set my empty glass down. Once again, someone came by, grabbed my empty glass and offered drinks to the group next to us and ignored us. We immediately left. We had made plans to go back for dinner, but the service is disproportionately inadequate for the prices. Had the female bartender not been there, I would have given less stars.

I had made a 1:45 reservation for Christmas Day (for myself & two adult children)...the last opening that was available per Open Table. When we arrived, instead of someone to show us to our table, a sign said, please seat yourself wherever you wish. We looked across the dining area where about 5 tables still had patrons and 5-6 tables still had dirty dishes. Finally, a woman approached and asked if she could help us to which I replied, "We are the party of 3 with a 1:45 reservation, but I don't think that's necessary now." She miss my satire & walked us through the dining room to a table for 3 that clearly had just been "bused" but not cleaned, so we just stood there and waited until a server came and wiped it down. (We should have taken that as a sign to just run! But, no, we were hungry and sat down.) At 2:00, our server came up and took our adult beverage order and said he would get us water. At 2:15 we got the water, at 2:30 we got our adult beverages. At 2:45 our meal orders were taken. (We should have chugged our beverages and run out the nearest exit! But, no...most of the patrons had left and it was quiet.) The head chef came out about 3:00 and apologized for all the delays; that our food would be out soon, and that the bill would be 50% off which was nice, but it was 3:15 when we got our food. My daughter had said earlier she was not that hungry and opted for a chicken salad sandwich which she commented "tasted funny". We were all so hungry that we devoured our food, begged for the bill and rushed out as we had tickets for a 4:20 movie. The movie had :30 left when my daughter jumped up and left the theater to never come back. She texted that she was throwing her guts up in the bathroom. By the time we got outside the theater, she was begging to get her home as quickly as possible At 10:30 that night, she is able to hold down Gatorade. Nothing like a good ole dose of food poisoning to totally blow your Christmas to smithereens! We will never return to the Perle.
