"Located on the ground floor of the Stoneleigh hotel, Perle on Maple is a new French eatery led by Chopped alum and Executive Chef Wade Burch; I found the space dressed in midcentury modern baroque styling by Studio 11 Design, with an outdoor patio and fire pit, an indoor bar and lounge, and a dining room decked in gold leaf, black steel, white brick, and navy banquettes. Burch, a native Texan who won Chopped Champions and has worked at the Plaza Hotel in New York, the Pan Pacific in San Francisco, and the Hotel Crescent Court in Dallas, is offering “bistro classics with a Texas twist” made with ingredients from local farms. Dishes include duck confit pancakes, Bandera quail wrapped in bacon with white bean cassoulet, striped bass trucked in daily from Silver Streak Farms in El Camp, Texas, and a signature Duroc pork served with spinach, grain mustard, and Calvados apples. Perle on Maple opened on May 17 and operates seven days a week, serving breakfast 6:30 a.m.–10 a.m., lunch 11 a.m.–2 p.m., and dinner 5 p.m.–10 p.m." - Alaena Hostetter
