But when a restaurant owned by Vietnamese immigrants changed its name from Cat’s Submarine to Pho Bac in 1982, it became (allegedly) the city’s first pho restaurant. Now run by sisters Yenvy and Quynh-Vy Pham — who have opened a half-dozen hyped restaurants and scored multiple James Beard Award nominations — Pho Bac is a little more glam than it used to be, with microbrews and cocktails, but that broth is timeless." - Harry Cheadle

"Though this is a cool, casual place to eat Vietnamese bar snacks, you’re here for phở first and foremost. We like the brisket and meatball bowls a lot, but our favorites are the massive short rib bowl and the special off-menu version with an entire half-chicken slow-poached in broth. "So, your visitors watched a Youtube video of someone at a Vietnamese restaurant in Seattle trying to eat the world’s largest bowl of phở and now they want in. Have a normal-sized noodle soup at Phở Bắc Sup Shop instead—no need to slurp down gallons of liquid in one sitting. We especially like the chicken phở with crispy shallots and lime, but the short rib soup is also delicious. "Being hungover is kind of like having a stomach bug - except you only have yourself to blame this time. But in both situations, pho helps. Pho Bac Sup Shop is one of our favorite places for some light Vietnamese noodle soup, especially the slow-poached chicken version. There’s even a photo booth, should you want to eternalize your experience in a keepsake memory.
