A Hidden Gem: The Bò Kho (Beef Stew) is a Must-Try Masterpiece
I came here specifically looking for beef stew and was absolutely blown away. Phở Nguyên is a true family-run hidden gem that serves a dish of exceptional quality.
The Dish (Bò Kho - Beef Stew):
I ordered the Bò Kho with Mì (egg noodles). The meat was, without exaggeration, the most tender I have ever had in a restaurant. This quality was exceeded only by the sheer quantity; there were at least six huge, incredibly tender chunks, easily eight to twelve ounces total. It was clearly a high-quality cut, either beef shank or brisket, braised to beyond perfection. It was so soft it simply fell apart, exhibiting a mastery of slow-cooking.
The technical execution extended to every component, which is so hard to achieve in a stew. The carrot was bright orange, firm yet tender, and maintained its powerful, distinct carrot flavor-a sign of perfect timing, as it never absorbed the beef flavor. Likewise, the potato was flawlessly cooked; firm enough not to be mushy, yet soft. This incredible balance demonstrates true culinary mastery.
The Experience:
The care and tradition here are obvious. I initially sat toward the back and noticed a slight cleaning scent (I am extremely sensitive to chemical smells, so others may not notice it). The staff was extremely accommodating when I asked to move seats, and the issue was completely forgotten and masked by the incredible aroma of the Bò Kho when it arrived. The service was warm, provided by family members who clearly take pride in their work.
If you are looking for authentic, unforgettable Vietnamese cuisine, this place is essential. The Bò Kho is a transformative meal.
