Did I just finally find my go-to pho restaurant since moving to Vegas? Pho Vegas was the classic hole-in-the-wall, authentic mom and pop restaurant we were looking for to get our pho fix. We walked into a silent restaurant with empty tables, 1 waitress, and an older gentleman who was perhaps an owner sleeping at a table in the corner. Christmas decor was already up despite it being mid-October. Based off the vibes already, I already knew our food was going to be good!
We were the only ones dining in although they had a few people come and pick up to-go orders. We both got pho and the serving size was HUGE. I did ask for a small size but I think they must have ended up giving us both large on accident. The pho comes in huge metal bowls. You get your standard veggies - beansprouts, Thai basil (pretty fresh), jalapenos, and lime. Condiments at the table include hoisin, sriracha, sambal, and homemade chili oil. They serve water in glasses which was surprisingly a nice touch from the plastic cups I'm accustomed to at small restaurants. My pho came with rare steak and tripe. The meat is a good portion size. The amount of noodles is much more than I'm used to compared to other pho places. I did feel the broth was a bit light and next time I would consider getting a different soup besides pho for a stronger tasting soup.
Overall the restaurant is very clean in spite of the mismatching decor. As others have mentioned, the price is pretty much unbeatable. We didn't mind being the only ones eating here on a weekend night without any music or TV to cut through the otherwise silence in the restaurant, but just a heads up to others!
