"While everyone at Phở Bắc’s newest Downtown location is slurping phở under stark fluorescent lighting, there’s a hidden bar upstairs called Phởcific Standard Time where you should head post-soup. We love every last one of these drinks, like the Dua Dừa which features rum, absinthe, coconut milk, lime, and basil seed—and is intensely refreshing. And then there’s one of the best cocktails in Seattle: the Cà Phê Tini, an iced coffee martini that tastes like what the Nesquik Rabbit would order after a long day of advertising chocolate milk to children. "There's a good chance you’ll be doing some exploring Downtown, and after a long day of navigating e-bikes through one-way streets, you might want an adult beverage or two at Phởcific Standard Time. Located inside Phở Bắc in Denny Triangle, the second-story speakeasy is close enough to the touristy action where you won’t have to call an Uber, but removed enough that you won’t see any Piroshky Piroshky bags or selfie sticks. They have a cheesy caramelized crab and prawn dip to snack on as you drink one of their Vietnamese-inspired cocktails, like an iced coffee martini topped with pandan dust. And Phởcific Standard Time, a new speakeasy above Phở Bac’s Denny Triangle location, is the best new place to grab a drink. If we had to choose between all of the Vietnamese-inspired concoctions, we’d go with the cà phê tini, shaken with vodka, sweetened condensed milk, cold brew liqueur, and topped with pandan dust. Creamy, smooth, ice-cold, and just stiff enough, this frothy cocktail is precisely what the Nesquik Rabbit would order after a long day of advertising chocolate milk to children.
