Clark Street across from Wrigley Field, the Wrigleyville location arrives amid a changing Clark Street scene punctuated by turnover among bars and restaurants; ownership is waiting for its liquor license, according to a rep. It serves as an incubator of small brewers, leasing out its space and equipment to jump-start businesses and offering beers from different brands inside its taproom, and this outpost takes that a step further with a new food menu. Earlier, ownership peculiarly described the menu as “neo-American street food” without teasing any specific items; the menu actually includes dishes like Italian wontons, soup dumplings in a bath of pozole, and loaded tater tots with pieces of bulgogi — a version of food made by third-culture kids, combining the food their immigrant parents grew up eating with food commonly found in American homes. Beyond the souped-up menu, the venue also serves glasses of wine and canned cocktails from its own brand, Devious. The roughly 3,000-square-foot space includes patios on the roof and ground floor. Pilot Project Is Opening a Second Chicago Location in Wrigleyville This Spring | Eater Chicago

"Launched in 2019 in Logan Square as an incubator for up-and-coming brewers, this operation helps small brewing teams test unique beers before opening independent breweries; brands that started there include Donna’s Pickle Beer, Funkytown Beer, and Azadi Brewing. To date 21 brands have worked out of the incubator, nine led by women. Co-founders Dan Abel and Jordan Radke expanded capacity in November 2022 by opening a 70,000-square-foot production facility and tasting room in Milwaukee after purchasing the Milwaukee Brewing Co.’s Pabst Brewery District location with support from an $8 million fundraising effort led by InvestBev. The incubator is opening a second Chicago spot in Wrigleyville (planned for late May/early June) at a 3,500-square-foot space that features a rooftop and a basement lounge serving canned Moscow Mules, margaritas, and whiskey sours from Devious, the operation’s own beverage brand, plus a full kitchen with a menu described as “Neo-American street food.” The model removes traditional barriers for brewers by providing facilities, marketing, and distribution in exchange for a small equity stake (typically 5% or less), evolving into co-packing or co-manufacturing agreements as brands scale — an approach the founders compare to the built-in infrastructure musicians have for recording. Jumped in here on Friday hoping to snag a late seat at the Cubs game. Ended up staying there the whole time. Bees were great and the staff was so friendly and welcoming. They seemed genuinely excited to be there getting the place up and running. Beers were all excellent and I sampled like 6 or 7 of them. Small pours and flights available! UPDATE: Popped in on Tuesday, July 22 for dinner. Once again, the service was impeccable as they raced up to Cubbies game time and cleared that rush. Absolutely two for two, PP!

Stopped in for a snack and some beers. Everything was really solid, liked the chill patio vibe. Will def be back to hang in that cocktail lounge I noticed downstairs also. It was kinda quiet when we were there but all the staff was still really nice and attentive. Think I caught the names of the three servers that all checked on us, think their names were Rachelle, Stephenson, and a Puerto Rican dude named Antoinette or something like that.

Pilot Project is fantastic! I went for their grand opening and everything was excellent- beer, food, service (thank you, Steven!), and vibes. This location has a huge outdoor patio that I plan to continue to take an advantage of the rest of the summer and fall. I enjoyed their 4x4oz beer flight and trying many different draft beers on their menu (plus a can of the pickle beer!), including multiple sours and a super juicy hazy IPA. If you don’t drink beer there are plenty of other drink options (including N/A). The food was also delicious and the kitchen had no problem accommodating an allergy. I highly recommend checking out pilot project!

Wow, I love a brewery with good food! This spot offers a comfortable interior, spacious patio, and a swanky bar downstairs. They have a wide array of interesting and delightful beers and a food menu that offers delicious options for traditional meat lovers and multiple vegetarian options that are delicious and don’t forget about the protein. Not only were the options good but the execution of the dishes was fantastic. The service was personal, knowledgeable, attentive, and friendly. We will absolutely be back and expect that we will be adding this spot to our regular rotation.

Great new brewery! Kaitlyn, Blaine, and chef Donnell were all amazing. Ahi tuna nachos were the best I had. Drinks were even better. Will come back soon.

Super nice bar that's just far enough from the stadium so it wasn't crazy loud and busy. We sat outside the first visit and ordered from the outdoor bar. They have lots of options for local and small breweries, both on tap and cans, so it felt nice to support them. I got the sour and it was great. The second time we went back, we sat in the lounge in the basement. It wasn't busy at all and I'm not sure why because it was so cool down there and the seating was cozy. The bartender was great and made us one of the best manhattans we've had.

I was so excited to finally try out the third location of Pilot Project! The other two have different vibes and I didn't expect any different here. It feels more upscale, even though it's in Wrigleyville. The bartenders were great and we learned about daily specials that they're going to start having - $1 wing nights, burger specials, etc. My boyfriend and I split a bulgogi picadillo tostada wrap ($22). It was just enough for us as it's a large entrée. I was also quite happy with the beer selection. The ambience is nice and I like that they kept some of the rustic feeling components of the building so that you can tell it has some history. I heard there is a speakeasy style bar in the basement which I look forward to trying when it is open next time I visit. I bet their brunch out on the patio is quite nice, too!

Service was great. Everyone was super friendly and accommodating. I walked in for a late lunch with all my luggage and they were more than happy to make me comfortable. The hibiscus lime mule was served in a can with a glass of ice. Tasted great and I had two. The sour dumplings were delicious. Served with 5 dumplings. Just enough spice to be flavorful but not too hot. I was very pleased.

Pilot Project is a sneaky patio in the heart of Wrigleyville. Sat right across from the main stretch of bars, this is a little oasis where you can just go and chill. They lots of great beer options and plenty of appetizers. I had the soft pretzel and loved every bite of it.

I was so excited to try this place, and it definitely lives up to the hype. I got two flights to try as many beers as possible, and every single beer hit the spot. I recommend getting a few flights to take full advantage of the expansive beer menu. The steak frites was incredible as well, but there are so many other foods I want to try here too!

A random Friday night pick , turned into a great night out! From the dimmed lighting in the basement , to the awesome staff and beautifully curated menu...this place is a MUST TRY! Went in with as a group of 5 , so we decided to order couple of things off the menu and share. My top picks would personally be the mole empanadas and bulgogi tots ! The empanadas are cooked to perfection along with a delicious mole (not spicy at all ) . The tots are crunchy perfection ! They have a perfect portion of meat , cheese, kimchi and of course a beautiful egg sunny side up to complete the dish! The drinks were also crafted to perfection ! Our host was happy to help / give great recommendations as well!

This was a nice and chill brewery with plenty of indoor and outdoor seating. I tried The Raven imperial stout, but it was a bit too sweet for me. They had plenty of beers to choose from, but as a stout drinker, I wish that they had more than one stout on the menu.

Pilot project has a couple of locations, all serving very good pub food and excellent beer. Beers run the gamut, style-wise, and every one hits. Staff seen seem happy to help guide selection if you need it, and flights are available. Enthusiastically recommend.

Awesome new spot in the lobby of the Hotel. At first glance the space seems tiny, but they have a huge patio and a lounge space in the basement as well. Service was on point and food delivered efficiently despite it being a game day. Beers were tasty and they have a great variety!

Great spot. Came to pass time with my pup on a hot Saturday afternoon. They quickly seated us on the patio (in the shade), and the chilled bottle water service hit the spot. Beers were good. Food was fine. The steak frites wasn't bad, but the lack of anything memorable about it and the questionable freshness of the steak will remind me not to order again on next visit. Service was friendly, prompt, and attentive.

This place has been a great addition to the neighborhood. Was excited to have a spot with local rotating craft beers in wrigley and was pleasantly surprised with how tasty the food is. The ahi tuna nachos, wings, and pierogis were great can't wait to try other items on the menu. The staff is super inviting and Stephen was an awesome bartender. They also have a swanky little cocktail lounge in the basement and nice patio.

You must check out the NEW Pilot Brewing in Wrigleyville. Incredible staff -just like the Logan Square peeps, and gigantic selection of carefully chosen brews. Rocking outdoor space and velvety cocktail lounge. Highly recommend!!

Super cool ambiance. The beers and food were both excellent. They have a full cocktail bar that i'm excited to try upon my return. Service was smooth and I loved my experience. I recommended the soup dumplings.
