Where to Drink at Waco’s Best Breweries and Bars | Eater Dallas

"This Czech-inspired brewery leans into the brewing legacy of Central Texas. It serves a variety of lagers along with pub food with Czech flair — think a variety of schnitzels, sourdough pretzels, and Czech fried cheese. It also offers one of the largest beer gardens in the area, on which one can also enjoy Czech beer and wine flights." - Courtney E. Smith

Czech-inspired brewery and restaurant with visible lager tanks and a one-of-a-kind beer spa. Lauded by local press for its cultural immersion—think schnitzel, pilsner, and copper soaking tubs—just steps from the Silos.

Overnight stay on our way to a more rural property. The check in process was quick and easy and we ordered room service from the Czech restaurant downstairs and it was delicious. The $5 room service charge was worth it.|My kids loved the aesthetic of the room. It was my second time staying, we would have loved another night.|We took the opportunity to walk to Magnolia after check in, and it was beautiful. Decorated for Christmas.|In the morning we walked to the river and explored that side. |A beautiful hotel in a beautiful location.

We recently hosted a work dinner at Pivovar, and it was an incredible experience! The food was absolutely delicious, and the staff went above and beyond to ensure everything was great. Everyone at the dinner stated how amazing the bartender was. A huge thank you to Morgan for being so professional and communicative in the planning stages. Highly recommend Pivovar for any occasion!

The pork shank here is simply the best dish I liked in Waco. They have good steak too. Not the best but definitely among the top ones in waco. The restaurant has a unique atmosphere for important days. Seems like rating here can only be made for the hotel tho.

Had a party of 11 for an after graduation lunch. Had reservations for later in the day but called to see if they were available to move up. They were extremely accommodating! Despite being a very busy day with a lot of visitors in town the atmosphere was calm and relaxed. The noise level in the restaurant was perfect, not echoey or overly loud. Now to the food- it was absolutely amazing!! Fresh, delicious, flavorful. We sampled bites from everyone’s plates and we loved everything! Service was also on point! Our waitress was so sweet and kept our glasses full and made sure we had everything we wanted. Our visit was perfect in every way!

Wow! Shelby, our waitress, provided excellent customer service. I can’t remember when I had such quality. Chloe, hotel staff, was just as awesome! Food was excellent, private tour was great, and everyone from the manager to the cooks outdid themselves! Thank you all for a great night out!!!! Can’t wait to come back for beer spa!

My wife and I dined here a few weeks ago, and unfortunately, our experience was dismal. Firstly, their heating system seems to be dysfunctional. It felt nearly 80 degrees. Second, about half of our food was NOT warm. Also, the craft, "authentic" beer wasn't remotely special or unique. I find it suspicious that an upscale restaurant like this has so many good reviews. Yes, the dishes at first glance seem novel and creative, but honestly, the flavor doesn't come anywhere close to what seems like an over-meticulous attention to presentation, and at the price point, this is very disappointing. It would not surprise me if the owner is paying for positive reviews. This sort of practice is getting more and more common. There are plenty of amazing restaurants in the area. Trust me, you're not missing out if you avoid this one. EDIT: OK, wow. So I hint that they may have paid for positive reviews, and the owner accuses mine of being automated because of lack of detail? How about you look at how many of your "5 star reviews" have barely any detail at all. Pathetic. Hate to break it to you, but your food is bad. And just how hard do you think it is in this day and age to set up a system for AI to sift through in order to make a review seem legitimate? Even manually, how hard do you think it is to set up 500 google accounts so someone like you can fake having a decent restaurant. What a joke.

If you want a great beer with awesome service stop by this place. The dark is one of the best beers I've had and Adrian behind the bar will take care of you. We will definitely be back. Thanks Adrian!!

Had Lunch and a Beer Spa at the Pivovar. For lunch i had the pocket schnitzel and a flight of brandy (the picture shows it labeled as whisky but they weren’t) and my wife had the sausage plate. Outstanding stuff. So fresh and delicious it was a great way to put myself in a food coma before my beer spa! Which also was an amazing experience.. It was so relaxing and unique. We drove all the way from San Antonio to do this and it was worth every penny. The dark beer is by far the best beer. Also, the girl whom worked the front desk was exceptional. We didn’t stay in the hotel but the whole area is very nice. Right across the rail road tracks from the hotel is Magnolia which is a historical area renovated by that HGTV couple i forget the name . Regardless it is really nicely done. Waco is a hidden gem.

Yelp
It is Mother's Day 2024 and they were super busy. We did not have reservations so they sat us at the bar. We had to ask for menus after 10 minutes. After we made our order, the service got better and we were served promptly, and the staff took good care of us. Thank you! We had 2 vouchers for a beer since we're staying at The Pivavar Hotel. The Vienna Lager was delicious. I had a glass of Malbec wine. The cheeseburger came with a soft pretzel bun and was very good. I had the Ancient Grains Salad with added Salmon. The Salmon was delicious. I didn't ask if it was wild caught or farm raised. They do not have GF or Vegan choices. It's a GF friendly but if you have Celiac, be aware they don't have options. Recommendation... the barstools should about 3 inches taller due to the bar height ..you sit lower in the barstools and your plate is just above your chin. (just my Engineer speaking) All in all, I would give this a 3.8 star because they did come through in the end. Thank you kindly.

Yelp
Beautiful place to have a dinner w coworkers, friends, family- the like. A coworker and I ate here, I made reservations online for a Thursday night, very easy and many options open. This is a restaurant below a hotel, the place is inviting, green leather booth seats, a bar as the focal point and the Texas and Czech flag ( I think!) hanging high on the wall. The menu is clearly labeled for what is gluten free and vegetarian. The wait staff was pleasant and on the ball with refills, questions we had and just the right amount of check ins. I ordered the sausage grill plate ( GF version) with a side salad, beer mustard was not GF. . The smoked ketchup is money! The sausages have just the right flavor and crackle on the outside. My meal came with sauerkraut, homemade, was delish. The side salad has a homemade dressing that was tasty and bursting with flavor. My coworker ordered the salmon and a side of mashed potatoes, he enjoyed both. I would certainly go back to this place when I am in town

Yelp
Review for the beer spa only What a fun unique experience.... 10/10 would recommend. I can honestly say my skin has never felt softer than after sitting in a warm beer bath for an hour. Everything was exceptionally clean and personalized to our request. I found this experience to be very romantic and relaxing.

Yelp
Excellent food, beer and service!! The food was superb! I had fish and chips and my husband had the jeager schnitzel.

Yelp
We were at magnolias and ran into this wonderful spot during a huge storm. We sat at the bar and had a wonderful bartender. He was working his butt off taking tables and helping us. The beer premium lager and Vienna lager were delicious. We had the fried cheese and it was to dies for. I love the different cheeses. Such a great idea. We had a blast here waiting out the storm!
google avatar

Yelp
Make your reservation online for your one hour beer spa experience. You'll select your beer type, add a cheese board if you like and choose your music which you can control with Alexia. Park in the hotel lot and check in for the spa at front desk; arrive early. A staff member will lead you upstairs and explain everything. The tubs, shower and room were very clean. It would be nice to dim the lights; not sure if that was an option. I really liked that I could control the temperature and level of the water. The herbal beer soak was great; for the beneficial effect of natural elements it is better to undergo the treatment without swimwear. You don't have to worry about feeling sticky, after the bath the brewers yeast will make your skin soft. Another reason to not wear a swimsuit The cheese board was delicious and plenty for two people. The beer was tasty; I wanted more. There's lots to do in Waco; definitely add this to your list!

Yelp
Enjoying my braised short rib made me realize I haven't had a good meal in a while! The Pivovar restaurant next to Magnolia Silio's was such a tasty suprise. I loved the open brewery silo decor, the leather aprons and menu selections. We had the schnitzel and short rib goulash, both are absolutely outstanding. We also ordered the kids pizza which I would have liked but it's not a typical kid winner with real tomato sauce and flatbread like crust. Location is across from the popular Magnolia shops, I saw some parking after I already paid to park across the street for $15 so be sure to scope out parking around the building before committing. My only pet peeve is pricing inconsistency, on the food menu prices are rounded to the nearest whole dollar, but then on the drink menu everything is $.99. I wish they rounded it to the nearest whole dollar like the food menu, it's much classier and would be in keeping with the ambience of the restaurant. Highly recommend for hearty food and beer.

Yelp
Pivovar is a great place with a good vibe. Was in town for the weekend with family. When we come in town to Waco, we always go to Geroge's. Well, they are closed on Sunday, so we were forced to find another place. So happy we did. The location is great and the parking was easy. Went for an early dinner. Super cool brewery style restaurant. We always try to eat local while out of town. This place was nice and had a lot of cool things to look at and a good selection of local brews. I had the fish and chips. The fish was cooked well and the fries (chips) were VERY good. I always ask for a side of ranch with my fries and they did not disappoint. I'm picky about ranch dressing. Don't like the "waxy" store bought ranch. This ranch was great. I ordered a margarita that was good and pretty strong. Wasn't served in a huge glass, but it was nice and strong. Would definitely order again. We also ordered a kids burger. Very juicy and a large portion. We would absolutely recommend Pivovar and will return.

Yelp
We visited Waco for the eclipse and ate here for lunch the Sunday before. The soft pretzel was delicious, the best we've ever had. My husband ordered the braised pork shank and it was so good, the meat falling off the bone. I got the three sausages with corn and sauerkraut. Each was very tasty. We'd highly recommend.
google avatar

Pedro F.

Yelp
The place looks very nice. The short ribs are super tender. The knowledge of the bartender was on point. But if you're thinking of eating at the bar, better go to a high table. The bar is too far to reach the plate. There's a big distance between the chair, food rest and bar. Other than that, I may come back.

Yelp
Great place for great bar service and drinks. Unfortunately, we've only been here for after dinner drinks one night and appetizers the next. Our bartender Adrian was very attentive and made great drinks and conversation both nights. They had a pretty good entertainer who played guitar and sang a few songs. The second night we came, we did end up ordering a few small appetizers and those too were delicious. We came by to checkout everything for my son's graduation celebration. They have a side room that is overpriced to reserve and the cost doesn't even go towards your food which I thought was odd. Most restaurants don't charge for a room rental knowing they will be providing the food. Nonetheless, I was able to make a reservation in hopes to utilize the room if it's available.

Yelp
The service was excellent!! Our server was very attentive and friendly. The chicken schnitzel was very flavorful and cooked perfectly. I loved the strawberry balsamic salad with grilled chicken and shrimp. It was very fresh, and my chicken was cooked perfectly. The shrimp was seasoned well. This restaurant is a must try!

Yelp
This place is better than great and so is the location. Walk in the door and you are immersed in Czech authenticity. The chef, head baker and brewmaster trained in The Czech Republic mastering their passions. The bar offers the largest Slivovitz selection in the U. S. (plum, apricot, gold, silver, honey and pear). Please try the Slivovitz flights and check out the authentic Czech glassware. Pivovar also offers four Czech wines for your dining and drinking pleasure. The Pivovar highlight, however, is the assortment of cold, delicious, fragrant Czech beer. Try train shots each time a train storms by on the Katy Railway. All of the furniture is handmade with the highest quality materials by a Czech furniture maker in the Czech style. As you walk through the restaurant, bakery and brewery you see displays of Czechoslovakian glasswares. They are beautiful and waiting to be authentic keepsake to pass down from generation to generation. I am kicking myself for not bringing home the tall, dark vase that would be perfect for long stem roses. The property has a spacious outdoor beer garden for enjoying your favorite brew with your favorite friends. Have you ever heard of a beer spa?!?!?!? Well, you can experience that here too. Book a stay at the luxurious hotel appointed with the finest Czech furniture and bedding then treat yourself to this one of a kind pleasure. When you stay at this top-notch hotel you feel immersed in the European brewery scene. As you walk down the hall, you overlook the working brewery. On some days, your senses take over and you are enveloped in hops and barley. The front of the house is gracious and welcoming. If you are lucky enough to live in the area, we'll, I'm jealous. If your visiting from afar, make Pivovar a priority. It is a place to be remembered and revisited. You will love this place and will not be disappointed. I wish I could come with you. Tell Steven that Joanne sent you.

Yelp
Fun atmosphere and great customer service. Czech style food, but fits well in Texas. Variety of beers depending on your preference that you can choose from, or a flight. Seems they brew the beer there, and with the Czech style. Live music some nights on stage, makes for a loud, but fun dinner. They were giving out pastry samples so we could try before we bought, glad they offered that. I tried a Pivovar Sausage. It had some heat to it, and there were a variety of mustards to go with it. Cabbage was a Czech take on sauerkraut, went nice with the sausage. Family tried the linguini alfredo which was VERY rich, and could have been shared. It was a little more runny than you might find elsewhere, and very rich and creamy. Stuffed peppers were simple and nice. They did care that we had a good time and got good service, which was a nice touch. Can't speak to the hotel, but definitely recommend the restaurant.

Mariah S.

Yelp
Had the pork shank and shared the pretzel and they were both AMAZING! First time having Czech food and it did not disappoint. Would highly recommend
google avatar

Lacey R.

Yelp
Beer spa was fun and a unique, relaxing experience. You can play any music you want, get a flight of beer, wine or whiskey. Went here on an anniversary weekend and definitely recommend. (I would skip the charcuterie if I went back, a lot of similar, indecipherable sausage.)

Yelp
We visited Waco for a graduation and finding a place to eat was challenging. This was one of our top choices and we were able to get a table reservation. Being a foodie from NYC and also from Europe I thought this place will impress. Well....... The restaurant is very cool, a typical brewery where you see the production in the back. Large silver kegs lining the wall behind a glass. Nice solid wood tables nice large almost matching Chech and TX flags on the wall. Our waiter was very friendly, but took a bit long to take our orders. The onion rings were good, so was the fried cheese. My friend ordered a salad and three people ordered the filet mignon which they didn't complain about. I ordered the Braised Short Rib Goulash, Buttermilk Mashed Potato, Sour Cream, & Lemon Zest and it was delicious. I took one start off due to my disappointment with the portion size, basically the amount of meat I was given. I left dissatisfied. There should have been more meat on my plate at this price point.
google avatar

Joshua H.

Yelp
Stunning hotel thoroughly decked out in Czech style from hand made, crafted wood work to blown glass vases and porcelain pots all over. Spectacular onsite restaurant, brewery and beer garden. The beer spa is something all of its own. Pricy but you gotta do it! Couples can go for an hour and get a beer or wine flight or a tasty charcuterie board to share also. We loved this spa experience. The staff are top notch professional. The food is delicious. The beer we did not care for much but we aren't beer folks at all either. The Czech wine flight I got was very good! The location of the hotel is walking distance to everything downtown so no need to drive at all really if you stay here.

Yelp
Hotel/restaurant/Biergarten...all in one place! Oh, and it's located right next door to the Magnolia Silos and a short walk away from the Dr. Pepper Museum, Union Hall and the Convention Center. The hotel is so cute and quaint. It's beautifully decorated, comfortable and clean. The hospitality is on point too...everyone was friendly and helpful. Plus we were given 2 free beer vouchers upon checkin and free breakfast vouchers for the restaurant. The European charm is felt through the entire place. Big kudos to the design team who worked on this...bravo! The restaurant is so good. We had breakfast, lunch and dinner there. Hearty portions and so damn tasty! Here are the standouts of food for us: breakfast Benedict schnitzel (omg!), the French fries, the brussel sprouts, the pivo peppers (omg!), and charcuterie board (heartily sized!). The cocktails, wine and beer flights were also good! We didn't get to try the pork shank but it looked good. The Biergarten is a beautiful space in the back. It's covered with some beautifully made tables that are good for groups. We went on a weekend and there was live music. All in all, we had a great experience. Give it a try! I hope you like it as much as we did.

Yelp
My wife and I decided to try Pivovar restaurant on a whim for a random lunch date, not knowing exactly what to expect from a Czech place but having heard good things. I'm happy to report that this place delivers. The atmosphere was cool and interesting, with good service - it could've been slightly quicker but we were there at an off-peak time, so it's understandable that they weren't 100% on their toes and it still wasn't bad. All the food was delicious, from the schnitzel and pork shank to the appetizers and the creme brulee cheesecake. I also tried the Czech beer flight to sample their in-house brewing, and there wasn't a bad option in the bunch. Would recommend any/all of Pivovar's offerings to anyone interested.

Yelp
My wife and daughter spent a weekend at the Pivovar Hotel and already can't wait to go back! There is so much to do at the hotel alone they feel there wasn't enough hours in the day. Onsite they have a restaurant, beer spa, bakery, beer garden, and brewery. All within the hotel. Not only that, but it overlooks the magnolia silos and is walking distance (just a couple of steps). They have great parking behind the hotel and the staff was incredibly kind. The room itself is unlike anything they have ever stayed in. With these gorgeous bathrooms that have live edge counter tops, stone sinks, and hand carved mirrors to comfortable beds and beautiful decor. The rooms are spacious and have coffee, fridge, and tv with netflix (always a huge bonus in my book). The restaurant food was delicious (they ordered the charcuterie board and alfredo pasta highly recommend) and the beer garden live music was such a fun way for them to end their nights. The hotel is right on the train tracks but it wasn't an issue. The only train noise was during the day and not while they were sleeping so don't let that deter you. They said 3 nights and not once was it even a though or issue. When we go back as a family, this will be our go to hotel!
google avatar

Tammy M.

Yelp
The hotel was beautiful, staff was kind and accommodating, and the proximity to the Silos was unmatched! This is completely out of their control so I won't let it contribute to their rating but for anyone who stays please be aware there is a train that passes by frequently and is very loud. This didn't bother us much as we were two moms doing a 1 night trip to enjoy spring at the silos event. I could see it being a problem with someone who might bring a baby or young child who would hear the train roll by at 5am with a loud horn and decide not to sleep after.
google avatar

Kyle M.

Yelp
Worst hotel stay of my life. Here is why. They barely will even staff the front desk. We show up at check in and we have to call for help. Parking lot is tiny and rambling mentally I'll homeless people outside. You hear EVERYTHING. Everything set down on a table, dropped, door closed. Everything. The connected bar is loud and clear in your room. Drunk crowds coming in super loud at 1 am. Connected bar employees car alarms going off for 5 minutes outside of guest windows at 1:30am (yes, I watched you). Loud train rolls through at 2:10 in the morning along with the second round of drunks. You will hear loud noises every few minutes through your entire stay. It is awful. Not to mention the mattress is extremely cheap and stiff. You may break your hips if you sleep on your side. If you plan on being out drunk at 2am this place may work for you. Otherwise, avoid.
google avatar

Susan H.

Yelp
Such a beautifully renovated hotel. Restaurant was closed because we stayed on a Monday night. However, lost power so no tv or phones charging all night. No coffee in the morning and barely got an apology. Not liking the room number written on the car tag with dates. Safety issue there. Maybe working out the quirks, who knows.

Yelp
We had an amazing stay and dinner at Pivovar during our one day in Waco! Hotel: This is a beautiful decorated boutique hotel with Czech themes everywhere. We got a deal on a room but a normal night is a bit pricey. The room was huge and included a copper tub. Both people we interacted with in the lobby were very helpful and friendly. There is preferred free parking for guests which was very helpful. There is also a beer spa which is a very unique option, we didn't have time to try. Restaurant and brewery: We had dinner at Pivovar after making reservations when we checked in. We were there on a Wed night so it wasn't too crowded but enough people to not feel empty. We got the fried cheese as an app 9/10. My husband got the ribeye which he said was very good 10/10 and the light Pilsner 8/10. I got a cocktail that was delicious 9/10 and the schnitzel also 9/10. Our waitress Melina (I think) was very friendly, attentive and helpful. After dinner we had a drink at the bar before going back to the room. Overall great experience - and a great place to stay or visit in Waco.

Edward Y.

Yelp
Had the Czech schnitzel and it was perfect. Crispy crust and hot inside. Our party ordered the brussel sprouts and broccoli appetizers and they were also quite tasty. Missed out on the local brews as I was the designated driver. My loss as everyone loved their beer choices.

JP N.

Yelp
Wow - to addition to the poor experience, even their beer is busted. I bought a six-pack of cans to go. I went to my fridge tonight to get one.... And they are all flat. No pressure and about 2/3 empty. Apparently the seal on the can didn't hold. This happened before! They can't even run the canning machine!

Mike A.

Yelp
We ate mid afternoon for an early dinner. Started at the bar for a beer flight, then moved to a table for dinner. Our bartender/ food server was awesome! Adrian V. Was very helpful with our beer/food service. He was also very knowledgeable about the area, and the hotel. The restaurant itself was great and with the garage doors open it felt really open. The schnitzel was awesome along with everything else. We will definitely be going back. We were visiting the Magnolia district, and the Pivovar is right next door. From the looks of it the hotel would be nice to stay at also. I would like to say again thanks to Arian for an amazing experience and great conversation! Good luck with the rest of your schooling! Mike A.

Yelp
Beautiful hotel. Clean, great restaurant attached and walking distance to Magnolia. Friendly staff. Really enjoyed our stay minus the beds which were extremely hard.
google avatar

Mike S.

Yelp
The beer here is great, and they had six different options on the menu. They also have a full bar and great bartenders that are highly focused on service. The food is good, but lacks a little spice. We really loved the schnitzel with mustard. They have house-made sausage that is also very good. We went again for breakfast and liked that even more. The omelettes are large and fluffy and the schnitzel Benedict is excellent.
google avatar

Dave B.

Yelp
A very cool Czech style restaurant with open views to the on-site brewery, and plenty of large tables for enjoying a great meal with plenty of friends. The food was outstanding. I strongly recommend the braised pork shank for a plate that is visually stunning and tastes amazing.
google avatar

Sara S.

Yelp
I want to love this place I really do! But the service here is always lacking! The food tastes great, the beer is pretty good but not amazing, but the drinks food and atmosphere is why I keep giving them a try. We were sat in the bartenders section though and in a Thursday at 7pm that's just not fair to him. How can he make drinks for the whole place AND serve tables? We enjoyed it, there were just some things we needed and he was busy. I'm sure I'll come back because I'm a Czech girl and I'll keep trying it out.

Yelp
Highly recommend this hotel - due to the high points of cleanliness, friendly staff, accommodating staff, free breakfast at their restaurant, free beer voucher at their restaurant (good mug size), walking distance from magnolia silos and other kid friendly establishments, and water machine to be able to fill your own water bottle. Is this hotel pricey!? Yes, but if you are able to stay during the weekday and no other events happening during your stay then you can get the rooms and suites for a more affordable price. The lobby area is small especially if you have a stroller but everyone was so friendly to make room for us to pass. The restaurant cannot be accessed from the hotel but not a problem because it literally is like a 10 second walk to the entrance from the hotel. We stayed in a suite (not sure if it has a specific name) but it was a great setup for us and our 2 kids. 2 separate rooms with there own doors joined by a common foyer area. Parking is pretty accessible. They have a few spaces along the wall of the hotel at an extra cost but the open self parking lot isn't far and just right behind the hotel. If you need to park in the self lot then they do have 2 designated spots by the entrance specifically for check in/check out and unloading. We had an amazing experience here and would absolutely stay again.

Yelp
Our last meal in Waco for Father's Day! We were greeted and seated quickly. We were able to have a choice as it was Sunday last hour before closing. Go early to enjoy a drink prior to meal! I enjoy the ambiance it is low lights and nice soothing seating. Our choice is booth with cushion to your back. When we go with children away from crowds. Our children love schnitzel and ask for gravy making it ideal for dipping and enjoy the taste. The children's menu is generous in serving size. I enjoyed a Ruben sandwich! It is always delicious no matter what your selection. I have to say the schnitzel is our favorite! Request an order of some bread and butter prior to meal. You will enjoy this place. It has a hotel attached and in the back is outdoor seating. Close to magnolia. Enjoy and taste some unique selections. You can reserve your seating ahead of time.

Yelp
Went for the name, recalling good Pivo (beer) in Croatia; but will return for the food (outstanding). We tried some Czech-style food but were equally impressed with the Salmon and vegetable sides. Was happy to have Weller 12 here at a reasonable price per pour (at least compared to the Mid-west.
google avatar

Sam R.

Yelp
Pivovar had ample seating without any reservations, which was nice because it gets pretty crowded in this area. The food was very lackluster though. I got the blackened catfish with asparagus risotto. Everything in the order was extremely salty. My brother got the linguine Alfredo, which was fine, but felt like something anyone could whip up at home. The Brussels sprouts were much to sweet (and wet? Like dripping with syrup). There was live music which was nice, but I wouldn't come back here for the food.

Yelp
Waco five stars. Get the beer flight. Get the goulash. You will not be disappointed. This place is authentic Czech, and they authentically source their ingredients. Their beer master has a doctorate in beer. Such a beautiful environment with classic carved wood and green top grain leather-- look very Bavarian! This place is classy Waco! Bring your friends or go for a special vacation. Owners take a lot of pride in this place.

Yelp
I booked a stay for Saturday Aug, 19, 2023 to celebrate my husband's upcoming 50th birthday. If you're celebrating an important event or looking for a romantic getaway, the hotel is worth the splurge. Dubbed "A Czech Inspired Luxury Experience", our experience exceeded our expectations. This is a brewery, hotel and restaurant all in one. When we first arrived, we were not sure if we were supposed to park in the Premium Parking lot adjacent to the hotel. However, upon check-in, we were quickly assured that this parking is included in our stay and I was handed a hotel parking pass to place on the dash of my vehicle. Karen took the time to check us in and go over our welcome package. We had a beer spa appointment later in the day and she confirmed that she would come up to our room to escort us to the beer spa. We had some time before our appointment and we settled into our well appointed room. The room type that I booked ("The Weary Traveler - King") has a copper tub instead of a shower. The bathroom also features two copper sinks and a separate bidet. After passing the entryway, there is beautiful desk and plenty of seating. There is a luggage rack as well as an area at the foot of the bed to accommodate your luggage. By the TV area, there is a bottle of complimentary water and a Keurig machine. Underneath, there is a refrigerator containing items for purchase as well as creamer for your coffee (and you can certainly use the refrigerator to store your own beverages). The is an RO water cooler and ice machine by the elevator where you can refill your glass water bottle. After inspecting our room, we took a very short walk across the train tracks to The Silos. There is a train that runs through the area, but we did not hear any train go by in the evening. After that, we headed to our back to our room and Karen escorted us to our beer spa, which was a few doors down from our room on the same floor (very convenient!). It is a private room containing two copper tubs full of beer and beer soap (this experience costs $200 whether for a single person or a couple). We were given a little over an hour to soak and enjoyed a beer flight. It is recommended that you rinse in the shower after your soak. We ended the night cashing in our free beer coupons that we received in our welcome package. The beer comes in these very large (17 oz) glass steins. All of their beer is delicious; very light and easy to drink! For dinner, we had the Czexan Schnitzel (I don't think that the Pivovar Sauce went well with this dish) and the Pork Shank (I'm not that was worth the $30). The restaurant was relatively busy and there was live music. My husband went to bed, relaxed and elated to be sleeping on top of a brewery. It was truly a wonderful experience and stay.

Yelp
Place looks great but that's about it. Terrible service & small portions all around, food was dry & looked old. Not worth the fine dining price. Magnolia is a much better choice .

Yelp
My new favorite restaurant in Waco! Absolutely delicious food. Great service. Terrific ambiance and entertainment. We had the schnitzel, filet and fish and chips. All were delicious. Beer was good too. Two thumbs up!

Yelp
We chose this place to celebrate our daughter's birthday. We had six people and were seated quickly, and we were greeted by a very friendly staff. For dinner, we ordered six different meals and each one was fabulous! The pork knuckle was incredibly tasty, the goulash fantastic, and the schnitzel was out of this world!. For dessert we especially loved the Brulé cheesecake. I highly recommend this place! It's so nice to have a great restaurant like this in Waco!

Yelp
Friendly service knowledgeable about the menu. Area is very well lit by large windows that allow the sunlight to shine on you without the heat.

Yelp
My wife and I stayed at this place for one night just because it was so close to the silos. After we checked in and got into our room, the room was very large and roomy. The reason why we gave this only three stars is cause the bed was like laying on a brick super hard just have been an extra firm bed. The other reason is in the morning around 9 o'clock we had 3 maids just to get in our room even though we had a privacy card on our door. They were trying everything to get in. I called the front desk and told the lady there that three maids were using there key card to get in our room. I told them that we were in the room but they kept trying. Then I went out there and was like can I help you I'm trying to sleep and your kicking down my door. They finally realized they were in the wrong room. Talked about being pissed off.

Yelp
*Beer only review* We stopped by mainly for beer because it seemed like they require reservations for dinner - boo! Their cocktails look amazing especially the margarita. Everyone was getting the margs! But the beer was pretty good. It's mainly Czech style lagers. I'd recommend getting the flight to get more of the experience.

Yelp
We're staying at the hotel, so we decided to eat an early dinner here before our evening activity. Wow! Excellent service, excellent food, excellent ambience, excellent beer. Beer: I had the dark and Husbeast had the Vienna. Both were good, but the dark was VERY good. Food: Apps were the fried cheese and the stuffed peppers. Both were super delicious! Dinner was the goulash, the schnitzel, and the catfish. All three were delicious! The goulash was a-freaking-mazing. 10/10, must eat. The Teenager had to have the chocolate mousse for dessert, and it was also very good. I don't know how she managed to fit it in her small body after the generous portion sizes of dinner, but she was determined I guess. Highly recommend giving this place a visit!

Yelp
Charred lemon? Hmm I had the schnitzel listed in menu as being served with charred lemon, buttermilk mashed potatoes and parsley. The schnitzel itself was good, nice crunchy though the meat, I think it was chicken not identified on the menu, was dry. For the amount of schnitzel the serving of potatoes was very small, and the charred lemon was right out of the icebox. I'm a bit of a stickler for getting what the menu says so this was very disappointing. This restaurant goes overboard on so many details (don't get me started on the menu itself, it's crazy the amount of $ they must cost) the fact they overlook this detail is kinda shocking.
