Love, love, love this concept. Basically, it's a build your own ice cream sandwich place. Or, in my opinion, an example of total genius.
You walk in and are greeted with a wall of cookies about the size of the palm of your hand, of which you can pick two different flavors for your top and bottom halves. I went with a classic white chocolate macadamia nut and some sort of cappuccino/chocolate cookies as my base. The ice cream flavors are your classic Blue Bell options, from which I went with a chocolate peanut butter ice cream. In seconds, my perfectly portioned, custom ice cream sandwich was presented to me in a cute little bag. For just under $4, this is a reasonable treat. Also have to give a shout out to the super friendly cashier manning the place the day I was working. He was so cheerful and made my visit extra pleasant.
I agree with some of the other reviewers that the cookies were just a touch underwhelming. It looks like they've fixed their cookie over-crunchiness issues, as the cookies were just perfectly pliable to serve as an ice cream sandwich base upon my visit. However, the flavor was just slightly industrial rather than homemade, reminding me of those Pepperidge Farm giant chocolate chunk cookies. This isn't necessarily a bad thing (I love me some Pepperidge Farm), but if the cookie quality was stepped up ever so slightly, this would be an easy five star review. Maybe they could look at outsourcing the cookies from nearby Village Baking Company? Now *that* combo would be an easy five star treat!
