So, what's fun about this place is that they're whole animal butchers, which means that instead of operating from mass butchered box meats, they do it themselves and knock things down. You can tell since they have limited amounts of certain cuts, owing to the fact that there are only so many of certain things on each animal, such as an ox tail. This takes a level of knowledge and skill and craft that's been pushed out of the industry over time. It also makes for a wider and more interesting set of cuts, and some new ones to experiment with. We got some great looking soup bones from them the other day and my wife really liked the vibe in there and that it's a women owned and run operation where they really know their stuff. The right kind of butcher shop to find and enjoy. When my mom lived in Boston in the 60's she used to go to Julia Childs' butcher, and she learned a lot from him. This place may have a similar energy to it.
