"The chef is planning a tricolor salad with ranchovy dressing, pork terrine with pickles, ricotta gnocchi, fettuccine with mushrooms, brandade agnolotti, and rigatoni with Fiorella sausage ragu — that last one uses a sausage recipe from Dan and Trisha Fiorella, who owned the Bella Vista butcher shop Vetri bought for his upcoming restaurant. As for why Vetri is giving a sneak peek at Fiorella in another butcher shop: He became a partner in Heather Marold Thomason’s Primal Supply Meats last year." - Rachel Vigoda

Primal delivers an amazing product, and does a decent job following up on orders and mistakes. However, more than 50% of promised deliveries get turned into pickup orders, “fresh” items in orders show up frozen, and sale items offered online are not available for pickup (or at the same price) even at their main butchery. All this means is that they come highly recommended with a big asterisk.

So, what's fun about this place is that they're whole animal butchers, which means that instead of operating from mass butchered box meats, they do it themselves and knock things down. You can tell since they have limited amounts of certain cuts, owing to the fact that there are only so many of certain things on each animal, such as an ox tail. This takes a level of knowledge and skill and craft that's been pushed out of the industry over time. It also makes for a wider and more interesting set of cuts, and some new ones to experiment with. We got some great looking soup bones from them the other day and my wife really liked the vibe in there and that it's a women owned and run operation where they really know their stuff. The right kind of butcher shop to find and enjoy. When my mom lived in Boston in the 60's she used to go to Julia Childs' butcher, and she learned a lot from him. This place may have a similar energy to it.

Their cuts of meat are usually pretty good, but anything requiring seasoning like sausages or cured meats are sub par.

Everything is great from Primal Supply. But I especially can’t get over the lamb belly ribs.. some of the tastiest meat I’ve ever cooked.

Such a warm and friendly environment and the meets are impeccable! They also host some great events featuring local breweries and provisions!

My first time there, it's clean and I was able to purchase my pig's head both cleaned and cut up into 4ths.

Excellent ham hock for my soup. I’ll be back to try every other cut I can!

Just a truck driver that delivered insulation next to this place. Looks really nice and clean!

Yelp
Primal Supply came through big late last week when we were in need of some fresh groceries for the weekend. My husband placed an order and everything was delivered to our front door! Throughout the weekend we enjoyed fresh wild black bass, sausage, pasta, breads and more. We've significantly cut back on eating meat in our home so, when we do have it, we want to know that it is responsibly sourced and high-quality. Happy to support this woman-owned business and will definitely continue to do so for all of our prepared-at-home meats and seafoods!

Yelp
Just left a dinner here and couldn't recommend doing one of their chef dinners more! Chef Matt Buehler of Vetri put together a menu that was amazingly unique, that left you fuller than full -- and yet somehow wishing the meal wasn't over. Sitting down with people that love food and Philly as much as we do would have been the highlight, but Heather's welcoming and witty comments combined with an appearance from Marc Vetri had us feeling elated (can't blame these feelings purely on the tonka beans). As Marie Kondo says, if it sparks joy, keep doing it. We will be back - to raid the Primal Supply fridges (I need that ragu) and of course for another Primal Philly Chef mash-up. If you don't know, now you know.
