Prime 16 is a gourmet burger and craft beer bar that opened in New Haven, Connecticut in April 2008. It was founded by restaurateur Robert Potter, who had also founded c.o. jones and the New Haven Meatball House (both have since closed). Although New Haven is often thought of as the 'Pizza Capital of the World', it is also the birthplace of the hamburger. Louis Lassen claimed to have invented the hamburger at his eatery, Louis' Lunch, in 1900. Today at Louis' Lunch, the only toppings available are cheese, onion, and sliced tomato (no ketchup; don't even ask!) Potter decided to open a hamburger restaurant that was the polar opposite: a burger place with all kinds of toppings and sauces. Prime 16 is "scratch" kitchen where all the sauces are made in-house with fresh ingredients. Not only do they offer ketchup, but take it to the extreme with smoked ketchup. In addition to their signature burgers, Prime 16 also makes various sandwiches, salads, wings, pomme frites, and various bar bites. In addition to their food, Prime 16 also boasts one of the best craft beer selections in New Haven, as well as an impressive list of spirits and cocktails. A second location opened in Orange in 2013 and a third opened up in Pelham, New York in 2015.
I've been going to Prime 16 for at least a decade. It's easily one of my favorite craft beer bars in New Haven and I have attended many tap takeovers there. I recently stopped in for lunch when I had a half day at work. I looked over their impressive draught list and decided to order "O.J. On Parole": a hazy IPA by Lock City Brewing in Stamford. It had nice citrusy hints from the Citra and Mosaic hops with a slight malty finish. For food, I ordered my go-to: "The Smoker" with a side of Truffle Parmesan Fries. This burger is topped with smoked gouda cheese, applewood bacon, sautéed onions, mushrooms, butterleaf lettuce, and tomato on a brioche bun. I rarely order a different burger; it's one of the best I've ever had! After finishing my beer, I decided to order another. This time I had "Sapphire Unicorn": a Double IPA by Lone Pine Brewing in Portland, Maine. It was super hoppy with hints of an orange creamsicle. Along with Louis' Lunch and Contois Tavern, Prime 16 completes a trifecta that shows the world that New Haven makes fine burgers in addition to pizza.
