"Barista Katie Prinsen opened the first Prince Coffee in a tucked-away corner of Kenton, but she didn’t stay hidden for long: While that original location has disappeared, Prince Coffee’s reputation has grown. Prinsen worked in the specialty coffee world for years, from judging barista competitions to managing cafes; now that she has her own brand, she consistently changes the cafe’s roasts to highlight her current favorites. Here you will find coffee from Proud Mary and Heart, with rotating guest roasters such as Sey or Camber. For many years Prince was known for its caramel-sandwiched stroopwafels, but the Dutch influence on the menu these days comes in the form of stroop and speculaas lattes." - Levi Rogers
"A selection of breakfast sandwiches is available to start your day at owner Katie Prinsen’s beautiful Beaumont location of Prince Coffee. Enjoy specialty lattes made with buttery caramel or star anise syrup, mochas with Cloudforest chocolate, or kombucha on tap in this Dutch-inspired space. Once the workday is done, the cafe offers rotating wines with a focus on female winemakers." - Nick Woo, Janey Wong

"Prince Coffee is one of Portland’s last multi-roaster cafes, meaning it does not roast its own beans but instead offers a selection of rotating roasters throughout the year. In this Scandinavian-inspired cafe, visitors find coffee from New York, Denmark, or Denver along with Portland mainstays like Proud Mary. The shop has pivoted from coffee and stroopwafels, to specialty coffee and natural wine. Owner Katie Prinsen focuses the wine program on wines made by women. The pastries are from the James Beard-nominated local bakery, Bakeshop, which focuses on whole grains."
"While Beaumont’s Prince may be known mostly for its stroopwafels, the hot chocolate here is an excellent companion for them. Chocolate drinks here use single-origin chocolate from local chocolatier Cloudforest, which used to have their own cafe in Southeast Portland (R.I.P.). The flavor, then, is rich and dark, with exceptional nuance that comes from meticulous sourcing. Cloudforest is famous for its colorful variety of square chocolate bars, which can be purchased at Prince as well. Prince is open for to-go orders every day from 7 a.m. to 4 p.m." - Seiji Nanbu
