Wow! I think I have a new favorite cart at the Mercado! I ate Principe Maya's food for lunch for the first time today and was very impressed with the delicious flavors of the food. The polcan had such unique flavors with very aromatic corn flavors complimented by the epazote, lima beans and cabbage inside, topped by a hot but tasty habanero salsa...oooh, this was so good! The panuchos also were stellar; the cochinita was tender and nicely seasoned, and with the corn tortilla stuffed with black beans, how can you go wrong?? Go there now, eat delicious food from the Yucatan. You can thank me later.

As a amazon delivery driver this was a well made and filling meal, and very affordable. As a culinary student the food is very savory and will have you wanting more 😋, looking forward to returning if I'm close by.

Fantastic food with unique and engaging flavors. We tried three different items from the menu, and all three were high quality and delicious. I recommend the Cochinita Pibil. Be sure to pair it their habanero salsa.

Tierra del Sol two carts down attracts the lines, but Principe is my favorite cart in the awesome Mercado. First, know this is Yucatan-style Mexican food, the menu is very different than what you see at traditional Mexican food carts and restaurants. That said, you're in for a treat if you haven't experienced dishes from the region. If you have, the popular Salbutes and Panuchos are excellent, and they have Cochinita Pibil. Venture a bit by opting for the lesser known dishes such as Huevos Motulenos, which perfectly hits the spot for brunch. The Kibis were so good, less dense than their Middle Eastern cousin. The Habenero sauce that comes with most dishes is hot. Service speed was about average for the Mercado.

Great food cart. Currently located at Comcast plaza. An amazing collection of Central & South American food carts and market. Oaxaca, Colombian, Venezuelan, Cuban and Mayan menus. The subtle differences are worth the trip. I had the Mayan torta with cocinita pibil. It was great!

This Mayan food is fantastic, can't believe I'm the first reviewer. Complex flavors, slow-cooked meats, vegetarian options. I had chicken and cochinita panuchos and Relleno Negro salbutes. All were excellent; the relleno negro was particularly unique and delicious. Service was fast and friendly and prices reasonable.

The panuchos are amazing! I especially love the cochinita pibil (slow roasted pork in a delicious sauce). I tried their food for the first time a few days ago and have gone back every day since ! It's so good, do yourself a favor and come eat here!

The quality of the food at Principe Maya is 10/10! It's like I'm eating at a fancy restaurant. So fresh, so delicious! So many new flavors and dishes to try and they're all amazing!
