"Fredericksburg food truck Prometheus Pizza is opening a new restaurant in the same Hill Country city next year. The new physical Prometheus Pizza will be found at 108 South Lincoln Street, Suite 300 in Frederickburg’s downtown area starting sometime in the spring of 2024. Prometheus’s food truck — currently parked at 1180 US 87 South — is run by co-owners, co-founders, and couple Christopher Stephens and Rachel Collins Stephens. They serve up red and white wood-fired Neapolitan-New York-style pizza, made using flour from Barton Springs Mill. There are fun pies with punny names like the Breakfast of Champions, topped with boar chorizo, potatoes, and cured egg yolks; the Hestia Goes to Hawaii with pineapple, pancetta, and pickled jalapenos; and the CALL: 1-800-420-SHRM with shiitake mushrooms, a dehydrated mushroom dust, and pecan-pesto cream. Then there are salads like a Caesar, snacks like marinated olives, and desserts like brownies, peanut butter and jelly cookies, and lemon buckwheat tarts. The forthcoming physical restaurant will expand its menu sandwiches (with hot and cold options), house-made pastas, and other entrees. Prometheus pizza is served from a food truck and they have a cute little seating area with picnic tables and lights. The pizzas are kind of small and the site says it’s a medium size (12”). We ordered a pepperoni pizza and a margarita pizza and they were pretty good. My wife and her friends loved the pizza when they came a couple of months ago. On this trip, it was just OK. The flour/crust has an interesting flavor to it, and I can’t put my finger on what it is. It was good, but not great for me. Overall, the staff is nice and the location is off of Main Street, but nice because it’s not that busy and you can sit down and relax some trees. Overall a thumbs up and a recommendation.

I decided to try Prometheus Pizza Food Truck after seeing some great reviews, but it didn’t quite live up to the expectations. The pizzas were small (around 12” or less) with a very thin crust that was overcooked and quite crunchy- borderline burnt. We ordered two Margherita pizzas, but were told they only had enough basil for one. No discount or substitution was offered, which felt a bit off, especially given the very limited vegetarian options. At nearly $20 per pizza, it felt overpriced for the portion and quality. While the flavor was decent, the overall experience left a lot to be desired.

Really good Neapolitan style pizza. These 12inch pizzas are elevated with ingredients and bake. If you like medium to thinner crust and well done under side the pizza is great. The pepperoni and cheese are great classic choices just be aware the pepperoni is highly greasy. Enjoy!

I would like to say I am a very well traveled person, and after going to Italy and trying their iconic wood fired pizzas...I must say Prometheus is the closest (and may I add equal and above level) of a traditional Italian pizza. The flavors of the pizza, melded perfectly with their perfect crispy dough recipe. After speaking with the chef, you get to understand how each ingredient was studied and picked to be the finest, and that is what quality you taste when you bite into it. From the five pizzas I ordered each one exceeded expectations, and kept you wanting more. I am glad to say I visited this pizza place and encourage anyone reading my review to visit as well, because not much other places compare to the authenticity that was found here.

5 star atmosphere, and service, for a food truck. Couldn't have been better, IMO. We only had one pepperoni pizza, and while it was good, the amount of curl/cup style pepperoni was too much for us. The result was a little too much grease, salt, and well, pepperoni flavor. Crust, sauce, and amount of cheese was perfect. It actually hurts a bit to ding them a star because I'm sure that heavy pepperoni style is exactly what somebody else may prefer.

Update: After leaving the original 2 star review below (and contacting Prometheus Pizza via email), I received an immediate response from the manager/owner, expressing his apologies, and wanting to correct the situation. He offered us a refund, but more importantly noted that he would address the issue with his employees so as to prevent this from happening with future customers. Mistakes happen, especially when employees aren't trained properly or paying attention. It happens. What's important is to have a leader/ manager who will make it right. I appreciate his prompt reply and his sincere effort to make his customers happy. Original review: Flavor, seasonings were good. We ordered the margarita pizza and another one with pepperoni. We like the crisp, cracker like crust they have versus thicker pizza crusts . However, one of the pizzas was burnt (totally black) all along the top edges and the bottom. We picked up the pizza after a long day on the road and were famished. Unfortunately, we could only eat a couple slices of it. We plan to talk with management so that they can make adjustments to cooking times.

Great pizza and great service! We got the 'Zhazilla 2 nights in a row and the Roxanne on the second night as well. Also the Ceasar Salad was one of the best we've had in a while, I think they use real anchovies. Order online ahead of time to skip the wait. They do get busy during peak hours. The owner is so nice, I accidentally broke a giant glass bottle of hand sanitizer and they just smiled and said it's ok. I felt terrible and hope this review makes up for my folly.

Great pizza and convenient location to Main St in Fredricksburg. We ordered two pizzas for pick up and they were ready on time, as quoted. We tried the potato pizza (without olives) and the pepperoni. The pepperoni was a little greasy, but overall great! The potato pizza was generously topped with potatoes and had the perfect proportion of cheese to potato. You can see some onions and sausage on our pepperoni pizza. Prometheus Pizza is tucked behind Fredericksburg's busy Main Street with convenient parking right outside. Upon walking in the minimalist ambiance speaks to the focus they take on their food. We ordered the bruschetta app and enjoyed their take with soft bread bits tossed with bruschetta. The flavor of the olive oil, spices and vinegar made the app a winner. For entrees we ordered the mushroom pizza and steak frites. The steak was cooked to perfection and accompanied with three different suave options pesto, aioli and a jous. The fries were crisp and paired well with the aioli. The pizza was a winner. Visually I hesitated as their pizza crust has a bit of a wheat tone and the pesto was thick but with the first bite it all went away. This pizza is big enough to share between 2-3 people especially if you get an appetizer. We were to full to try dessert but look forward to trying the next time we visit.

Small brick and mortar location with indoor-outdoor seating at this new location. When we called they lacked information regarding hours/operation and address. Ordered two pizzas, both had an awesome crispy crust, topping lacked some flavor, adding seasoning helped. Prices are high for pizza but few options in the area. Will return based on the crust with hope they improve topping flavor.

It takes a while (~30 - 40 min) but it's good. We got the Margherita pizza and it was pretty delicious. I like the thin crust. Don't sit outside in the evening on the benches, or you'll get stung by mosquitos.

Wow I had no idea we had ordered from a food truck on toast tab but so glad we did! The pepperoni pizza is delish and bison pizza has a kick to it. Both have thin and crispy crust and so aromatic! Ny style foldable pizza, the kind you find in Brooklyn. The salad was packed well. It's on a corner with a big sign that says PEACHES. Great value and great dinner! Highly recommended!

You know it l was weird when I searched for food and this food truck had the best rating nearby! Of course I had to give a try and fortunately they had a cool 18" special going on. Ordered ahead online which made it a breeze to just pick up when ready especially in this Texas heat! Got their special with bacon and pancetta and enjoyed it thoroughly. Also ordered their Cesar salad, enjoyed it as well! Very pleasantly surprised by their croutons, cute little touch to stand out. I would definitely come back after a day of wine drinking.

Without a doubt, this is the BEST PIZZA I've had in years! In Texas, back home on the East Coast or anywhere else. This food truck is the real deal. Their corner spot has tables to use outside and nice shade under a huge tree. Truly a quaint and enjoyable space. Now for the food...this pizza was perfectly crafted! Crispy, crunchy, yet succulent. So much flavor in each bite. It took about 45 mins for the pie but it was absolutely worth it. The sauce, ingredients, texture, all spot on a memorable. And listen...it was so damn good, I took ZERO PHOTOS! This never happens. The combination of my hunger and the way this looked and smelled warranted no photos. Sorry guys. Next time for sure. And there will def be a next time!

Yelp led us here and we enjoyed it! My friend and I split a "Hey Bob" pizza. It was really tasty, not too greasy, and the crust was perfect (not too thin and not too thick). We really liked the pickled red onions and the slight spice of the calabrian chili. We liked their picnic tables as the weather was great that day.

As yes... the type of pizza experience that's memorable... hard to do, as pizza joints are as common as craft breweries these days. There are a gajillion of them, and many are pretty dang good. Prometheus drew me in with their 4.5/5 star rating and vibes of an "off the beaten path" place, even though it's clearly popular and well traveled. I mean, it's in a building that's basically a food truck without wheels. It's small, and they're working their tails off in there to feed a hungry throng of excited fans. Parking is somewhat limited and there are a handful of picnic tables, all outdoors and without cover. I ordered a cheese pizza for the kids and one of the specials for me, which was a bison off-the-menu special that had all sorts of other goodies I can't remember... including some spice and some honey for that fantastic sweet and spicy vibe. I ate the entire pizza myself and had zero regrets. Stellarrrrrr. The kids' cheese pizza went over well, too, and I had a leftover piece later that still tasted quality - although the night-of, fresh out of the oven, was far superior. The special bison pizza was pricey at $25, but wow was it good. Would I spend that much again? Maybe... but for the price point, I'd probably explore something a little less spendy. Nice folks working the joint, too. Really nice. Drink selection is limited, but the set-up is such that I imagine a lot of folks bring their own. A lot of traffic was also pick-up / to-go orders, of course. Note that there ARE bathrooms on site, and they're legit - not just port-a-potties. :) This place is high-quality Yelp-trendy seek-out-now worthy for sure.

prometheus pizza is a little food truck hidden near da peach haus right at the intersection. it has a super cute picnic-like seating area if you choose to eat there! it does take a while to get your order (25-30ish mins so if you wanna try it, i recommend ordering ahead online) we ordered: hestia goes to hawaii, hot potato & 'zhazilla the ingredients were definitely very fresh and the pizzas were creative, but my family & i didn't find it that enjoyable. these were also on the pricier end, but maybe these prices are characteristic of fredericksburg (?). hestia goes to hawaii (pictured) was our favorite, but when i first picked up the pizza slice, half of the pizza slid off the crust because of how wet it was (4/5) hot potato is extremely filling & we didn't quite enjoy the olive combo on it (2.5/5) 'zhazilla was also pretty interesting with generous and fresh toppings but it still was only about (3/5)

Dear Rachel and Chris - I am extremely disappointed with your customer service on 2/17. I ordered 6 pizzas + online and upon arrival you gave me the go around that there was no order followed by you finding my ticket ten minutes later. I had to wait an additional 30 mins although Chris said it would take a few minutes. Chris was extremely rude and dismissive and offered little to fix the problem. To add injury to insult, once I took my order home we were missing a pie. I called Chris and expressed my frustration and he hung up one me instead of offering resolution. The pizza was good, however, the customer service was absolutely horrible and I had to share my experience so that they are held accountable and fix their mistakes going forward to be successful.

I can't remember last time I had better pizza! It's a BYOB place with outdoor seating and they cook it in a food truck. They have quite a few different types of pizza. We tried the pepperoni and the 'Zhazhilla (sage sausage, pepperoni, pancetta, pickled red onion etc). Both were great, the 'Zhazhilla was awesome! Perfect combination of flavors. The crust was also perfect, in between thin and thick and had good flavor. Highly recommended!

Picked up the "Hey Bob" pizza last night and it was delicious! Making all my garlicky cheesey dreams come true. I don't think I've ever had pickled onions on a pizza before but really enjoyed that combination with the salty sausage and the spicy ness from the Calabrian chilies. We ordered their homemade ranch on the side which FYI is very 'dilly' so I wasn't the biggest fan of that but worth trying! Definitely looking forward to going back and trying another pizza from here but will probably eat at one of their tables outside next time to experience the freshness!

Run, don't walk to the best Pizza I have ever had in Texas. They close around 8:45 pm so be sure to get there early. The staff is very nice and the Pizza is outstanding. If it's a nice night you can sit at their picnic tables and enjoy the meal. We ordered the Pepperoni and jalapeño pizza. It's 12 inches wide and great for sharing amongst the three of us. They have Mexican cokes and Fantas to drink. The Caesar salad was surprisingly good as well. The dressing includes ground up anchovies ( I like this ) and is served on the side.

Best pizza in town. We saw this on 87 when we were driving into Fredericksburg from San Antonio and I made a mental note of it. We didn't have a chance to go while we were visiting (delivery would have been an amazing option for all the wine tour goers, but I imagine there's not a huge market for it), but decided to stop on our way out of town. WORTH IT. The pizza is so perfect. Amazing crust, really original topping options. I have eaten many great pizzas in my list, but haven't had anything this good in recent memory. We got the Caesar salad, the margarita, and a 'Hestia goes to Hawaii'. The latter was especially incredible - sweet (pineapple) and spicy (jalapeño) with pancetta and tangy cheese. I wish I got a picture! Seriously stop here while you're in Fredericksburg - such a gem!

After walking around main street the kids were starving. We tried two different pizza places and both had over an hour wait. I made a quick order online at prometheus. I didn't even realize it was a food truck until I arrived. It was a very short drive from main street. The pizzas were epicurean with really interesting choices. I tried a pizza with prosciutto, greens, and feta. For the kids I ordered pepperoni and they loved it. Now, it's hard to get excited about salad but the Caesar salad was so good. Crispy greens, shaved cheese, homemade croutons and a thick dressing. A Panna cotta was gourmet perfection with strawberry compote and crumble. Make the drive this place is well worth it!

Went here while on vacation this past weekend and it was a complete disappointment. First off please note it is a food truck, hard to find especially if your are from out of town. The pizza itself was thin and floppy falling apart literally ripped in half as I picked it up. It lacked flavor, cheese and dough. I've had New York pizza and this doesn't compare. Way too pricey for what you get. Best pizza is in Chicago! New York pizza is great as well.

Most of the menu items, including all the salads were out. Pizza was supposed to take 30 min and when I showed up they told me they were behind and would be another 20 min. It was a full 60 minutes late. No apology, just 60 minutes late. Pizza was fine, but terrible experience.

By far my favorite place in Fredericksburg so far! This pizza is absolutely wonderful, very authentic taste and smell. Just getting out of the car to go order you're immediately surrounded by the warm, delicious aroma of the hand crafted pizzas. If you hadn't already decided to order one, you will have no hesitation because of the smell alone. The flavor far surpassed any pizza Ive had in the past year and the crust was, in my opinion at least, absolute perfection! Prometheus is everything you could want in a pizza and this little food truck in Texas will take your senses all the way to Italy, guaranteed!

Solid pizza. We got the pepperoni and added mushrooms. The crust was thin and crispy and the toppings were delicious. Online ordering was really easy and it's in a convenient location if you also want to go to Das Peach Haus just down the road.

Some would say, "Just a food truck." But this was some of the best pizza I have had in a long time. A little expensive for a 12" pie but very good thin, crispy crust. Delicious!

this is the cutest pizza place i've been to!! the food is top tier and the service is extraordinary. i love the variety! brendan was a very friendly and helpful part of the staff. it's definitely a vibe; especially when you're with your homies, and i would recommend to anyone and everyone who wants to try something unique.
