Rada Opens in Charlotte Today | Eater Carolinas

"Fresh from New York City, Chef Callan Buckles is the former chef de cuisine at Claud, a French-American restaurant featured in The New York Times best 100 restaurants and the city’s Michelin guide. He’s also been in the kitchen at the lauded The Four Horsemen and Momofuku. The vision comes from owner Eloy Roy, and the project occupies the former Little Spoon space; the menu is an exciting and experimental culinary hodgepodge of mainly shared plates, from a $3 gilda skewer to a $110 sirloin steak. Roy previously ran Oggi and The Lights Juicery and Cafe in South Charlotte (where Kim Kardashian was spotted back in 2019 when juicing was still a thing). Roy imagined Buckles as the chef from the beginning — not just because of his culinary pedigree but because he’s family: Roy’s sister is Buckles’ life partner — and the duo sees Charlotte as a promising landing spot for this shared-plates–biodynamic-wine concept that may be oversaturated in New York but is still relatively untapped in the Queen City; nearby references include Substrate and Bar a Vins (which don’t have full food menus) and Kindred Studio’s new Albertine, which shares a vegetable-centric, seafood-forward sway. At its core the restaurant wants to be a neighborhood spot: an elegant, uncluttered 50-seat dining room with soft mint green walls, suspended globe lamps casting ambient light, stout cafe-style wine glasses, plenty of natural light, and an emphasis on briny flavors on both plates and in drinks. The made-to-share menu is vaguely “contemporary American,” not exclusively Italian or Spanish, but with a notable influence from Buckles’ time at Claud and Momofuku. “I’m not egotistically a farm-to-table chef,” Buckles said. “I’m not doing the farm-to-table thing because it’s the right thing to do, but it’s just where the best food is going to come from.” An example: the crispy skin roast chicken with a vegetable farcis tucked between the breast and the skin, draped in jus; Buckles’ use of Asian ingredients, like fish sauce for salt and liquid shio koji, is another inspired touch. “It’s not safe food,” Roy said — safe to eat, of course, but possibly outside of Charlotte’s comfort zone — and guests won’t easily find eggplant escabeche, an eye‑candy dover sole with green romesco, or a squid, pil pil skewer anywhere else in the city. The cooking begs for wine: get the stemmy mencia from Bierzo or a red‑licorice gamay from Beaujolais with the bavette steak decked out in bright chimichurri; the txakolina from the Basque region “rips with acid and minerality” that flatters the seabass and Roy’s favorite, clams with butter, scallions, and vin jaune. At the white marble bar, don’t shy away from the house riff on a dirty gin martini that combines anchovy oil and Basque pepper brine, rounds out with a whisper of olive oil, and is topped with a gilda skewer (and yes, there is still a $9 Fernet for the industry crowd). When describing the restaurant, Roy pointed to his chest, saying this food will hit guests “on a deeper chord,” referencing something intangible and from the heart in dining; he thinks Charlotteans may realize, “this is actually what I’ve been looking for.” Walk-ins are welcome, and limited reservations are live." - Kayleigh Ruller

Kind of surprised to see so many reviews calling this place amazing. It was solid, but nothing over the top to wow us. We got the squash fritto (yummy in a perfectly average way), coppa (good, and generous amount), tuna crudo (creative but ultimately underwhelming), full sole (tasty but didn't blow us away, especially at $89), and the bavette (best dish of the meal - delicious and different). My non-alcoholic drink was something I've found before at Total Wine, not freshly made, and my husband's cocktail was downright bad. The restaurant is very pretty, but quite loud. I couldn't hear my husband a lot of the evening. Our server was extremely friendly and helpful - we liked his vibe a lot. However, dirty dishes were left stacked on our table for far too long, and it took forever for me to get a menu to browse for my second drink. I even asked the woman who delivered my bottled drink to stick around while I tasted it in case I needed soda water, but she walked away as I poured it. They also didn't change our silverware between courses. I worked in fine dining in Boston and Denver for 10 years, and this level of service simply isn't top-tier. Our friends went earlier in the week and reported similar opinions - it was good, but not to the level that people are applauding it. They actually disliked a dish so much they sent it back. After such glowing recent accolades, I was surprised at how average Rada was. Charlotte's food scene is pretty mediocre, though, so anything helps.

We had an excellent meal at Rada. Three of us split: Charcuterie Squash Fritto Kanpachi Beef Carpaccio Lasagnetta Charred Cabbage Halibut Pannacotta Everything was tasty, but the snacks/small plates and dessert really shone. Service was wonderful as well. Get in now, because I have a feeling they may have a star coming their way..

This restaurant came highly recommended. It was sadly a disappointment. Service was spares and disjointed. Dishes seem uninspired. They tasted good but were kind of boring. Highlight was the San Sebastián cocktail with Gilda on the side. If you go soon the pappardelle was the best dish even if you aren’t a fan of blue cheese you can put it off to the side. It seemed like everyone knew how to work in a restaurant but either weren’t comfortable enough to just do the work or were being forced to do something outside their comfort zone by management. In a world where Charlotte’s food scene is dominated by trendy restaurants with “shareables” such as burrata and shisito peppers, it’s good to have something different enter the stage. Pretty much everything on the menu is something you can’t find anywhere else in town. Rada was unlike anything we’ve had in Charlotte. It’s a unique place with fresh takes on classics. From beginning to end our meal was fantastic. The olive and anchovy bites were briny and bursting with umami. The beef carpaccio was very onion forward but in a good way. The chef takes risks that pay off. The bavette was incredible with a nice char but I could have used it cooked up a touch more but that’s a personal preference. The star of the show was the sole. It was a luxurious treat and one of the best dishes I’ve had in Charlotte in recent memory. Our sever was attentive and pleasant during the course of our meal and explained the menu well. At this price point I expect service at this level. The cocktails were great and I felt were pretty reasonably priced. The vibes are great as well and the space is intimate and decorated well. I do think the tables are too close together and conversations can spill over into other groups but I get why the owners would want to maximize the use of the small space. I’d love to go back and sit on the patio as an evening flowed into night. Overall I think this is a great date night spot for a special occasion like an anniversary or birthday but is definitely pricey for a regular outing. We will definitely be back a few times a year and look forward to trying whatever the Rada team cooks up.

This has become my favorite restaurant in CLT! The eggplant is so tasty and unique, and the steak is perfectly smoky crispy on the outside and juicy inside. The interior design creates such a cozy ambiance, it feels like the kind of place you’d expect to find in NYC

This place has potential, but I think they are being a bit pretentious at the moment. Everything is a touch overpriced for what you get. $19 for a cocktail, but served in a chipped glass that I almost cut my lip on. Trendy vibe and decor inside, but no sound dampening efforts have been made to a very small space, so it's super loud. $24 for a plate of 10 tiny clams - that's right, 10. They were delicious, but I can't even get a baker's dozen? Then comes the server's opening dialogue when you sit down - I am growing tired of them. "Have you dined with us before?" No, you've only been open a few months. Then proceeds to explain how it's a sharing menu and you need to order 2-3 snacks, 2-3 small plates, and 1-2 large plates - for 2 people mind you. I've dined at fancy restaurants around the world, I get this isn't The Cheesecake Factory. And I looked at your menu and pictures before booking the impossible reservation that only is available for 2 weeks out at a time, so spare me the condescending PSA please - I'm pretty sure I know how to order! The menu supposedly changes daily, but 75% of what we saw on it this weekend was listed online from when they opened. This isn't Manhattan, guys - you might fool a few wealthy Charlotteans that yearn for more 'it-spots' in our growing city, but you won't fool any Michelin inspectors that will be reviewing the Southeast for their upcoming guide. Please get over yourselves, rethink some of your approaches and reel it in a bit, and then call me!

Tucked into a cozy space in Charlotte, Rada makes a strong first impression with its candlelit tables, white linens, and intimate, energetic atmosphere. The interior feels chic without being pretentious—stylish, slightly packed, but warm and buzzing with conversation. It’s the kind of spot that feels both celebratory and casually cool. We kicked off with cocktails—I ordered a martini, which was crisp and well-balanced, served ice cold with a bay leaf for a subtle aromatic twist. The drink menu is creative and clearly well thought out. For wine, we shared a bottle of 2021 Antoine Sanzay “Les Poyeux” Saumur Champigny—a smooth, expressive Cabernet Franc that paired beautifully with the rest of the meal. The appetizers were where the night really started to shine. The clams in broth were an absolute standout—briny, buttery, and layered with delicate green aromatics that gave it real depth. Another hit: the potato side. These came out golden and perfectly crisp, seasoned just right and hard not to keep reaching for. We shared the 32 oz steak as our main—a hearty cut that was juicy and flavorful, dressed in a savory pan sauce. The pork rib was another highlight, expertly cooked and generously portioned. The flavors throughout the meal felt thoughtful and bold, without trying too hard to impress. For dessert, we split a slice of chocolate cake—intensely rich but not overly sweet, finished with whipped cream and dark cherries. A satisfying close that didn’t overwhelm the palate. Service was friendly and attentive, striking a great balance between casual and professional. Rada feels like a neighborhood spot that’s been elevated just enough to make a night out feel special.

All around an excellent experience. Here's what we ordered! - cheese & honey along with coppa (coppa is a MUST it was delish) - meatballs (have a harissa kick!) - tuna carpaccio (so fresh - a must) - lamb bolognese (another MUST) - potato pavè (a very yummy classic) - striploin (blew my mind) - chocolate torta (loved the tartness of the cherries) - Tokyo martini (delish.) I loved everything about our experience at Rada. The food is devine and the staff was exceptional. Everyone working there was so kind to guests, happy :), and I could tell they were helpful to one another. So excited to come back

So rad that Rada is now open! This is the kind of restaurant that I'm so happy to see in Charlotte. It's high quality, with a unique, curated menu. Inside, the space is on the smaller side with a bar and maybe 20 small tables. It feels intimate. The service is very helpful. Our server did a great job explaining the dishes and advising us on how much food to order. After getting seated, we were given complimentary glasses of sparkling wine since we were celebrating our anniversary. Such a nice touch! We ordered the Selwyn Spritz and Orange Mule to drink, which were both refreshing and prepared well. The cocktail/mocktail options on the menu are not too sweet. They also have a good variety of wines by the glass and bottle, including an orange wine from Slovenia. To eat, we started with 2 gildas and 2 meatballs with harissa. Then came the veal tonne and the lamb bolognese with bread. I loved the variety of flavors, textures, and preparations. The menu has a Spanish/Mediterranean bend, with dishes I haven't seen elsewhere. We ended our meal with the pannacotta served with olive oil, honey comb, and sea salt. Again, not overly sweet, with unique flavors and textures. We agreed that this dessert felt very "adult" - in a good way. Highly recommend Rada for an intimate outing or celebration if you're looking to try something new and have a nice time doing it!

Service was A++++++++. Carlos was informative, helpful, and fast. The food was delicious! One complaint and it's silly but the walls are barren. Sad and empty. Like we landed on a new planet and there was nothing. Emptiness. Still, I highly recommend.

Rumor has it that this place just opened a couple weeks ago. The vibe is fancy, you can come here with your better half, for girl's night out, or like me a new hire welcome dinner. I arrived to the restaurant, we had reservations and were immediately seated. TJ was so nice and made me a mocktail, super delicious. I asked for something sweet and he delivered a tasty ginger orange mocktail. We ordered multiple items from the snacks & skewers, small plates, and large plates menu - croquetta, meatball harissa, tuna carpaccio, chorizo, lamb bolognese , sea bass and bavette. Hands down my favorite was lamb bolognese, the ricotta was a perfect add to the dish. I can't forget we ended the night with the most perfect and unique panacotta - drizzled with a honey olive oil, three dollops of honeycomb crunch, and lastly sprinkled with sea salt. This place is definitely worth a try, if you are looking for an upscale evening. Note the menu items changes daily. Loved the all gender bathrooms that were stocked with Aesop soap and lotion products. The restaurant has very dim lighting (please excuse my photo quality) and is a quite loud restaurant.

I loved the restaurants charm from the small cozy atmosphere and the curated menu with some unique dishes, the beef tartare was a great starter and the chicken with swish chard, jus was so tender and had a great flavor. This restaurant is definitely not allergen friendly. Not only did we call head to confirm that they could accommodate celiac, we also confirmed with the waiter twice when ordering. One of our dishes came out with obvious gluten on it and the server who brought it out (not our waiter) was dismissive to the point of rude when we asked about it. I can only assume that one of our other three dishes had gluten in it, because after eating at this restaurant I had one of the worst gluten flareups I've had at any restaurant here in Charlotte. Very disappointing, but if you have allergies, there are many wonderful restaurants here in the area that take them very seriously - go try one of those instead!!
