RAMEN MATSUI

"The husband boils the noodles; the wife garnishes them with spring onion and fermented bamboo shoots. Between them, they bring alpha and omega together to complete each bowl of ramen. Flavours are based on soy sauce, salt and dried sardines. To bring out the aroma, pure rice sake is added to chicken or seafood dashi soup stock. Two types of fragrant oil are used, deepening the flavour experience. Kombu kelp, pork and scallops, all from Hokkaido, infuse the husband’s love of his homeland." - Michelin Inspector

A couple of reminders - cash only and very affordable - check IG for open business days - as of me writing this review, reservations are required for weekends; otherwise expect a line Absolutely must try ramen 🍜 I heard about this place from so many YouTubers, which makes me worried bc sometimes is just hype. We went on the last day of our trip on a weekday and waited for 2 hours outside. And we were both so impressed and genuinely loved the duck breast, wonton, chashu (#1 Special Soy sauce Ramen). Duck and chashu were so tender, egg cooked just right and noodles is perfect, not soggy or packed stack together. This is not your typical chashu, is thinner yet full of flavors and it's "smooth", goes so well with the soup. The SOUP - I normally don't like soy sauce based but this completely changed my mind... from their menu - Homemade Soy sauce and Broth of Chicken from Kyoto, freshwater clams from Lake sinji, Rausu kelp, and Sake 🍶 - I love the subtle yet bold flavor, is rich but yet refreshing at the same time 🤤 Make sure to also order the rice bowls #20 and #21, it goes so well with the ramen, I was happy 😁 eating the soup with the rice too.

Wait in line around 1hr+ and it was worth ✓✓✓ Must try. This place has the best ramen I've ever tried, I highly recommend trying it, It has a Michelin guide and most Japanese people wait in line with me. Go early so you don't have to wait so long 🍀 i visit twice and had to wait both of time. Back to my country now but i am missing this ramen so much 😢🤤😋

One of the most prestigious ramen shops in Tokyo. Walk-in (aka long queues) available during weekdays while weekends are for reservations only, which give customers the flexibility to choose which method they prefer to secure their seat. Ordered the Tokusei Shio ramen (you cannot eat more than one bowl): the broth is rich and layered, teeming with the taste of the sea. The noodles are also smooth and blend with the soup well. My only question is whether the pork chasiu is still necessary for a broth this delicate and nuanced. Overall a very pleasant experience of visiting one of the most famous ramen shops in Tokyo

Michelin guided restaurant. I had expectations for this restaurant and it exceeded them. I had the ramen with everything in it. The duck meat was amazing. Service was very good, but required reservations online that is available on weekends only. Lots of foreigners come to this restaurant, so I’m sure prices will go up soon!

Arrived at 10:15am, served at 11am. Only 8 seats in the restaurant, people arriving after 10:25am needed to wait for the 2nd round. Both soyu ramen and shio ramen are top notch. Duck breast is impressive too. I believe this is one of the best Tokyo ramen.

First and foremost: The long waiting time of about an hour was definitely worth it, as the food is of highest quality and tastes amazing. I would recommend trying a rice bowl in addition to the ramen. There was one sole issue with our experience: After waiting in line, you order at the machine and afterwards wait in the very small entrance area of about two square meters until you are seated. The waitress told us to stand by a wall which was next to the toilet. When we moved from our position, we were instantly notified to get back to the wall. This made no sense as we weren‘t blocking the way of staff or customers and in addition, when standing by the wall, we had to move and squeeze everytime someone wanted to enter or exit the toilet. We unfortunately experienced this as not very customer friendly. Other than that everything was superb.

Anyone who gives this less than 5/5 needs to get their head checked. Queued up at 10:40am about 20 mins before opening and sat down at 11:30, some by noon. Too quick for the best ramen maybe ever, need to return to try the sardine and scallop ramens

The shoyu ramen broth is great, the noodles are perfect, and the seasoned egg has some secret ingredient like paprika or something that gives it a unique and memorable flavor. The portion size is perfect for only needing one order of ramen, unless you have a really big stomach. It's good, because they only allow one order of ramen per person. You can order rice bowls and other accoutrements along with your ramen order. The English menu has a discrepancy that confused us a bit but just know it's one order of ramen max per person. We went around 11:15 AM on Friday and were served by 12 PM. It's worth the wait as long as it's not raining.
