"The husband boils the noodles; the wife garnishes them with spring onion and fermented bamboo shoots. Between them, they bring alpha and omega together to complete each bowl of ramen. Flavours are based on soy sauce, salt and dried sardines. To bring out the aroma, pure rice sake is added to chicken or seafood dashi soup stock. Several types of fragrant oil are used, deepening the flavour experience. Kombu kelp, scallops and wheat flour, all from Hokkaido, infuse the husband’s love of his homeland." - Michelin Inspector

I visited with my partner around 2 PM yesterday. Both bowls of ramen were delicious - while it’s not my favourite type of broth, I can still appreciate the sophisticated flavour. However, the reason for the low rating is that we unfortunately experienced food poisoning after the meal, which we believe was caused by the duck loin rice. I had read reviews and didn’t notice anyone else mentioning this issue, but our duck did look quite rare. We had just landed in Japan the day before, and the only food we both had in common for the past 2 days was the bowl of duck loin rice (we each had separate types of ramen but shared the duck). Around 7:30 PM, during dinner, we were both suddenly hit with stomach cramps and waves of nausea. This escalated into severe diarrhoea throughout the night, ultimately forcing us to cancel our travel plans and hotel reservations. Aside from the food issue, I also noticed that the hospitality could be improved. While it wasn’t directed at me, the female hostess (possibly the chef’s wife) was quite rude to another customer. He only wanted rice, which apparently goes against the shop’s rule (stated in the booking confirmation for each person to have a bowl of ramen) While he should’ve read the information more carefully, it still didn’t warrant her raising her voice and repeatedly saying, “No, one ramen!” Overall, I would still recommend this place to anyone who enjoys 淡麗系 (light and clear-style) ramen, and their shoyu broth is one of the few I’d actually consider drinkable. But if you’re looking for warm, friendly service or feel uncomfortable sitting in near-silence in front of the chef, you may want to skip it. And definitely avoid the duck loin rice ,unless you have a particularly strong stomach.

I can hardly recommend this place enough. It’s by far the best ramen I have ever had, and for an incredible good price. The chefs have an outstanding operation going on, delivering top-quality ramen in an inviting, gorgeous space. The depth of flavours is unbelievable, and the ingredients are flawless. Do arrive ten min before your slot, to give you time to order the food.

One of the best ramen shops I've been to in Tokyo (and I have been to quite a few). The noodles are the perfect texture, the broth has incredible depth, and the pork, duck and wontons are spectacular as far as topping go. Also features a perfectly seasons/marinated and cooked egg. You do need a reservation 3 days in advance, but it is well worth the effort.

This place is a must to try ! We had the best ramen here during our 10 days trip in Japan. Lots of flavour and the pasta inside the broth are perfectly cooked and savoury. The pork slice was high quality too. Highly recommend. Furthermore we arrived late to our booking due to transport issue and we could still eat. Thank you !

One of the most prestigious ramen shops in Tokyo. Walk-in (aka long queues) available during weekdays while weekends are for reservations only, which give customers the flexibility to choose which method they prefer to secure their seat. Ordered the Tokusei Shio ramen (you cannot eat more than one bowl): the broth is rich and layered, teeming with the taste of the sea. The noodles are also smooth and blend with the soup well. My only question is whether the pork chasiu is still necessary for a broth this delicate and nuanced. Overall a very pleasant experience of visiting one of the most famous ramen shops in Tokyo

A couple of reminders - cash only and very affordable - check IG for open business days - as of me writing this review, reservations are required for weekends; otherwise expect a line Absolutely must try ramen 🍜 I heard about this place from so many YouTubers, which makes me worried bc sometimes is just hype. We went on the last day of our trip on a weekday and waited for 2 hours outside. And we were both so impressed and genuinely loved the duck breast, wonton, chashu (#1 Special Soy sauce Ramen). Duck and chashu were so tender, egg cooked just right and noodles is perfect, not soggy or packed stack together. This is not your typical chashu, is thinner yet full of flavors and it's "smooth", goes so well with the soup. The SOUP - I normally don't like soy sauce based but this completely changed my mind... from their menu - Homemade Soy sauce and Broth of Chicken from Kyoto, freshwater clams from Lake sinji, Rausu kelp, and Sake 🍶 - I love the subtle yet bold flavor, is rich but yet refreshing at the same time 🤤 Make sure to also order the rice bowls #20 and #21, it goes so well with the ramen, I was happy 😁 eating the soup with the rice too.

Wait in line around 1hr+ and it was worth ✓✓✓ Must try. This place has the best ramen I've ever tried, I highly recommend trying it, It has a Michelin guide and most Japanese people wait in line with me. Go early so you don't have to wait so long 🍀 i visit twice and had to wait both of time. Back to my country now but i am missing this ramen so much 😢🤤😋

I recently visited this Michelin-guided ramen restaurant and ordered the special shoyu ramen with added duck meat. The generous toppings—featuring tender pork, succulent duck slices, and perfectly soft-boiled eggs—were incredibly fresh. The duck meat was a standout, adding a fantastic depth of flavor. The broth was rich and flavorful without overpowering the taste of the meats, and the noodles were cooked to absolute perfection. This ramen was a harmonious blend of flavors and textures, and definitely worth a try.
