"Awarded: Bib Gourmand. Lying a couple of minutes from Kanamecho station in the western part of Tokyo is Shinohara. The ramen-ya serves up three different bowls: shoyu, dashi and red sea bream. Great soy based ramen. Sometimes a bit of a wait, but move quickly. Machine is only in Japanese, but you can probably figure it out by matching characters to the signs and or guessing. That's what we did and had a great meal.

* 特製醤油そば ¥1,200 山椒肉飯 ¥350 久しぶりに大好きなラーメン屋へ。 過去にミシュランガイド東京でビブグルマンに選出され、 食べログ百名店にも何度も選出されているお店。 毎回行く度に味が進化していると感じるのが凄いし、 だからこそまた行きたいと思ってしまう。 旨すぎて食べ終わりたくないと感じるラーメン。 素人の自分のコメントより、篠はらのお店の前にある、 立て看板にある文言をそのままご紹介☝️ ↓ 【篠はらのらーめんについて】 一杯の中に天然素材由来の旨味をギュッとギュッと 詰め込んだラーメンです。 あっさりし過ぎていない濃密なお出汁。 多重層の奥深い出汁感。 お手本からあえてズラしたバランスがまた美味しかったり。 日々改良している為、味が変わっていくのも一緒に 楽しんでいただけたら幸いです。 【出汁】 鶏豚、鰹節、貝、煮干し、昆布、干し椎茸 ドライトマト、野菜、茶、等 それぞれ食材に適した水、温度で火入を行い最終的にブレンド。 醤油ダレ 天然醸造の生醤油(お常陸)と再仕込み醤油(出雲むらさき) 三河みりん。 ↑ このように、食材などをオープンにしちゃう潔さ。 それと同時に真似できるもんならしてみろといった、 自信のようなものをビンビンと感じる。 これを読んでいるだけで想像が膨らみ、腹が減ってくる🤤 初めて行く人や、食べたことがない人は、 お店からもお勧めしている「特製」を是非。 ※肉が苦手な人にだけは向いてません☝️ 味付けや調理法が違う4種類のチャーシューに、 肉団子、味玉、メンマをトッピング🍜 篠はらの魅力の全てがこの一杯に詰まってる。 満足感半端ないです✨ 自分が食べてきたラーメンで、確実に5本の指に入る旨さ。 是非ご賞味ください! *
