Karl Holl Is the New Chef at Central Oregon’s Brasada Ranch - Eater Portland

"Like Sundance, Ranch House is meant to focus on bar-and-grill-esque, kid-friendly fare, but Holl still wanted to put his touch on things. Green developed a Midwestern tavern-style, cracker-y, thin-crust pizza dough that arrives 'party cut,' aka in small squares, with flavors like hot chicken with Frank’s Red Hot. The menu starts with appetizers like meatballs and wings, with an assortment of salads — kale tossed with green goddess, a chop salad made with seasonal lettuces." - Brooke Jackson-Glidden

We had heard good things about the Ranch House. Food was good, but I wouldn't say great. For the location, I felt that the pricing was fair. Relatively expensive, but fair. Service was great and the view from the deck is phenomenal. Worth trying, but I wouldn't get my hopes up that the food is going to really impress you. They had a great beer selection, but unfortunately, the kegerator was down when we arrived. I understand the challenges of refrigeration, so that wasn't a big issue.

Brasada prices suggest a luxury experience, but that is certainly not what we experienced. For context we are a family of 5 staying in a cabin at Brasada. Waited 20 minutes to be seated for breakfast when it was less than half full. Waited another 30 minutes for coffee once seated. We left after an hour and a half of waiting for food. The table next to us that was seated at least 30 min after us got their food first! Clearly the waitresses were unhappy and I know they were busy, but there weren’t very many tables to serve! No apologies until we expressed displeasure with the lack of attentiveness. Had to ask for a refill in coffee… this was truly crazy. We were willing to be patient, but not willing to waste half a day waiting for breakfast. Very disappointing and we will not return to Brasada to stay.

Food is top notch. Had the smoked wings, Ruben, biscuits and gravy, and butternut soup. Recommend all of these

Mushroom & spinach pizza is the best! Steak is also really good 👍

One of my favorite restaurants. Although I just went again when Google said that they were open and they are closed. It's a bummer to drive all the way out not to be open. It's 6:45pm on Thursday, Closed. So call and make sure before heading all the way out like I did.

Incredibly underwhelming experience for a supposed luxury resort restaurant. Who doesn’t have a single vegan menu item available in 2024? We were able to customize a pizza, and I would have rather eaten one from home. The smoked tomato sauce tasted like a forest fire - just because you can does not mean you should. Our server was very kind and accommodating, but the restaurant itself left so much to be desired. We will not be returning to the resort, and the restaurant was just one of the reasons why.

Awesome food and service. I don’t get the negative reviews. Everything was great for us.

Arrived at Brasada Ranch to celebrate a birthday dinner and found out the fine dining restaurant was closed for a makeover, but the Ranch House, a casual spot, was open. Reluctantly we took a table...what a pleasant surprise! Although casual, the atmosphere was really nice with a beautiful view of the Cascade Mtn range. Service was great..a young man from Italy was our server and terrific! The menu was limited, as expected, but our choices were fantastic. I had the buttermilk fried chicken, and my lady had a Steelhead special. Both were superb...what a great meal! My compliments to the chef for such wonderful krafted plates. Im hoping the same chef is planning the menu for the new restaurant opening in a couple of days. We will go check it out. I encourage everyone to take the beautiful drive out to Brasada for a wonderful dining experience. It was such a nice break from the stale choices in Bend.
