This is an educating, enjoyable and tasty multi-course experience you have to try when in Charleston. This is not your typical dining experience, it's a new kind of dinner theater. I believe the menu changes regularly - our experience was centered around oysters, caviar, raw seafood combined with salts from around the world and lots of wine. We learned that we've been eating oysters and caviar wrong for years, and were introduced to a variety of salts on raw dishes that was amazing. I try to stay away from salt, but learned I just need the right kind on my food. I'd highly recommend the experience for couples and small groups - there is limited seating so reservations are a must. Also, make sure your paying attention. It's interactive, but you don't want to be that person interrupting/ talking over the chef.. a little self-awareness and the right attitude make Rawl Lab an awesome night!

This was the best night of my life. We are such foodies and to have THIS kind of experience was literally killer. We had the most enjoyable and entertaining 5 hours, being enveloped in music, delicacies, so many wine pairings, and the electric atmosphere. If you’re reading this, go! You will not be disappointed. We learned so much and we’re encouraged to be able to add a lot of these techniques and thoughts into our own repertoire at home. Kevin and Sandy - BRAVO! Raw Lab was the most unique dining experience we have ever had. If you are on the fence about making a reservation (like we were) take the time to read reviews and peruse the website. Kevin spent a lot of time putting together expectations of this experience. Dining at raw lab is more like attending a show than it is a 'fine dining' or omakase experience. Be prepared to interact with your fellow diners (the room seats 12 people) and don't be afraid to get out of your comfort zone. Kevin has created a wonderful space with great ambiance, comfortable and he facilitates a lot of fun throughout the four hour meal. The oysters were some of the best we have ever had and we learned a lot about caviar. A few other notes and some critiques: - Raw Lab is NOT for everyone. Only attend if you are prepared for an experience that is more about being social than it is about food. - You may be wondering (like us) is it worth the price? YES. Again, think of this like attending a show. Kevin is definitely a showman who knows how to capture an audience. - The substantial food you will eat for the 'meal' is nothing to write home about. Three of the courses went more or less untouched by the entire group of twelve. Kevin owns the fact that he is not a chef, but this is the biggest piece that could use some work. - This is not an experience for a wine connoisseur or someone looking to learn more about wine. It is more about drinking and socializing than wine pairings crafted for each course. The set up of the experience leads to a pressure to 'finish your glass before the next bottle is opened'. Overall, we enjoyed our experience at Raw Lab and thought it was worth the price. If it is going to last long term/entice people to come back I think some more needs to be done with menu/recipe development.

Hands down the BEST dining experience I have ever had and well worth the money! You can tell how passionate Kevin is about what he does and he went out of his way to make the night fun and entertaining while sharing his knowledge. The quality of food was unbelievable! I am already planning my next trip back!

Words cannot express how much we enjoyed everything about this entire experience!! Whether it was the evolution of our Omakase style dinner, the theory behind our menu, or the jam band we created afterwards, each part was greater than the last, culminating in a perfect night! Crudite of pickled veg, an amuse-bouche of eel, the progressing oyster menu, the nuanced explanation and demonstration of tasting caviar completely, lobster bisque, freshly prepared Caesar salad with lobster tail, an amazing above sushi quality salmon, tables ceviche, or a decadent salmon tower, wines and sake paired with each course, each course amazing in their own right, and together they made for a most extravagant meal. Our host was fantastic! Sharing wealth of knowledge and technical skills as he guided us through the night.

Went to Sushi Raw Lab Bar and honestly it was such a cool experience. It's not just a dinner, it's a full-on event. Each course comes with a wine pairing and the pairings were actually on point. We had salad, salmon, eel, lobster bisque, ceviche, and a few other courses. My favorites were the salmon and ceviche--super fresh and flavorful. The space is really small, only 13 seats, so you're kind of locked in with whoever else is there. I went with my girlfriend and we had a great time, but I think it would've been even more fun with another couple or two. Heads up--definitely make a reservation in advance. If you're having trouble booking online, just call them. Totally worth it.

It isn't everyone's cup of tea, but if you love oysters & seafood this is the place to celebrate a special occasion. It's a fun, interactive, and intimate experience. We've been twice and the experiences were quite different. Kevin works hard to keep you fed, entertained, and educated about what you are eating and drinking! In fact, seafood and I don't get along at all. So, you can imagine my hesitation when she mentioned this restaurant. But from the moment we sat down, I knew we were in for something special. The first dish that arrived had pickled vegetables--things I normally wouldn't touch, let alone enjoy. But to my surprise, every bite was a revelation. The standout for me was the tomato, a food I typically avoid. But this tomato was unlike any I've ever tasted--so delicious that if all tomatoes were like this, they'd be at the top of my favorites list rather than the bottom. What really set Raw Lab apart was the entire experience. It wasn't just about the food; it was about how the food was presented, the atmosphere, and the chef's incredible ability to guide us through each dish. There was music, a bit of theater, and an overwhelming sense that we were part of something extraordinary. The chef didn't just serve us; he taught us. This was easily the best dinner experience I've ever had. My friend and I found out about it via social media and made reservations for a Friday night. It only sits 12 a night. It's EARTH'S ONLY OMAKASE RAW BAR EXPERIENCE!! Pretty damn cool if you ask me! Kevin was awesome. He explained each course and the attention to detail and care he puts into each item he serves is amazing. All the different oysters we had were fresh, clean, and perfectly cold and delicious. The different caviars he put on our hand to eat and get the entire full flavor and experience is incredible. (Google why to eat caviar off your hand and you'll understand). That's what I had to do!!! It's $199 before tax and tip and includes wine pairings. Since I'm not a wine drinker I was ordering tequila and sipping on that as the course came around. If you live in CHS or are visiting, try and make a reservations. You won't be disappointed.

I wined , I dined , I learned! Probably the most unique dining experience in Charleston right now. The articulate and creative way Chef and Raw Lab owner Kevin Joseph is able to artfully present each course is like an interactive art show where you get to eat the masterpiece. Here's what to know: It's an intimate setting . There were eight of us total the evening I dined at Raw Lab and the space can hold up to 12. The chairs are lined around a U-shaped raw bar with the chef in the middle - you are literally in the front row of this immersive dining experience. Expect to be here a few hours . It's no rush and Chef Joseph takes his time between each course to chat , top off your glass , talk about the dishes and pairings , do fun pop quizzes (with prizes!), etc. There is an option to include wine pairings and if you opt in for this there is nine different pairings presented with different courses. It's called Raw Lab for a reason . Nothing is cooked but don't fret ... it's just a raw bar on steroids . The food is more elevated than your standard raw bar . In fact the chef's modus operandi is "raising the raw bar." He certainly excels at this! Hard to choose my favorites of the evening but the highlights included the shrimp ceviche , oysters and the caviar bombs! I also loved watching him grate fresh wasabi . Once you try fresh wasabi you will turn your nose up next time you dine at sushi place because you will know the difference! PARKING: no designated parking lot . Street meter parking . If you are considering trying Raw Bar just do it ! You will love it !

Best meal experience I have ever had, and it is truly both. The meal is phenomenal. Fresh ingredients well prepared, combined with extensive knowledge from the chef. He educated his patrons throughout the meal which everyone appreciated. It was honestly some of the best food I have ever had. The experience is unique and very interactive. There are surprises and choreographed quirks at every turn. I will not go into details because I want others to be as surprised as I was. I have eaten at restaurants all over the world from 3 star Michelin restaurants, to small locally loved, family owned restaurants in search for the "wow" experience. I found it at Chef Kevin's Raw Lab. It is more than a meal. It is an experience. You will not leave hungry or thirsty. It is absolutely worth the price. I give it my highest rating and recommendation. My thanks to Chef Kevin and his assistant Heather.

This place is a complete scam, I have been all over the pacific and Atlantic tried many "elite dining experiences" This is 100 percent not one. A pure waste of 3 hours and $700+ rip off. You can go to a number of way better sushi / seafood in Charleston for half of the price. It's not true omakase and honestly nothing about this business is true. Don't believe the hype around a fake chef. I would say probably worst restaurant experience of my life.

This was the biggest scam of my life. To start, I have explored several seafood restaurants in the Charleston area, and the food was not fresh, or locally sourced as promised. The dishes served were salty, and not well prepared. In addition to the mediocre food experience, the owner Kevin was beyond rude to his employees and customers. His employee, Heather mentioned, receives zero portion of the tip, as we watched him push her around all night in front of the audience. As a business owner, he should show respect for his employees at all moments of the nights. Kevin is a disrespectful, arrogant owner who does not provide you with the experience that was promised upfront. The products around the store are from Trader Joe's, and you do not receive any fresh produce throughout the night. Lastly, be careful of the extremely strict cancellation policy. I cancelled within 7 days of my reservation, and he left several nasty text messages and notes threatening me. Kevin provides horrible customer service, I strongly recommend investing your money elsewhere. Charleston has awesome raw bars, and this is not one of them. I was fortunate to get a reservation at Empire Oyster's newest property in Carleston the other week and was looking forward to the experience. Having seen pictures of the space and photos of the beautifully curated dishes, I couldn't wait to see what would be on the menu. Chef Kevin Joseph greeted me when I arrived and introduced me to the other guests who were seated at the "U-shaped" dining stage. Aside from the tasteful decor, I noticed an "ice moat," stretching around the bar, where our dishes would be served. After introductions were made, everyone settled in as our Chef introduced us to the first dish of the evening. What followed was an incredible journey of tastes, textures, sights and sounds that all combined to create a truly incredible experience and a memorable meal. Kevin's attention to detail with both the preparation and service was evident as he orchestrated the various courses. His knowledge and respect for the cuisine is readily apparent, as he guided us through the oyster varieties. One of my favorite moments of the evening came when I was presented with an Olympia oyster, a variety I had never tasted and one that is exceedingly difficult to find anywhere outside of the Pacific Northwest. While small in size (fifty cent piece), the flavor profile was enormous, with hints of briny grass, touches of cucumber, and an umami finish that kept echoing for minutes. The deconstructed lobster Cesar salad, the Arctic char-artichoke dish, and sea urchin were among the best dishes I've tasted. A sampling of several varieties of caviar at the beginning of the meal also stood out. Chef Kevin Joseph had managed to catch lightening in a bottle with this endeavor and is a consummate professional, who excels at making his guests feel special. I can't wait to return!

C'mon guys. This places sucks on so many levels. I'll break it down- Not true omakase I don't mind pretentious but this would fall under pathetic. Like a previous reviewer commented - not really a chef but just a salesperson. Two bites of caviar; a gazpacho, prawn crackers and a few oysters - none of them impressive. Do not make a reservation at Raw Lab! They make money off of cancelled reservations and charge you $250 PER PERSON if you do not cancel 5 days in advance. Better hope that you don't get hurt or get sick like we did. After one of us got injured, we called the owner of the restaurant 24 hours in advance to let them know that we needed to cancel. When we called a random woman answered the phone and didn't seem to know that she was answering the restaurant's phone. It was weird. I finally was able to talk to the owner (I think) where we were told that we would be charged if they could not back-fill the reservation. Both of us come from the restaurant world, and understand that a cancellation fee is sometimes warranted. I understand charging for the food that the restaurant purchased, but the FULL PRICE of the pre-fixe dinner? Talk about taking advantage of your patrons. We were really looking forward to this experience, and sometimes life throws you curveballs. It seems ridiculous to me that owners of this place expect you to cancel 5 DAYS in advance. Before you make a reservation here ask yourself if you're willing to eat $250/person if something happens. There's no way we will be dining at this place, and as a local, we will never recommend it to those that we meet. Hopefully this discourages you from wasting $500 like we did...

This is probably the biggest scam in Charleston. Kevin is more a salesman than a chef. He takes advantage of naive locals who have never seen a wasabi root or shrimp chips and don't know what a true Omakase is to make them believe they are experimenting something extremely exotic and fancy, though he is an expert in making people believe anything he offers is top notch and best in this world. On the contrary, the "restaurant" is literally bare and it's definitely not a fine dining experience. The food is mediocre and poorly presented. Salmon soaked in beet juice is completely bland and the dessert is literally a joke: half teaspoon of honey, 2 macadamia nuts and 2 dry figs from Whole Food and a few tiny pieces of dark chocolate. I personally don't believe the restaurant will last long once people get to have the real experience, and I doubt if anyone would go back. Please don't waste your money, with what you spend here you can easily go to a few real fine dining restaurants for better food and experience.

raw.lab.chs dinner, the world's first omakase raw bar. Chef @kevinjoseph came up with the concept. He is a master mermmelier (sommelier : wine :: mermmelier : oysters). Starting was the amuse bouche (like hors d'oeuvre, but with the purpose of waking up the palette) of local pickled veggies. First course was local Edisto River oysters. Second was the caviar bumps. Third was dungeness crab gazpacho. Next was local shrimp ceviche with shrimp crisps. I don't remember what exactly was after that, but it was delicious. I think it was salmon with furikake, lemon avocado oil, and mushroom soy. Lobster ceasar salad was next, followed by crab salad on endive. The last seafood course was Antarctic salmon served at 60°F as tartare with sesame oil and furikake. It was a tower on top of avocado and artichoke compote with blue chips. The final course was dessert with fig, manuka honey, and sea salt chocolate. I am pretty sure I forgot a course and a couple pictures but I was enjoying myself and the wine . You are served wine with each course, qualy wine. It is all whites because it's seafood but don't let that stop you if you're a red person. I will absolutely be working some overtime to visit again.

On a visit to Charleston I was craving oysters and luckily stumbled upon Empire Oyster. So excited to find this gem!!! The oysters were amazing, the experience was great, the location is awesome and Kevin, the owner, was such a delight! Learned a lot about oysters from Kevin and now I know what I really enjoy when picking oysters. don't believe or be fooled by all of the hype! approximately 6 oysters and a few meager average tasting appetizers by a grandiose chef wannabe. over 3 hours of tortuous poor service, maybe 2 glasses of wine total and left hungry and mad at myself for falling for this $600+ rip off! And he has the audacity to strongly suggest a 20% or higher tip!? We could have had a GREAT and filling meal and beverages with real service for 1/2 the price and time and been so much happier. Enjoy the reviews but go elsewhere! I am sooooo tired of these 1 man chef shows that command huge premiums to fund their trips, lifestyles etc. vs a true restaurant experience which usually is the better value. Now I have little confidence in RESY reviews in the future after a few similar experiences. BTW, we left a 10% tip out of courtesy and he raised it to 20%, unscrupulous, why would anyone want to support this type of business!!??

I can't recommend this place enough! If you are a lover of oysters, this should be your go to when in Charleston. Kevin, the owner knows oysters like no other! He is incredibly well-studied on the subject & will be be sure to guide you in selecting the very best oysters to suit your palate! If you prefer a more intimate setting for experiencing the delicacy of oysters, I suggest making a reservation to dine in the private room. It is an experience unlike any other when it comes to enjoying oysters. Bon appetit!

I had an amazing experience at this raw bar. It was truly an experience! The food is incredible and the owner, Kevin, is so knowledgeable. He serves each course with aplomb. I enjoyed everything and loved learning about each item served. The bonus is the wine pairings. Each was expertly selected to pair with the oysters and other seafood we enjoyed that evening. The small atmosphere is welcoming and lends itself to feeling special as Kevin talks to you about his passion - oysters. I will definitely be returning!!

Best oyster experience in the southeast hands down. Kevin Joseph is brilliant and the atmosphere is outstanding. Energetic feeling altogether with excellent music playlist to accompany the extraordinary dishes. Invariably one learns some fascinating bit of gastronomy, or several, from Chef Kevin. Gets my highest recommendation for all of these reasons and more. Try it.

I can't say enough good things about this dining experience! The oysters were delicious, the ceviche was the best ever, the wine parings with each course were the icing on the cake! The chef/ host Kevin is a master at his craft and is dedicated to providing an over-the-top raw bar meal with entertainment.

What an amazing time at Raw Lab! This truly is a one of a kind experience that you have to have while in Charleston! Kevin Joseph's vision and approach to dining is something this market hasn't seen yet. I can honestly say that this was the first time I actually felt something more than just taste from a meal. I thought I knew what a culinary experience was before but I didn't - and this was the best I've had in Charleston or elsewhere. The oysters, caviar, lobster, ceviche were all so memorable and we can't wait to go back! Can't wait to see what Kevin will do here next.
