For my wife's birthday, we decided to dine at Raw Lab in downtown Charleston--a decision I initially dreaded because I don't like seafood. In fact, seafood and I don't get along at all. The first dish that arrived had pickled vegetables--things I normally wouldn't touch, let alone enjoy. But to my surprise, every bite was a revelation. The standout for me was the tomato, a food I typically avoid. But this tomato was unlike any I've ever tasted--so delicious that if all tomatoes were like this, they'd be at the top of my favorites list rather than the bottom.
