"Intimate tasting room Raw Lab is all about oysters. Customers are seated around a raw bar full of ice, and chef Kevin Joseph is the ringmaster of the evening. He leads diners through several courses of bivalves, caviar bumps, a seasonal soup, ceviche, a lobster salad, salmon with more caviar, and a few other seafood-centric courses.
