Some of the Best Food in Canada Is Hiding in Le Bic
"A charismatic, chef-driven fine-dining experience led by Colombe St‑Pierre, who brings deep roots in the region and a big personality to the table; her cork-lined dining room feels warm and personal. The cuisine celebrates local bounty with dishes such as gravlax of Gaspé mackerel, beef from nearby Saint‑Fabien, and inventive desserts like balsam-fir ice cream. After a recent reopening she’s been offering a set six-course weekend menu to mark the restaurant’s 20th anniversary, underscoring a long-standing commitment to the St. Lawrence’s terroir and to championing underused local ingredients." - Nina Caplan

"The village of Le Bic, perched on the southern shore of the St. Lawrence River some 300 km northeast of Quebec City, is known for its quaint streets lined with brightly painted wood houses, spectacular views and the surrounding national park. Now it is also recognized as the home of renowned chef Colombe St-Pierre, a mother of three with an eccentric per – sonality, a contagious laugh and star status in Quebec and in Europe, where she frequently headlines iconic food festivals like Andrea Petrini’s Gelinaz! St-Pierre’s food appears simple but is highly sophisticated and daringly original."
Colombe St-Pierre Is Quebec’s First Chef of the Year | Eater Montreal
"Honored as Chef of the Year at the inaugural Les Lauriers, Chez-St-Pierre's chef-owner Colombe St-Pierre quite literally tumbled onto the stage, performing a somersault as she went to collect the award; dubbed the 'queen of the regions' for championing Québécois produce, she has put her small hometown on the culinary map by choosing to work close to the product — a decision that left her five hours from Montreal and prompted warnings she'd fail — and says she has been 'fighting everyday for 15 years' to show how wonderful Quebec's exceptional products are; while she acknowledges operating a restaurant remains tough because of taxes, credit card and food costs, she insists 'We still have fun, that's the secret.'" - Tim Forster

I ordered a "Turbot 101" at the cantine. The small half filet of turbot tasted fresh and delicious, but the sides were very Cucumber-heavy... a whole deep fried cucumber, AND a cucumber salad. Je me suis trouvé pas mal concombre d'avoir payer 35$ pour ça.

Supremely disappointing. Drove 5 hours to dine here on the basis of the Food and Wine article. From the indifferent service to the erratically seasoned and belabored food - it was painful to spend 4.5 hours at the restaurant. Would like to suggest the chef spend more time in the kitchen and less grandstanding with a microphone. It was rather angering to spend nearly $500 for such a galling meal

Best culinary experience I have ever had. Do yourself a favour and get the drinks pairing with your menu. Definitely worth every single dollar. The fresh local ingredients, the service, the ambiance, everything is simply perfect.

Amazing evening in the church parking lot in front of Colombe's restaurant. Because of COVID, dining room not open but instead an innovative outdoor coastal market. We had tons of oysters with a creative emulsion. Proposed wine was also a hit. All and all a memorable moment!

Delicious, quality food. Best shrimp roll I’ve ever eaten. Bread was just really soggy, that was the only downside.
