Emile van der Staak's source of inspiration is Food Forest Ketelbroek. This is where he makes discoveries, reflects and creates – and his is a creative spirit that seems to know no bounds. He has developed a precise technique of bringing the microseasons to life in his set menu, which changes three times a year. Take, for example, his dish based on SCOBY, the biofilm that develops on kombucha during the fermentation process. The chef uses that skin to create an ultra-crispy tuile, making full use of its umami flavour, which evokes the taste of prawn. A filling of assorted seaweeds and confit horseradish adds punch and an aromatic lift. Talk about innovation! This is cuisine that takes familiar flavours to the next level. Fantastic experience and a definite bucket list item! We loved the ambiance at the place and the fact that all different chefs serve their course to you. Flavours were unique, well-balanced, innovative and looked like art. I loved how they were able to play and work with structures that surprise you, especially since it’s all plantbased. We chose the non-alcoholic drinks pairing which was perfect. Very unique flavours and ways of fermentation and brewing that paired well with the food. It was an unforgettable experience. Thank you for a great night!

One of our best food experiences ever! We had high hopes for De Nieuwe Winkel, and they did not disappoint. From the moment you step inside, you feel extremely welcomed. The cozy surroundings and the open kitchen makes for a special night, and the acoustics sound panels make it easy to hold a conversation. The food is obviously the no 1 element and it is extremely flavorful. Full of unique tastes and each dish is presented as a small piece of art. We had the spring awakenings menu, where dishes like the white asparagus, the sea fennel blossom and ocean-inspired desserts were unforgettable masterpieces. Highly recommend to visit this restaurant if you are looking for an exceptional dining experience!

We were in the private dining space. The whole evening, four hours of it, was an amazing experience. The tasting menu was inventive, creative, delicious, beautiful and incredibly tasty. The drinks pairings were spot on. The staff were excellent - there when you needed them, full of excellent information. Charlotte Allen in particular was so good - lots of detail about fermenting, about sourcing the food, about the creative process. I highly recommend De Neuwe Winkel. Brilliant.

Great dining experience, very interesting dishes, all vegan. I had the non-alcoholic food pairing and it was excellent. The food was fantastic, albeit the protein in two of the main dishes a bit too salty. Overall a balanced menu, with strong and beautiful flavors. The service is excellent-you can actually feel that people love to work there.

I had an exceptional dining experience at De Nieuwe Winkel in Nijmegen. The dishes were innovative, paired perfectly with non-alcoholic botanical drinks that elevated the flavors. The portions were generous, leaving me full yet eager to return for their seasonal menu. The calm atmosphere and attentive service made the evening even more enjoyable. A truly memorable culinary experience! I would totally recommend for this once in a lifetime experience.

It is important to communicate with your customers if you have any. The visit was very short and nice staff member recommended her favourite restaurants nearby. I guess the owner does not care to add here that you have to book visit weeks ahead to get a table. Not very convenient for Google map users. I actually wonder how many reviews here are authored by those who did not make it to the table. The idea of plant based diet is accessibility, well not here.

Amazing experience, what an amazing flavours you can create with vegan food. So many special food preparations are really impressive. Some dishes take them 3 days to prepare. And what a fantastic service, so friendly, open, fun and knowledgeable👌👌 The wine pairing was good, interesting natural wines, not always the most amazing taste but nice and different than the main stream superb wines. The kitchen is open, small, very well organised and they invite you to have a look when you like 🤩🥳👌thanks so much to the amazing team for having us 👍👍

Absolutely wonderful experience for the second time. The creativity of the dishes, positivity of the staff, sustainability aspects are mind-blowing. I wish every Michelin star restaurant in the Netherlands would have at least a tiny bit of what De Nieuwe Winkel has created. Considering the R&D that goes into every single dish (and pairing for that matter), the price is very fair. We will definitely come back and in the meantime wish all the staff best of success.
