Really great Michelin-star restaurant in the cute village/town of Quint-Fonsegrives.
The history of the restaurant is neat: the chef apparently fell in love with the little house the restaurant is located in, right across Quint-Fonsegrives' city hall, as its architecture is typical of the region, it has a backyard where are planted herbs & more and as it is near lots of fields/crops which remind the theme of the restaurant: Nature.
We had made a reservation about a month and a half in advance for a Friday night. We arrived at 8 p.m. - the restaurant isn't open before, for dinner.
The wood tables and tree decoration inside the restaurant made the style very unique and again, remind you of nature.
We were seated near the open kitchen so we witnessed the arrival of the Chef and his team and their whole cooking.
We were asked by the waiter if there was anything that we do not eat or food allergies. I should have said that I do not like game but didn't think they would serve it (I knew they had in the past but figured they probably vary a lot their cooking).
We had fish, pigeon, cheese, figs, macarons... Very original mixes for every dish. The portions were not tiny at all. Even if I'm not crazy about pigeon, I could tell the cooking was mastered perfectly. The Chef likes to decorate his plates with edible flowers.
The wine served with the meal was very good.
As you leave to pay, you end up in the Boulangerie of the restaurant, where we tried some homemade nougat. It was very very very good.
Apparently, if you want to go have lunch there during the week, the wait time to have a table is just a week. The restaurant is closed in August.
Very affordable for a Michelin-star restaurant, around 60 euros per person (VS. nearly 100 euros downtown Toulouse in other Michelin's).
