"‘L’affinage’ means ‘maturation, ageing’. The name reflects the chef’s determination to mature as he ages, honing techniques accumulated over many years. Roasted and pan-fried dishes are complemented with sauces—a practice that is the very soul of French cuisine. Cooking methods inherited from generations past are tweaked to appeal to a modern clientele. Hometown cooking is refined and interlaced with distinctive touches, yielding a satisfyingly mature result." - Michelin Inspector

Sept 2025 Back for lunch. New menu but same super wine list. High quality menu n service. 18 jan Went back following day for dinner and even better esp after skipping lunch. Turbot fish and kyoto duck. Had a local red merlot which was good. Only feedback was use of black truffles which did not 'show'. 17 jan 2nd floor to Kenzo winery office. Excellent french dishes with winepairing or ala carte wine menu with wide selection of French wines. Truly great meal and wines to complement. Value for lunch too

Exceptional Michelin star rated French restaurant in a cozy atmosphere in the heart of Ginza. The fundamentals (especially the technique and classic sauces) are of the highest level where the master chef is in full action (not only delegating). Lunch omakase course is incredibly reasonable using the finest ingredients - no compromises. I especially loved the crispy “à point”Foie gras with wild mushroom risotto, the sauce vin jaunefor the fish (instead of foams) was superb and the local lamb (quite a rare ingredient) was super flavorful. Thank you for a wonderful time.

Cost performance is great. But the service and atmosphere is not that level, that I expect from starred restaurants. It was more close to vip gourmand or family owned shokudou style. I asked the manager if I can get my dishes served fast, so they asked chef but I didnt get clear answer. the only thing, I can see is even though, I am the 3rd - 4th arrived guest among 4 to 6 groups, i got the same course for the very last until the shrimp/bisque comes. The wine pairing didnt meet my expectations…. Nothing surprising or luxurious. Maybe, i got somewhat discrimination because I am a foreigner… I got wines served, left-over from the bottle… when the guests of family (who looks like frequent visitors)next to me got served fresh Glasses of wines. When I complained about this, they didnt understand what I said and showed the full bottle of wine with label(unopened) when serving my glass of pairing wines… quite insane I thought. I dint want to see the bottle;; what I asked was Why I cant have fresh ones when next to me have fresh opened ones, while I get the bottom left wine…. As I complained about this wine issues+ why my food comes for the last during the meal, chef gave me the receipt before I have fish dishes to be served. I thought he’s angry. He didnt ask us if we’re unpleasant or satisfy with the meal. ( I can speak both English and Japanese) Welcome dish was everything cold, starting from sorbet to cold soup. I was freezing after eating those two dishes in a row. Cooked Meat was cold… so I left it. Nobody asked why I left. So here is the conclusion: overall cost performance is good, compared to other michelins…. But i cant agree this is a starrred restaurants. Wine, no recommendations. Service, not good.

Innovative dishes with top ingredients. Amuse, salad pictured, very refreshing, great lamb main Well done. However. Let down by the wine pairing. Only one out of four wines deserves honourable mention The fish dish had a detectable bitterness
