Here he prizes seasonal Mediterranean produce on a menu that evolves regularly, but tends toward dishes like oven-roasted Corsican brocciu cheese with thinly sliced radishes, fresh peas, cucumbers, and pickled radish; saffron risotto with cypress oil, Corsican honey, and grated pinecone; and John Dory roasted in seaweed butter with peas and an earthy-green crab broth. We are commenting based on the standard of Michelin 1 star caliber - Service: the waiter asked us what we would like to drink. We said red wine and he just brought over a bottle without asking what we preferred. The explanation on the wine was vague and when we wanted to chat further about wine. He just said you can look at the bottle and left. It's odd that he left the bottle that would be served to other table with us and later just grabbed it without saying anything. The waitress that brought us the food was not properly trained on setting up for each course. Food: no flavor and bland. The chef tried to be creative but we thought multiple courses were served without tasting. There are multiple ingredients being mixed together but clashed instead of blending in. It's definitely not the same level of Michelin 1 star that we experienced. A big disappointment on both food and service.

Went for lunch and chose the Nature menu. The entire experience was superb and I recommend it without hesitation. They were able to accommodate both gluten and lactose intolerances easily and I feel allowed for additional experimentation and creativity to come out as a result. It is hard to pick any one course so I won't as they were all delicious. That said, even the in between moments were highlights, one being the ground up coffee granita; It has stuck with me: it was unique, flavorful, but also a wonderful palate cleanser between the main courses and dessert. The service was great and while the atmosphere was less lively for lunch, it felt more intimate and as though we were lunching with a bunch of friends catching up.

Expectations are always high at a Michelin-starred restaurant and Saisons served a five-course "blind" menu that we thoroughly enjoyed. While most dishes - all well prepared - were quite traditional, the anchovies-studded fregola bowl provided a special pleasure. The service is friendly and unstuffy, and we very much appreciated the work of the sommelier who found us great wine pairings with the various dishes. Note: please expand your selection of craft beers.

What a delightful, and more importantly a delicious lunch, shared with my husband and a French couple who are praised connoisseurs of Marseille restaurants. For two and a half hours we dined at RESTAURANT-SAISONS where Chef Proprietors Julien Diaz and Sommelier, Guillaume Bonneaud, made certain we experienced an unforgettable repast along with the attentive staff fulfilling our every need. Easily accessible public transport or readily available parking, assure your precious time will be well spent along with your euros when you choose your selection from the well crafted menu. If allowed our shared photos will ‘speak’ to verify our praise.

The food was good but lacked a bit of flavor compared to the efforts of other Michelin-starred restaurants I've been to. Also, no one explained the prices of the wines by the glass; we were served two glasses without being asked about our preferences or informed about the prices (we thought it was just a nice gesture). While the sommelier was excellent, he served us wines we didn't even order. The bathroom had ashes, smelled of cigarettes, and had no towels to dry your hands (perhaps they weren't replenished because we were the last seating). On the other hand, the open kitchen is interesting. I believe there are many details to consider for improvement: clarity in explaining the dishes, they made us wait a few minutes before leaving to give us the menu of what we ate. Considering what one pays, perhaps improvements in certain areas are expected since I left feeling a bit underwhelmed.

Our original restaurant choice was too busy- which is lucky for us, because that allowed us to experience one of the best and most perfect meals we had in our entire French adventure. With a newly earned Michelin star, we should have known we were in for a treat. But frankly we've been fooled before so we never actually know what to expect. But these guys star was well earned... What stood out for us was an excellent smoked eel dish and probably the best risotto I've ever had (and I've had a lot of risotto). The runner up was the dessert- closely followed by a dizzying selection of local wines (did I mention we did the wine pairing)... The ambiance was upscale but still friendly- we could tell a lot of the diners were return visitors. To top it off, the owner/chef came out and greeted us (in English thankfully) following the meal. Out of the dozen or so Michelin starred restaurants we experienced across France this go-round I'd say they would be in the top 3. Not to be missed in Marseille!
