"Rooted in a passion for countryside, nature and sustainability, this Hoznayo dining destination occupies a large 18th-century house and channels chef Eduardo Quintana’s background as an élite cyclist into forward-looking, environmentally committed cuisine based on seasonality and locally sourced produce. Influences from his Cantabrian and Basque roots and his travels shape a clean, subtly flavored menu featuring dishes like tortilla de bonito (cured egg yolk, tortilla foam, red tuna, herring caviar and soufflé potato), the Txangurro roll (a brioche with spider crab baked in butter, hollandaise sauce and crispy chicken skin), and Pasto de Cantabria (different textures of Cantabrian beef with a root vegetable salad). A kitchen garden and small greenhouse on the grounds supply practically all ingredients—aromatics, pulses, vegetables, small fruits and even wildflowers for plating—making the cooking more zero-miles than ever, with plans for a small livestock farm to deepen self-sufficiency. Guided by Einstein’s maxim about keeping balance by moving forward, the restaurant continually experiments, notably with coffee: weaving its citrusy, fruity and bitter notes into salads and cocktails (Espresso Martini), turning butter into a coffee flake, creating coffee caviar, infusing salsify or chicory with coffee oil, and reimagining café con leche as a gazpachuelo for white asparagus; desserts include coffee and cardamom truffles and a seasonal Opera tart layered with coffee syrup, whipped coffee butter cream and a cocoa glaze." - Guía MICHELIN

A real treat worth an ad hoc trip. A carefully coordinated choreography of staff bringing a delectable dish after the other in the most pleasant location. You surely pay michelin star prices but the experience is totally worth it. I loved the creativity at both the culinary and decoration level and the fact that the head chef pays a visit to every diner. You get to see all of the kitchen action from many tables. You wont be dissapointed.

I’m on the fence about La Bicicleta but will give it the benefit of the doubt and award a full 5 stars. The first part of the meal was stellar. The snacks on the terrace, the snack in the garden, and especially the tapas at the bar. Things got a bit problematic once seated at the table. The flavors were fantastic but there were two flaws. First off, portion size was over the top. We felt that dishes should be half the size provided. Second, the temperature in the dining room was uncomfortable hot. The room is not equipped for higher than normal temperatures and both my wife and I felt that it diminished the experience. However, overall, the flavors were stellar and we enjoyed the experience.

My 153rd Michelin restaurant experience. La Bicicleta is COMPLETELY AMAZING. And no I'm not just one of those reviewers that always says that (see various 1-4 star reviews I post for proof!). Not only was this my 153rd Michelin, but I've dined at 7 of 10 restaurants to ever be named #1 in the world by the 50 best restaurants website/team. All that to say La Bicicleta is one of the 15 best restaurants of my life. It's THAT good. Similar to Alinea, Azurmendi, or Schloss Schauensteim, your dining experience starts in one room, moves to another, and ends in another. This really works at La Bicicleta because your movement progression aligns with the types of food you are eating (finger food in the first room, small bites in the garden or bar, and larger courses and dessert in the main dining room). And my goodness, the food starts off epic and continues that way all the way to the end. The lobster course here (consisting of lobster two ways - a taco and a tail in a perfect complimentary spicy/sweet sauce)... the best I've ever had. The squid course (also two ways - off the grill covered in ink sauce and fried)... perfection. All six tapas in the garden/bar... impossible to rank because all are so divine. I have no idea how La Bicicleta only has 1 Michelin star. That surely will change soon, and the worldwide attention this one day gets will make reservations hard. So do yourself a favor and go go and soon for one of the most delicious and memorable dining experiences of your life.

Excellent Michelin star restaurant with an interesting tasting menu proposition, and emphasis in local and self-grown ingredients. All dishes that we tried were very creative, their presentation was fenomenal, and this was achieved without compromising in flavour and taste. We enjoyed the experience a lot!

Wonderful! Tasty and beautifully presented. Best espresso I've had in Spain. It's in the middle of nowhere but if you're around it's worth making it your stop, even just for dessert.
